This one looks interesting, could be really good or really bad, and hoping for the former. A big citra simcoe bomb triple IPA, wow, I'm really curious. Bottled 5/28/15.

Pours a big fluffy creamy 1 finger head that fades at a med to slower pace, nice soapy lacing, very clear honey blond color.

Nose is explosive, as soon as I popped the cap, tons of dank resin, musty dank hop resin and oils, quickly into fruit, lots of fruit, some apricot like stone fruit, candied dried sweetened tree fruit, with mild pineapple, passion fruit, and grapefruit pith, as well as a little orange rind, and some sweet candy malts. I get a little armpit dankness, which is not quite as pleasant as I'd hoped, but the rest is nice, simcoe seems to be not playing so nice in this one unfortunately.

Taste brings sweet candy malt, fair sweetness but a big malt base, almost syrupy but not quite there, toasted malts, with a little caramel, like a toasted blond malt, and candy syrup, as well as some warming almost tingly alcohol, and mild phenols with it. Hops are plenty, super bitter some crazy IBU count, with lots of orange peel, citrus notes but not a ton, with plenty more dried candied fruit again, tree fruit and apricot like stone fruit. Then into mild pineapple and passion fruit notes again, just a little, dried mango, etc. Some dank resin again, thankfully not as much this time, some musty dank resin, with a little hop oil feel, sticky pungent hop oils and dank passion fruit. Thankfully no armpit this time. Finish is a bit drier, a little sticky, and mildly sweet, with more warming toasty booze, a touch of phenols again, big bitterness as well, some orange rind and grapefruit pith as well, a little tropical note, musty dank hop oils.

Mouth is med bod surprisingly, not too heavy, some warming tingly booze notes, almost wants to get syrupy but doesn't, decent carb.

Overall interesting, a lot going on, not what I was expecting either, I wanted more of the grapefruit, citrus, tropical notes, etc, which were there but on the lighter side. The dankness really stole the show, and it wasn't a great show, nose had musty armpit, taste was better but still not where it should have been. The malts were nice though for a triple IPA, just the right amount of warming tingly booze, with nice balancing sweet malt character that kept the crazy IBU bitterness in check mostly. So drinkable, but went off the rails a bit. It was teh Simcoe that didn't want to play nice, I have a love hate relationship with Simcoe, it can either be awesome grapefruit tropical juice, or dank musty armpit or cat pee, so yeah fun!

On tap at the Apex the other day. Have to say that I continue to be impressed by the DIPA's I've been trynig from these guys. The beer was well balanced (for an 11.25% abv. beer), with excellent malt body to pair with the considerable pine and citrus. Alcohol is well integrated into the flavor profile, and the rich mouthfeel is really the only place you notice the abv. (obviously, if you knocked down a couple of pints of this, there's another way you'd notice the high abv.).

Tried side by side with the head shake DIPA from Barley Brown. The BB DIPA was clearly superior, but even so, the simtra more than held its own. Excellent DIPA.

Light slightly cloudy orange with a big white head and nice lacing. Aromas are herbal, dank and citrus. Notes of grapefruit, pine, herbs, and dank. Medium feel, dry finish and some alcohol heat that impact the flavor and feel at the back end. I was worried about this one, I tend not to care for IPAs that go north of 10%. This is very good and well alcohol but, as I do with most of these more extreme DIPAs, I wonder how this would be with the alcohol dialed back.

On tap at ABV.

A clear light orange with a dense, off white head that falls off to a ring leaving little lacing. The nose is a full frontal hop assault, bright, fruity, pungent, with pine, citrus, grapefruit, green grapes, minimal malt and some alcohol noticeable. The palate opens bright, pungent and hoppy, with a mild sweetness, high level of pungent bitterness. Wonderful hop melange on the palate. Mild sweetness on the finish, served a little on the colder side, the alcohol is reasonably well hidden but is still noticeable as a spicy kick to the back end. Sweetness is mild and clean and necessary here, complementing the bitterness and the alcohol. Impressive.

Clear Apricot Gold, vigorous stream of tiny bubbles. Aroma is funky and dank with pine in abundance, cat piss comes to mind. Off the charts bitter. Mouthfeel is weightless and dry. A bold DIPA that doesn't really work for me.

22oz. bomber bottle purchased for consumption at Carriage House in Mahopac, NY. Poured into snifter.

