Bottle extrad my way from a recentish trade....and since then, it has actually hit local distro. Enjoyed from an oversized wine glass.

a - brew pours a rich orange with a thin oily yet bubbly head that dissipates quickly leaving decent lace on the glass.

s - nose is nice leading with a zesty apple bubblegum with some alcohol phenols tickling.

t/m - taste is fairly boozy and the body is rather thin. Alcohol soaked apples with whiskey.

o - overall fairly meh. I am a fan of tripels and this just misses the mark. Seems like the wrong marriage of a beer and a barrel. Drinkable, but not my thing.

I had this in the brewery tasting room alongside the bottled version.
Sound: I could hear the CO2 forming bubbles and the head falling.
Appearance: Tawny, slightly darker than its base beer, and more red hues. Some light came through beer. The head didn't persist very long, but it was white and rocky on first pour.
Smell: Vanilla, caramel, whisky, plums, figs, burnt toast, hard candy, cream
Taste: Plums, apricots, vanilla, sweet bread, rock candy, homemade ice cream, toffee
Mouthfeel: It had a full mouthfeel without feeling syrupy or cloying. The carbonation was restrained, but appropriate for the style.
Overall: This beer matched well with the OYO whisky barrel. It was immediately evident that it was barrel aged, but the whisky and oak were complements, rather than the focus. Between the bottled and draft, the biggest difference was a creamier mouthfeel in the draft, and a more pronounced vanilla flavor and finish.

Finally opened a my bottle of cask aged Tripel from rockmill. Was able to avoid the large settlement that caked the bottom of the bottle. The nose is subtle but there are hints of bourbon/whiskey. The taste is twangy on the front but settles into a nice bourbon/whiskey finish. This is a big one.....sipping only for me.

750 ml caged and corked bottle. Served in a DFH Signature Glass, the beer pours a very cloudy golden/orange color with a huge frothy off-white head. There's also a good amount of lacing. The bottle was a slow gusher when I opened it, and the head on this brew continued to grow after first pouring it into the glass. It took a little while for the brew to settle down before I started drinking it. Aroma is mostly fruity, the brew smells like pears, peaches, whiskey, peppery spice, honey, and some tropical fruit. It tastes like pears, yeast, peppery spice, whiskey, honey, and a bit of apple and toasted coconut. The whiskey flavor is quite smooth and works well with this beer. Mouthfeel/body is medium/full, it's a bit slick and syrupy, and it has high but soft carbonation. It's also easy enough to drink. The barrel aging sure hasn't hurt the Tripel at all. I'm a big fan of the regular Tripel, and I really like this Cask Aged version too! Hopefully Rockmill will decide to make another batch of this sometime in the future.

Apperance: unfiltered bronze/murky yellow with a 2 inch rolling soft white head

Nose: Candy sugar, bubblegum, whisky and oak

Taste: Whiskey and oak, slightly malty with a slight taste of smoke

Mouth: Very bubbly and forward, dancing on the palate.

Overall: This is very well done, I would have liked to have seen a bit less carbonation and a bit more in the nose but other than that it was excellent.

A: deep amber thickly clouded and opaque; incredible foaming produced a massive head, and even the bit in the bottle foamed up considerably

S: sweet orchard fruits dried on wood; bright and perky and floral

T: sweet fruits delivered along the lines of peach and pear; subtle wood and vanilla; whiskey toast-points in a dense canopy of lush fruits and booze

F: fuzzy and smooth, tingles of spice and booze; lively and full-bodied

O: I really enjoyed this, but I tend to be a fan of barrel-aged pales, like tripels, so there's probably some bias. The tripel base for the beer shows excellent craftsmanship in the Belgian tradition, and the whiskey-barrel wood elevates the ale, lending dryness, woodsy-ness, and the hint of whiskey to this deeply rewarding beer.

Pours extremely hazy, orange. The head is out of control; the cork shot out & hit our vaulted ceiling. It took a while for it to settle down enough to drink it.
Smells earthy, whisky, a little belgian yeast, hints of citrus.
Taste is very complex. Almost bready with vanilla, citrus, honey. The booze is impossible to miss, a little too present for me (in alcohol taste, not the whisky taste itself).
Not super smooth, but very rich feel, kind of reminded me of eating a pear. Lots of sediment by the end.
Overall it was enjoyable, but I don't think I'd go out of my way to pick up another one (especially with that price tag on it).

A: The beer is very hazy pale golden yellow in color. It poured with a short white head that died down, leaving a thin layer of bubbles covering the surface and a thin collar around the edge of the glass.
S: Light to moderate aromas of apricots and peaches are present in the smell; these become stronger as the beer warms up and some whiskey also becomes perceptible.
T: Like the smell, the taste has flavors of golden fruit but toasted oak and vanilla from the barrel aging become noticeable,and particularly stand out in the finish.
M: It feels medium-bodied on the palate and has a moderate amount of carbonation. The finish has some warming from the alcohol.
O: This beer starts off smelling like a tripel but really gains complexity in the taste as you start getting the whiskey barrel aging. It is a lot more interesting to drink compared to other beers in the style.

