Appearance: Pours with ½ finger of light tan head that settles slowly to a thin, almost complete cap. Nice spotty lacing is left behind and refreshed after each sip. The beer itself is the color of burnished copper with the slightest of chill haze and shows significant activity. Last pour arouses some compacted sediment.

Smell: Sweet candy malt with hint of alcohol sweetness.This blends/fades into mild hop bitterness.

Taste: Very mildly sweet malt blends seamlessly into mild hop bitterness. Finishes with lingering layers of candi sugar sweetness and more hop bitterness.

Mouthfeel: Average plus carbonation with decent body.

Drinkability: Another hit from Rockmill Brewery and a sure to be regular in my rotation.

750 ml bottle into tulip glass, bottled on 8/16/2013. Pours lightly hazy orange amber color with a 2 finger dense and fluffy off white head with great retention, that reduces to a small cap that lingers. Spotty soapy lacing clings around the glass, with plenty of streaming carbonation retaining the head. Aromas of big orange, pear, apple, apricot, lemon zest, clove, pepper, light bubblegum, bread, honey, herbal, floral, grass, straw, and yeast earthiness. Fantastic aromas with great balance and complexity of big fruity/spicy yeast, malt, and hop notes; with great strength. Taste of big orange, pear, apricot, apple, lemon zest, clove, pepper, light bubblegum, honey, bread, herbal, floral, grass, straw, and yeast earthiness. Big earthy/spicy yeast flavors on the finish; with lingering notes of orange, pear, apricot, apple, lemon zest, clove, pepper, honey, bread, herbal, grass, straw, and yeast earthiness on the finish for a while. Fantastic complexity and balance of big fruity/spicy yeast esters with moderate malt and hop flavors; with a great malt/spiciness balance and zero cloying flavors after the finish. High carbonation and medium bodied; with a smooth, crisp, and moderately prickly mouthfeel that is nice. Alcohol is well hidden with only a light warming present after the finish. Overall this is a fantastic saison! All around awesome balance and complexity of fruity/spicy yeast, malt, and hop flavors; and very smooth and crisp to sip on. A highly enjoyable offering.

This is an authentic example of a Saison, meeting all the characteristics of the style. The aroma and head were perfect. We served it with Cantonese cuisine for a perfect match to offset the spices. We plan to visit the brewery and search out their other offerings soon.

Thanks to Lat for sending this my way some time ago. enjoyed from a fantome tulip.

a - brew poured a deep opaque honey with a generous frothy head that slowly dissipated leaving bubble bath froth all over the glass.

s - really nice classic saison. good earthiness, but the sweet is the perfect counterpart to keep this from getting too grassy. honey and bubblegum. soft. spring. refreshing.

t - nice lemon tartness. sweet n sour candy, touch of grassiness and then finishes a little bitter. some nectarine notes and overly ripe fruit. pepper.

m - has a bit of a sour thing to it, but it works. body is medium with some sharp heat like notes.

o - overall, an interesting twist with a classic base. carries a lot of classic saison qualities but gives a tart lemon vibe that sets it apart. nice, not mind blowing, but a really clean and well made saison. organic too.

I had this at the brewery tasting room alongside the bottled version.
Sound: Sprightly carbonation escaping the surface, as if to say "I am ready".
Appearance: Light toffee color, light up from the light behind the glass, but cloudy. Tight head that persisted through the first few sips.
Smell: Orange peel, grapefruit, limoncello,
Taste: sweet but not sugary, malt, orange, lemon, bready
Mouthfeel: smooth and full mouthfeel, but it didn't taste underattenuated. Balanced.
Overall: A saison that stays dry enough to make you want another glass, but sweet enough to convince you you're having dessert. It's a magical little beer, that way. While there's the requisite orange, it's other citrus fruits that surprised me on the nose and the taste. A clean and quenching beer.