A= I would characterize the color as orange with a yellow haze, looks almost murky (not in a bad way) Has slightly off white head that is thick and creamy, glue like lacing clings to the snifter.

S= Big and bold hop aroma, tropical, dank resin, pine and earth. Smell is juicy, if that is possible.

T= Get citrus flavors including lemon and grapefruit zest followed by tropical notes and big malt sweetness and alcohol warmth.

M=Fairly heavy body with light to moderate carbonation.

O= So big and dank, tons of late addition hops cover up the very high ABV and sweetness of the malts leading to a great all around balance.

I think it looks as good as it tastes. Really well balanced for how high the ABV is. Freshness is key. I've had bottles more then four months old that we're bland and unimpressive, the one I have now is a little over 2 months and quite good, but that's any good IPA really. Triple IPAs can be difficult to pull of well but this brewery, that does many other great hop bombs, does a good job. It's basically hop wine! Maybe not for everyone though.

22 picked up at the Boise COOP for about $9ish.. a little pricey given the other DIPA's available locally. Clear golden.. perfectly golden with a nice foamy white head... looks amazing.

Fruity citrus is huge and unapologetic.. light herbaceous elements with warmth..

Bitter up front.. pithy citrus and lesser fruity floral notes as it warms up..

Knee Deep is a very welcome in Boise.. The bottles are pretty representative of West Coast IPA's.

Draught: Somewhat orangish darker golden color. There was a small white head on it. Good nose! Lots of hops! Some sweetness, citrus, pine, earthy. The taste is quite good. Some sweet malts, and a lot of hops. Pine, earthy, citrus. A really good TIPA!

L: Pours brilliant amber gold uner a 2” sudsy white foam cap that hugs the glass.
S: Dank, woody, citrus and tropical fruit aromas with noticeable alcohol.
T: Big malt flavors laced with caramel support a grassy, citrusy tropical fruit hop palate. Malt, hops and alcohol are all big but well balanced.
F: Medium full to full body, very soft medium carbonation. Warming.
O: The brewer classifies this as a tripel IPA and its big enough foer the title.

The brew is good but it's really not my style. A little thick, this brew is kinda a modified sipper in a sense. ABV is detectable if it warms.

Vibrant reddish orange, crystal clear, and a big fluffy white head with solid retention and lacing.

They're not kidding when they say dank. Sticky icky. Bubble gum. Tutti fruity. It has a very sugary smell.

It explodes with dank and citrus hops, completely demolishing and semblance of malt, which is a little toasty. Fusel spice in the back end.

Big mouthfeel. Hot and dry.

This one has no shame in its hop-forwardness. One of the hoppiest beers out there.

- Spiegelau ipa glass. Dated 03/02/15. Consumed 05/02/15. 11.25% 131 ibus.

A: Pristine clarity with a bright orange coloring reveals a quickly paced rush of macro-effervesce filling the vessel. Off white head is frumpy textured, like mashed potatoes, rising 1.5 inches high with a resilient showing. High lace coverage graces the glass.

S: Fresh wet sugary grapefruit on the nose along with sweet pine and a pleasing touch of semi-dry tropical fruitiness against a softly toasty bread backing. Hints of straw and toasted citrus peel dryness occur on the finish while the aromatic duration remained pleasantly viable throughout for several plus minutes.

T: Flowery, semi-dry citrus and pine upfront with a smooth, calming, but high rate of bitterness sits against a softly toasted grain backing and toasted citrus peel, bittering pine with a dry, sweet malt fade. Background nuances of semi-dry tropical fruit meets a lightly toasted malt and citrus finish.

M: Good carbonation, malty depth, but exceptionally smooth, gently dry citrus hop warmth that feels more like a 6-7% rather an 11.25%.

O: Overall amazingly well balance of hops and malts as well alcohol which is considerably tame and drinks exceptionally smooth and much lighter then its abv claims. Smooth drinking experience with no rough edges, just silky going down gets props for being a hop monster that drinks like an easy sunday afternoon session. This beer disappears faster then cupcakes at a pot party, outstanding.

22 oz bomber from HT poured into a tulip glass, bottled 3/5/15.

A - Clear, golden orange, half finger head that moves to a thin lace.

S - Ah...Dank hops, tropical mangoness, hint of sea salt.

