Appearance: Arruves with a hazy honey color capped by an inch of foam that leaves plenty of streaky lace behind

Smell: Grainy and spicy, with a farmhouse yeast character

Taste: Spicy from the outset, with a white pepper and coriander tone buttressed by a tart lemony character; the tartness continues, after the swallow, though there is a bit of residual sweetness underneath

Mouthfeel: Medium body with prickly carbonation

Overall: A nice Saison with a bit of a tart lemony kick; a bit too high in ABV to be truly refreshing but still very good

Tasted at the brewery in Oct 2013 as a 1 year aged bottle.

A - Deep golden color. Low white head. Good lacing. Just slightly cloudy appearance.

S - Grainy (probably pilsner) malt. Spicy black pepper note. Light smoky, woody note.

T - Grainy pilsner malt provides the backbone. There is a strong smoke note that is almost peat-like, but I'm assuming it is from mesquite smoke, as some of their other beers feature that. Spice notes are there but overpowered by the smoke. Some alcohol sweetness and residual malt sweetness in the finish.

M - Medium to full body. Moderate hops bitterness. Moderate prickly carbonation. Slight alcohol burn.

O - I find this hoppier and not as dry as a traditional saison. The smoke really stands out as non-traditional, but is not unpleasant. This is a complex, enjoyable beer.

(Aged for 1 year)

A pretty enough saison. Mildly hazed golden with a persistent, moderately-sized off white head of large bubbles. Not a lot of lace left down the glass, but there is definitely some. Pretty and appropriate.

The aroma is fairly standard for an American saison. Dried grass and hay. A very mild citrus note in the background. What is strange about this brew is there's a bit of a meat/pork character in the aroma. This will really come to light in the flavor, though it's still relatively mild in the aroma, even after some significant warming. Fairly standard, but nothing to write home about, either.

The flavor doesn't come away nearly as unscathed as the aroma. This tastes like a smoked pork saison--which, unfortunatley, aren't flavors I typically look for in my local farmhouse style ales. Moderate bitterness. Lingering meat. I don't care for this.

Medium bodied with near-high carbonation. Appropriate.

A very interesting, but, overall, not a very good saison.