Live review of a 750mL bottle of this one.
A: Unstoppable white head. Nice cloudy amber body. Great.
S: Apples. Just like juicy mild apples with yeast, honey, and overall fruity character (distant cranberry). I've had the whiskey this is aged in, but it plays such a subtle, congealed role in the beer that it is hard to really describe.
T: Great apple and bread character, nice mild whiskey FLAVOR. Not burning heat, but just a really mellow character in the finish. "Cask" is the right word on the label; it does taste like "cask" aged and not "barrel" aged. It has that subtle aged wood character to it. Overall, it's really intricate in a really good way. It reminds me a lot of an ice wine or sweeter white wine.
M: It starts off simple, slowly developing a strong creamy carbonation and then crisps with the alcohol, leaving a bubbly sensation.
O: This goes above and beyond my expectations.

Edit: Thinking about it, it is kind of like biting a fresh pear. Especially in the taste and mouth feel. By the way, I think this will be the best under-the-RADAR beer I will have, period.

Reviews seem polarized on this one, and there seems to be some batch variation, so I was skeptical to try it, but I seem to have gotten a good bottle of this.

There have been reports of gushers and totally flat bottles, so I held this one over the sink in anticipation. Fortunately, neither fate befell me, and I carefully decanted the beer into a Rockmill stemless snifter (one hell of a fragile glass). A cloudy honey-amber-colored liquid, with a finger of beige foam that receded to a thin but well-retaining layer of bubbles, leaving random coats of lacing on the glass. Tripels are not my favorite style of beer, in fact they may be my least favorite, so the nose wasn't coming off too appealing to me. Belgian yeast, fruity esters, toasted grains. Once I took a sip, the beer won me over a bit more. The whiskey was blatantly obvious, though actually quite mellow and smooth, oaky, sweet with vanilla, notes of caramel, dried fruits, honeyed bread, and a slightly herbal element. Pretty good, to my surprise. Medium body, slick mouthfeel, moderate boozy heat, and appropriate carbonation. A good and interesting brew overall.

Grasciously shared at Jackie O's. I was excited to try this because I was avoiding it in stores due to the price.

This beer wound up being fairly disappointing, especially because the base beer is quite excellent.

Cask Aged Tripel is an exercise in char. The barreling was not kind to this beer. Burnt oak and heavy ashiness was overpowering.

Boozy and sweet, with notions of honey fighting to stand up to the brash blackened oak. Gritty ashy mouthfeel.

Not sure what type of barrel was used, but it was the wrong choice for so delicate a beer. Sadly, I was nonplused about how this turned out to say the least.

There are two possible solutions to my -rdev... either there is some extreme Homerism going on here, or else there is some extreme bottle variation. I'm inclined to assume the latter, though that isn't helping to persuade me to pony up for this bottle to try again. Should it present itself at another tasting though I will happily revisit this review.

Appearance: Pours with the thinnest layer of head which instantly dissipated and was in no way present while drinking. A sparse bubble of active carbonation shows up occasionally. The color is a muddy orange/brown, looks like a glass of apple cider.

Smell: Orange peel and booze hit on the front. Vanilla, earthy spices, and coriander comprise the body. Cloves, banana, and medium bodied fruits show up on the back end. In the end though a rather untamed alcohol heat wins out in the end.

Taste: Pears, cinnamon, toffee, and oak all greet the drinker. Plenty of boozy heat on the body drowns out some banana and cloves accents. Vanilla and some dark fruits shine on the back end with round herbal spices. The boozy punch of the body fades some on the back end to a low roar.

Mouthfeel: Lots of boozy sting. Some pleasant whiskey dryness is left behind. Carbonation of this brew just killed me, being completely non-existent.

Overall: I really do not know what to do with this brew. Red flags flew as a got a barely audible *pop* as I opened the bottle. No carbonation throughout is so odd, especially for the style. Some interesting whiskey flavors shine but there is so much booziness it burns through. This is a new brewery to my area so I'll give them another do, but this is an odd one for sure.

With the Belgian spirit at hand, the brewers of Rockmill brewery tinkers with the tired and true Belgian Tripel style but with an American whisky kick. Its culmination gives the palate and the mind a lot to think about.

As it opens flat, the beer's still demeanor releases a tone of sugary dough and orchard fruit upon the the nose and initial taste. Sweetened with fructose and saccharin, the estery balance comes with apricot and pear with a backdrop of apple, orange and peach.

While the flat and rusty orange beer crosses the middle, the alcohol tones form and prick right through the sweetness with is boozy spice but also with wood spices, caramel and a hearty butterscotch tone. Lightly floral early , its honey-dipped upstart develops into dry straw earthiness just before closure.

That's as the winy ale lays heavily on the tongue and palate with its absent carbonation. This allows for full saturation of boozy sweetness and gravity onto the tongue, promoting a sweeter and more savory tone, but diminishing its aromas, acidity and its lively body. Those sweet textures couple with a dense body to make the beer a sipper, and cloying at times.

