Pale amber with white trailers.
Super oily lemon with a touch of passionfruit on the nose.
Sponge cake malts and big pink grapefruit, light pine, mango, and passionfruit hops.
Evergreen-papaya end and hot minty linger.
Medium, chewy, hot, oily.

Boozy, fruity, and sticky - almost brandy-like. Good showcase for these hops - "bursting with flavor" sez a fellow sampler - but could be toned down a bit.

Not the benchmark for this hop combo, as I expected.

Bomber purchased on a recent trip to San Diego, my first ever Knee Deep brew.

A: Clear golden color with a thin white head.

S: Wow! Massive nose, so much going on. Big hops straight away, lots of dank pine from the simcoe, mixed with the citrusy, tropical notes of the citra. Some sweetness too. Very impressive!

T: Does not disappoint. The two hops work in unison so well, and the flavor replicates the aroma with tons of citrus, tropical, and piney notes. Crisp, fresh, and very hoppy with a pleasant amount of bitterness, balanced by a surprisingly light, yet complimentary malt backbone.

M: I can't believe how easy drinking this is for such a high ABV beer. Remarkably light really, and avoids falling into that greasy, oily, and boozy category so many high ABV ipa's do. The malt is pleasant, giving it bittersweet qualities that help to balance out the powerful hoppiness.

O: So glad I got hold of this, incredible beer and up there with some of the best I have had. I am generally a big fan of both simcoe and citra, but how well they have brought them together in this beer into such a flavorful and balanced beer is so very impressive. In any case, this is the best triple ipa I have tried, followed closely behind by Hoparillo.

Poured from the bottle into a Spiegelau IPA glass. Bottled April 15th 2014.

Deep bronze body color, quite clear, minimal rising slow carbonation. A classic thick and soapy off white head with clumping retention, three fingers tall, settles to a finger, with spider like lacing on the glass. A classic looking big IPA.

Nose is juicy. An interesting hop angle. Hints of a balance between earth, dank quality, and herbality. THe dank is winning out on me, but is very well controlled and not large. Hop angle buries much sense of malt backbone or any hints. Faint hint of weed.

This palate is friggin weird. Tingly, and hop forward musty qualities dominate. Earth and weed like aromas splash through the palate, with a solid body. Bitterness on the finish that is really crazy. Novocaine stinging slightly, and very numbing to the senses on the aftertaste. There is a real interesting and fascinating hint of black pepper on this though, which really comes out of nowhere. Hits like a spice angle which I enjoy.

Overall the beer is really all over the place, but has a fascinating hop angle and character, but also some very distracting qualities. It makes me think something really unique is in here but it just needs to be unleashed.
