Utah Sage Saison features three different premium malts, rye, wheat, Saison yeast and strong American Hops create an extremely complex base. Sage, thyme and rosemary as well as a dry hop charge of Citra Hops adds herbal and tropi- cal notes. An extremely dry, nuanced beer with touches of sage, papaya, guava and a crisp, peppery finish.

Clear pale yellow with minimal head.
Really herbal and prickly with a phenolic backing and a touch of toastiness even further in the background, it's a unique saison that isn't too acidic, but does feature a bit more clove and bite than I'd prefer.

Sage adds real character here, soft spiciness on top of a well bodied saison. Spiciness turns minty on the finish. Sage blends perfectly with saison throughout. Nice beer.

Had at EPIC in SLC. Decent essentially nondescript Saison. Good but been there plenty of times.
Did like the use of their sage. Slightly dusty per nature of this herb, but a pleasant change. Thyme somewhat noticeable, but Rosemary more in the mix than a standout. Nicely peppery. Overall reminded me when you use woodruff in a Berliner Weisse.
Worth a try when in mood for something more herbal Farmhouse wise.
May 24, 2019Did like the use of their sage. Slightly dusty per nature of this herb, but a pleasant change. Thyme somewhat noticeable, but Rosemary more in the mix than a standout. Nicely peppery. Overall reminded me when you use woodruff in a Berliner Weisse.
Worth a try when in mood for something more herbal Farmhouse wise.

[Original rating 2013-11-24] Sage is one of those spices where a little goes a long way. So Epic used a lot. They call it sage saison, all I can taste is sage. Maybe there is a saison under there but there is no way to know.

Look - very foamy - nice deep gold with orange hue - stays very carbonated
Smell - not very aromatic - slight medicinal smell - some lemon and herbs
Taste - strong hops - quite bitter for a Saison - moves right into lemon and eucalyptus - slight sweetness, but gets very dry, fades with spices, grass, and tartness
Feel - very carbonated - medium bodied
Overall - Many good characteristics of a Saison - just too medicinal / Menthol cough drop flavor throughout - too heavy on the Citra hops, which I believe adds to this medicinal flavor and aroma

Taste - strong hops - quite bitter for a Saison - moves right into lemon and eucalyptus - slight sweetness, but gets very dry, fades with spices, grass, and tartness
Feel - very carbonated - medium bodied

Pours medium golden with little head
Smells extremely malty with some spicy notes
Tastes of malt and alcohol with some spice noticeable, vinegar finish
Overall my first saison so I'm not sure whether or not to recommend it

The appearance was a nice looking hazy golden bronzed brown color with a one finger white foamy head that dissipated within about a minute leaving some light speckled lacing glazing along the glass. The smell had a slight rustic earthy and floral content up front with a rounded out herbal and earthy slight yeastiness. I do get the sage but I had to let it warm up a lot. The first couple of times it only came off as just herbal. The taste was earthy sweet with a yeasty herbal quality that could be slightly construed as bready. On the palate, this one sat about a light to medium on the body with a fairly decent sessionability about it. The carbonation was somewhat subdued but that was okay to me as it created a fairly nice smooth aspect about it. Overall, decent saison, though cool idea to add the sage in this.

A 22 fl. oz. bottle, Release #26, brewed on 11th March 2015 and packaged on 6th April 2015. Poured into a d’Achouffe tulip glass.
Appearance: It poured a bright but hazy golden orange colour with a just under two finger white head that dissipates slowly and leaves lots of nice lacing.
Aroma: Sweet orange citrus with touches of tropical apricot, lemon, orange marmalade and a herbal character (although I’m not sure if its sage, maybe thyme).
Taste: Orange honey sweetness, sage, pepper spice, almond biscuit and a bouquet of herbs.
Mouthfeel: Medium bodied with high carbonation and a dry finish.
Overall: It’s quite different to any other beer let alone Saison that I’ve tried. It’s perhaps a touch to sweet for me, but the biscuity, almondy, herbally finish is interesting.

22oz bottle - hmmmmm...sage - not sure if I cotton to the idea of my beer tasting like roasted turkey or Irish stew. Ah well.
This beer pours a hazy, pale golden yellow colour, with three fingers of puffy, densely foamy, and somewhat bubbly off-white head, which leaves some layered swaths of chunky lace around the glass as it very slowly abates.
It smells of sharp, zesty sage, rainbow peppercorns, gritty, grainy pale malt, earthy yeast, a twinge of dried banana, clove, and a further generic herbal and grassy bitterness. The taste is turkey stuffing, damned-near - bready, grainy pale malt, sage, rosemary, and black pepper spice - with a gentle yeastiness, muddled pale orchard fruit, a decent piney, citrusy, and herbal hoppiness, and just a hint of metallic warming alcohol (ya know, whatever it is that you're sipping on while you baste the bird).
The bubbles are quite endearing with their softly rendered and yet pervasive frothiness, the body a solid middleweight, and kind of smooth, I suppose, both varied spice and yeast getting a bit handsy as they approach full-on tipsy mode. It finishes off-dry, just, as the base malt continues to not waver, with the mostly herbal spice and fading yeast providing the foil (sorry, I just had to).
Overall, surprisingly tasty and easy enough to drink, even if (or because) the underlying saison characteristics get stomped all over by the guest spiced notes. Whatever, this surely invokes images of dry, dusty, windblown landscapes, the sort one might usually associate with the state of Utah, so, good for them for embracing it.

Appearance – The beer pours very hazy golden orange color with a large white rocky foam head. The head fades very slowly over time to leave a ton of foamy lace on the sides of the glass.
Smell – The aroma of the brew is big of a peppercorn and herbal smell with the herbal aromas being a mix of sage and rosemary with some other nondescript herbal aromas. Along with these smells comes some aromas of a yeastiness and well as a bit of a sweeter orange citrus smell. With a little bit of banana and some grass and hay, an herbal funked and slightly sweet smell is delivered overall.
Taste – The taste begins with a somewhat drier wheat and cracker taste mixed with an herbal taste of a sage and a moderate showing of yeast. As the taste advances a little bit of citrus tangerine and orange sweetness comes to tongue, with it later fading again. As the sweeter citrus fades, it is replaced by some lemon and even more herbal tastes with more sage piling on and being joined by some other herbal tastes, a bit of grass, and some peppercorn. With some hay and a slight resurgence of the sweeter flavors of tangerine coming at the end, one is left with a somewhat funky and herbal yeasted taste to linger on the tongue.
Mouthfeel – The body of the beer is average in thickness and creaminess with a carbonation level that is average to slightly higher. For the style a little thinner body and a slightly higher carbonation level may have accentuated the mix of sage and sweet slightly better. Even said the overall feel was OK.
Overall- A decent saison overall with a whole lot of an herbal taste. For the price tag, not one I would likely frequent, but it was at least an interesting one to try.