T - Follows the nose, with some slight finish burn from the heat. Pine, grass, orange/tangerine also in the mix.

M - Carbonation medium, heft is suprisingly light for an 11%er.

O - Tough to drink this one slow. Great aroma, still had a sizable hop punch at two months, and enough malt to keep it balanced.

I didn't get to see the color of this beer because I was at a friend's house and he didn't really have any appropriate glassware for this beer (this explains the 1 rating on the appearance, but this isn't reflective of what I actually think of it). But hot damn, I was craving more hops than could be considered appropriate and this beer delivered. Even from the bottle this beer was EXPLODING with hop aroma. Notes of pine, citrus, and tropical fruit overloaded my nostrils. The beer tastes the same with a bit more malt than I expected, which makes sense for how big this beer is. Hop heads, this is the beer you're seeking.

It's like being hit in the head with a sledgehammer made of hops

It's astoundingly, insanely, overwhelmingly hoppy

I am a hardcore hop-head, so this beer definitely satisfies my craving..and I LOVE it..it's definitely one of my favorites!

If I had a criticism, I would compare it to Stone Ruin Ten

Simtra is raw, extreme, outrageous and overwhelming..Ruin Ten is a bit more balanced, artistic and sophisticated

So Jeremy(the inventor), if you read this, I love Simtra, but moving a bit more toward balance and sophistication would be cool

Nice tropical fruit smell and taste, hint of dank.

My complaints are mostly unfair given that this is supposed to be a triple: a little on the sweet side, a lot of alcohol, heavy malt. The hops are big but in a nice way -- not just bitter.

Pretty darn good if you're in the mood for too much of everything.

Hazy dark yellow, S- im getting all sweet tropical fruit, no pine really. Taste- kinda sweet throught(not in a bad way) and bitter at the end and again mostly tropical fruit. As it warms I get a little bit of pine. Alcohol is def there but masked pretty well for the 11.2%. O- pretty good I would get again

Dank, marijuana hop profile with a bit of pine, which I would actually like to be even stronger. There seems to be way more Simcoe in this beer than Citra. You don't get much tropical fruit.

The malt profile doesn't get in the way of the hops. Drinkability is fairly decent.

There is some alcohol punch to it, but it drinks like a 9% abv beer instead of 11.25%. Not as much aroma as Fat Head's Hop Juju, Pliny, or Heady Topper.

My biggest gripe about this beer is the price retails at @$11.99 for 22 oz.

22oz. bottle dated 2/4/15 poured in my mason jar. LOL Clear, golden, amber color w/ 2 finger white foamy head. Getting tropical fruits and candy aroma. The hops punch me in the jaw followed by a juicy smooth mouthful. Dank indeed. Knee Deep makes some great IPAs. Recommended.

64 oz growler poured into a pub-style pine glass.

Golden-yellow with 1 finger of loose, off-white head that dissipates quickly. Good clarity with light carbonation.

Candied orange, grapefruit, pineapple, lemon, pine, and candy sugar.

Pine sap, pineapple, dank greens, and bright florals. Candied orange, grapefruit zest, and lemon pith. Candy sugar backbone with suggestions of caramel. Lingering notes of pine needle and zest. A good punch of bitterness hits the back end.

Medium-plus bodied, oily, smooth, semi-dry and moderately bitter.

Hot damn, the 11.25% abv is hidden well! Very west coast, very dank, very good. This is up there with the best of them.

Bottled on 2-16 - extra fresh!
Appearance: poured a beautiful clear golden/orange color. One finger bubbly head that quickly faded to a thin film.
Smell: Huge floral, tropical and citrus fruit aromas.
Taste: Nice grapefruit taste, along with pineapple and mango flavors as well. Light malty sweetness, nicely balanced. A little heat from the 11.2%.
Mouthfeel: medium bodied, silky smooth, very nice and sharp.
Overall: What an outstanding brew - I wish this was available in CO. It ranks up there with the best big IPAs.

Taste: Strong, fairly smooth for the style, with lasting aftertaste

A basic triple, smoother than some. As with Younger, it gets better as it warms.

Very grassy, resiny, and sticky sweet caramel malt aroma.

Flavor follows suit, but with a piney cleanness and an earthy, bitter finish. Didn't get as much fruit as I'd hoped, with the citra.
