This beer pours out a cloudy dark amber-orange, a bit light for the typical tripel, with an eggshell white head that grows to a finger tall, displays decent retention, and falls to a sturdy foam that leaves a mixture of spots and patches of lacing.
While sweet, having the candi sugars element a tripel ought to, it's not cloying. The Belgian yeast is here, though not as exceptionally as many monk-crafted Belgians. The dark fruits I expect are here, raisin and plum along with some lighter fruits more of the white flesh variety. There's also a bit of a honey element to this beer. A bit of spiciness mixes things up and just a bit of floral hops add balance. It's actually quite well done if not a bit unusual.
The feel is pretty good, though not on the level of what takes certain Belgians to the next level. Generally it's both crisp and smooth, but doesn't have that exceptional creaminess and flow to it that makes the great ones great.
Overall, this is a very nice beer that allows for no hesitation to try the others from Rockmill that have popped up recently.

Light golden and very hazy. Thin white head that maintains. Minimal lacing.

Aroma is slightly floral. A little bit like soap, but it a good way.

Taste isn't bad but is a little bit of a letdown. Malty and citrus, with a grassy aftertaste. Actually works well together, but is a touch on the bland side.

A little effervescence but thick. Flavor intensity doesn't quite match up.

Overall a decent beer. If you place value on it being organic, it's a good option. If not, Chimay white label is less expensive and significantly better.

750 ml bottle into chalice, bottled on 1/26/2012. Pours hazy golden amber color with a 1 finger dense and fluffy white head with good retention, that reduces to a thin cap that lingers. Spotty soapy lacing clings on the glass, with a moderate amount of streaming carbonation. Aromas of big peach, lemon, pear, apricot, pineapple, orange, honey, pepper, floral, candi sugar, wheat, and yeast earthiness. Very nice aromas with good complexity of malt and fruity/spicy ester notes; with decent spicy yeast ester balance with malt/fruitiness. Taste of lemon, peach, apricot, pear, pineapple, orange, honey, candi sugar, pepper, floral, bread, and spicy yeast earthiness. Lingering notes of citrus and tropical fruits, honey, floral, candi sugar, pepper, bread, and spicy yeast earthiness on the finish for a good bit. Very nice complexity of malt and fruity/spicy yeast esters; with a stronger balance of malt and fruitiness over spiciness; with no cloying sweetness present after the finish. Medium carbonation and medium-full bodied; with a slick and lightly syrupy mouthfeel that is nice. Alcohol is very well hidden with only a small warming noticed after the finish. Overall this is an excellent Tripel style. Great complexity of fruity esters and malt flavors with moderate yeast spiciness balance; and quite smooth to sip on. A very enjoyable offering.

A hazy, apple cider appearance with an overflowing cream colored foamy head. Had to wait a while for it to drop before I could drink. A nice sweet, yeasty, fruity aroma; sugared apples and bananas, spices, yeast. The flavor matches the aroma though the apple component seems a touch sharper than the other components. A very active moutfhfeel. Overall, fair.

A - Pours a hazy burnt orange with a light fizzy head, thin collar.

S - Sugary sweetness, yeast, citrus zest...way too sweet.

T - Overly sweet sugary notes, yeast, light citrus, light spice. Way too much sweetness and not much of the Tripel base at all. Booze is hidden by all the sweetness.

M - Medium body, flat, sugary finish.

O - I don't want anymore...thank you. Too sweet to enjoy even a single pour...not my cup of tea but you enjoy pounding sugar in liquid form, this is the beer for you.

750 ml C&C bottle served in a Portsmouth tulip. Rare tripel tick courtesy of Alex (Masterski).

A: Pours a hazy chilled golden amber color with barely the slightest head. It recedes rather quickly to nothing.

S: The immediate whiff is that processed crust on the outside of a cherry poptart. Some alcohol is in there with a little cardboard as well.

T: Definitely some oxidation happening here. I wonder if the C&C was bad. Wet paper,cherry pop tart crust, and some earthy malt.

M: Almost zero carbonation. The body isn't lively and it's hard to drink a ton of this.

O: The bad C&C really made this a hard thing to drink. On tap of that the flavor profile was very disjointed and I barely got any flavors I enjoy in a typical tripel.

Picked up while out in Dublin, OH.

Pours with a decent but not huge off white head over a very cloudy golden body, with bubbles running up the sides. Solid lacing.

Lots of juicy, sweet fruits in the aroma - apricot, orange, pear, and white grape. Plenty of rich and zesty yeast. The spicy quality really comes through as it warms.

Plenty of hop flavors join the Juicy Juice party. Good bitterness and white pepper flavors to cut the sweet. Mouthfeel is pretty crisp and dry.

This could be one of my rare set of all 4's. Better than average and loaded with flavor, but not quite soft enough.

Batch 98. Brewed 6-20-11, bottled 7-20-11.

A: amber colored, slight haze with dense creamy head
S: medium to strong nose, true to type with cloying malt, yeast, and EtOH
T: amazing that an Ohio beer tastes like it should come from Belgium!, deep grain, very full taste, cloying with grainy finish and bite with nice hops
M: well made, impressive
O: true to type, full and extremely flavorful

Pours an awesome-looking Belgian beer. A cloudy, dark golden color is everything you would expect. A HUGE white head that does not go away very quickly at all.
Smell is very nice. Strong clean wheat, biscuit smell. Almost smells like a hopped up hefeweizen. A slight hop tinge, but mainly sugary wheat.
Taste is very fresh, just like the Rockmill Dubbel. This beer takes like taking a very good German hefeweizen and dumped some sugar in it, and I mean that in a good way. Lots of nice tastes that blend together.
Mouthfeel has s thin thickness, but a very smooth feel.
Drinkability is awesome on this beer. A lot of very nice tastes, but very balanced as well. A great Tripel from an awesome brewery in Ohio. I would go out of my way to get my hands on this beer.
