L: Hazy, cloudy hay coloured with 2 fingers of generous soapy head, phenomenal retention. Color is a little off of what I would expect, but the head more than makes up for it.

S: Malty, musty sweetness up front, fading into a dry brett crispness. Tail is a clean but dirty wheaty funk, with a bunch of booze.

T: Starts nice and sweet, and fades through just a hint of sourness, into a dirty farmhouse wheat that lingers and fades for a seeming lifetime. By the time the you feel a slight burn in your stomach, the lingering memory of brett and wheat are fading in the back of the mouth.

F: Lingering full mouth coat going on with this guy. Fat and velvety through the finish.

D: A bit strong-tasting to the ABV, and a little bit of a sipper, wanted to just enjoy the feel for a bit (which may have led to this)

An awesome bottle brought from Vermont, I think from Hill Farmstead brewery, by my friend BHollas.

Saison with Spices and Brett:

From bottle: "If there exists such a beer as an Asian Farmhouse ale, this is our rendition of it. Created lovingly with long grain red rice added to the mash, Schezuan peppercorns added to the boil, and then fermented atop copious of Yuzu fruit, Wachu Saison is about as "East Coast" as Farmhouse ales get.

Poured from bottle (non dated) into my Jester King Farmhouse Ale glass. Pours a terrific glowing yellow/orange cloudy color. Huge, thick as cream head fills the glass, and stays around forever. Leaves sticky lacing all over the glass. Smell- Brett in the nose. Smells like wet hay, followed by a sweet asian fruit smell. I'm not familiar with Yuzu fruit, but I am assuming it is manifesting itself in this sweet smell. Some sort of spicy phenols trail at the end. Smells awesome- right up my alley.

Taste- this took me somewhere I didn't see it going. It was brett up front, but it blasted the back of my throat with a sweet flavor, coated with some interesting spices. Almost tangy? Puckers your mouth a little. some funkiness comes up as an aftertaste- more wet hay, bretty flavors. This is a pretty interesting and unique beer.

Mouthfeel- tight, thick carbonation. A little bit stingy but style appropriate.

Overall, a good beer I would have again.

Bottle from the recent cellar offerings, at Blue Monk. Very barnyard. In fact barnyard gets in the way of all else. If not for the style I would suspect skunking. Lacey, above average mouthfeel. Some earthy and bretty taste with that horse.Not great drinkability, but for what it is was of some interest.

330 mL bottle poured into a snifter. Bottled 7/25/2012? Not sure if that's what the date means. A collaboration between Grassroots and Tired Hands. A must try, even with my dismal outlook on collabs.

Appearance - Golden orange. Huge overflowing white head. Layers cling inside the glass. Impressive. Thick collar after it all finally settles.

Smell - Floral with some tropical fruits. A bit of apple. Lots of brett. Some sweet malts.

Taste - Dynamic. Apples counterpointed by some peppery notes. Sweet malts. Earthy tones from the brett. A build up of bitter flavors and a spicy finish. Tough to pinpoint the spice. Cardamon or something. I'm probably way off, but it's something that plays with that earthy flavor.

Mouthfeel - Way overcarbonated. Probably my fault for sitting on this bottle for so long. Medium bodied and a little sweet.

Overall - Great incorporation of flavors. I wonder how much it has dried out or maybe would have dried out if I sat on it longer. Definitely would have carbonated even more, but I'd be interested to see what flavors pan out as the brett chows down on the sugars.

Appearance – Pours into a tulip with a lovely golden hazy color. A finger and a half of head is achieved that dissipates slowly leaving great lacing,

Smell – Heavy spice and fruits (lemon), slight funk, pepper, coriander, and wheat.

Taste – Begins with a citrus sweetness which melds to the white pepper spice and coriander. The barnyard funk is not very pronounced but there, mixed with wet hay and a bit of lemon zest. Overall, relatively sweet.

Mouthfeel – Medium bodied, higher carbonation.

Overall – A decent saison, though a bit too sweet. Glad I was able to try it.

Served in a mini nonic pint.

Pours a hazy yellow gold, bone white foam with a creamy texture to the surface. A minimal collar of lacing is left behind, with a lasting veil stretched across the surface.

Signature Brett yeast aromas, dusty phenolic minerals, hay, leather, horseblanket, dried fruit at the tail end.

Lots of Brett yeast, approaching a medicinal level. Hay and horsehair, saddle leather notes, all from the Brett strain. Not getting much yuzu citrus or peppercorn, though there's a tangy dry aftertaste with some cheesy funk seeping in around the edges. Light astringency with a medium level of carb, body feels bigger due to the active yeast. Overall it's ok, just another iteration of a Brett beer that pales in comparison to Saison-Brett, De Proef, Orval, etc. Not worth shelling out $15 at the bar for...

11.2 ounce bottle stamped with 25.07.2012, I assume that's the best by date. Served in a tulip glass, the beer pours a hazy golden/amber color with about an inch off-white head. Head retention and lacing are both good. Aroma is sweet and spicy, the brew smells like coriander, peppery spice, lemongrass, citrus fruit and peels, and some grain/wheat. The taste is pretty much like the aroma, but there's also the addition of some tart citrus and a bit of a flowery/herbal flavor. After drinking the beer for a while, a herbal/bitter finish gets stronger. Mouthfeel/body is medium, it's a little bit coating and is well carbonated. I think it's a good enough brew, I liked it.

For a variety of reasons I've wanted to try this beer. I love Hill Farmstead and Grassroots is sister brand. This is a collaboration with Tired Hands, which will be opening down the road from me soon.

The beer pours a very light cloudy golden color with a fluffy white head. The smell is of typical saison yeast with a hint of brett and a huge dose of spices. The flavor is similar and dry, though the spices are more prominent and overshadow the brett. Some lemon and orange citrus linger in the background as well along with a medicinal quality. The mouthfeel is light and nicely carbonated. This is a pretty good saison. Certainly different. Not an everyday drinker, but good nonetheless.

A: The beer is very hazy golden yellow in color. It poured with a finger high white head that died down but consistently left a thin head covering the surface.
S: There are subtle sour aromas of Yuzu fruit in the nose.
T: Similar to the smell, the taste has a light amount of sourness and a moderate amount of acidity from the Yuzu fruit.
M: It feels a bit shy of medium-bodied on the palate and has a moderate to high amount of carbonation.
O: This isn’t as refreshing compared to other saisons but is very complex and makes for a good sipping beer. It is definitely unique for the style.
