Most of Colorado Mountain Brewery's offerings represent something unique to the state of Colorado. Panther IPA is a dedication to the CS-29 "Black Panther" Squadron of the United States Air Force. The panther represents the readiness, speed, and cunning of the Air Force.
Panther was served from the tap in a generic pint glass. The crystal clear golden-honey color was capped with two fingers worth of snow-white bubbles that hung around for most of the glass.
Aromas were primarily pine and bisquit dough. Not a lot going on here, but inviting just the same.
I was expecting a bit of a hop wallop by looking at the menu, but the server told me that this beer "has a fairly mild and subdued hop flavor, but is great with food." He was correct. Flavors of pine are a bit muted here leaving you wanting a little more in the hop department. Bisquit and light caramel flavors are nice. A floral tinge lingers in the middle while the subdued pine note provides the connection to bring it together. Yes, a good brew to have with a meal. Not an in your face IPA.
I though Panther was a good feel. Carbonation was right and body was in the middle for me.
Overall this is one that won't knock your socks off, but it will go well with much of the menu there. I recommend you use Panther to wash down one of their "Fourteeners" black angus burgers which are very good.