Rockmill's Cask Aged Tripel is by and large a well made beer. But is utter defiance of carbonation makes its aromas heavily muted, its taste is dense and oily and its texture dull and flat. Much of that's a shame because I see the real potential in the ale through fruit, spice and vinous complexity.

750 ml bottle into chalice, bottled on 3/18/2012. Pours moderately hazy golden amber color with a 1 finger dense off white head with good retention, that reduces to a thin lace cap that lingers. Light spotty lacing clings around the glass, with moderate streaming carbonation. Aromas of big pear, apricot, grape, apple, lemon, peach, clove, pepper, candi sugar, light honey, bread, herbal, oak, light vanilla, light whiskey, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast and malt notes with light-moderate barrel presence; and good strength. Taste of big pear, apple, apricot, grape, peach, vanilla, toffee, candi sugar, oak, clove, whiskey, pepper, light honey, bread, herbal, and yeast earthiness. Lingering notes of pear, apple, apricot, lemon, peach, vanilla, toffee, oak, candi sugar, clove, pepper, herbal, bread, whiskey, and yeast earthiness on the finish for a while. Fantastic complexity of fruity/spicy yeast, malt, and whiskey barrel flavors; with great balance of malt/yeast/barrel flavors and zero cloying flavors after the finish. Medium carbonation and medium-full bodied; with a slick, smooth, and slightly syrupy mouthfeel that is nice. Alcohol is very well hidden with only a small warming present after the finish. Overall this is an awesome barrel aged tripel. All around great balance and complexity of fruity/spicy yeast, malt, and whiskey barrel flavors; and quite smooth to sip on for the big ABV. A highly enjoyable offering.

Really as good as head can get (in beer thinking that is). Deep amber and unfiltered, completely opaque. The head is rich, silky, thick, holds great retention and leaves thick sticky cascading lace behind.

Nice aromas. Honey suckle, clove, bubblegum, fruity yeasty esters, oak with a hint of whiskey. Earthy with an almost chardonnay like aroma. Pear, apple, butterscotch. Very nice.

Wow this is a killer beer. Mouthfeel is superb, rich, creamy, viscous texture and very soft on the palate.

Clover honey, bubblegum, plantain, the barrel aging ads a great woodsy character, wood tannins, vanilla, oak, toasted coconut, fig, apple, pear, quince, hints of fig. Light nutmeg, and tarragon. Lots going on. Too bad is so damned expensive.

A- Poured a hazy orange color with creamy head that left a little lace

S- Huge aroma of tangerine, peach, tropical fruit, whiskey, viognier wine aroma. This smells amazing.

T- Huge flavors, tangerine, viognier, whiskey, peach, tropical fruit, and orange citrus

M- More syrupy, fuller bodied, soft mouthfeel, not as carbonated as the regular tripel

O- An amazing tasting tripel with great wine and whiskey characteristics. So complex, aromatic, and delicious. An amazing beer that tasted very different than their excellent regular tripel.

A - A nice huge, sticky, rocky white head and a clear, bright medium gold color.

S - Earthy funk, pears, oak, vanilla, light colored fruit, and some candy sweetness. Overall, the nose isn't that strong.

T - Whiskey, oak, pears, vanilla, slightly fruity, Belgian spice, a warming boozy finish, and a lingering oak Belgian spice and whiskey finish.

M - Vibrant but gentle carbonation and medium body.

O - A nice blend of Belgian Tripel meets whiskey oak barrel without one nuance overpowering the other. One thing about many Tripels I've had is the sweetness, this one didn't have much and I'm assuming it's due to the barrel aging that takes some of that sweet edge off. I enjoy barrel aged beers but a Belgian beer aged in whiskey barrels is an odd combo. (But it works.)

O: I love the local collaboration and overall this is definitely worth a try but I like the regular tripel better

Served from a bottle into a tasting glass as the tripel in a double, tripel, quad tasting at Ale, Wine and Spirits in Powell, OH. (Thanks, Kevin!)

A - Pour was a hazy yellow/orange with a decent frothy head (more an issue with the glass than the beer).

S - There's no mistaking the whiskey aging; which in my opinion is never a bad thing!. Once the whiskey aroma passes, you get the hints of fruits like oranges, pears and some peaches.

T - Again, the whiskey definitely comes on first, but passes quickly. There's no heat from the whiskey, but you can't misinterpret the taste. The finish is sweet from the different combos of fruits. This is an insanely well balanced beer.

M - Like other whiskey or bourbon barrel-aged brews, this one is syrupy. I know the bottle calls it a tripel, but it's unlike any other tripel I've had. So smooth and syrupy.

O - Best tripel I've had, hands down. This guy is in my top 5 beers. Such a great surprise, and to make it even better, it's a local brew. There's no doubt this is an A+. Keep up the great work, Rockmill!

No bottling date that I could find.

A: Instant gusher, overflowing two glasses that I tried to save it into. Hate that. Very very cloudy orange pour - can see mists of yeast floating around. Enormous fluffy and fizzy white head(s) since it was poured into two glasses. ;) Head fizzes out surprisingly quickly but leaves very thick and heavy chunks of lacing everywhere.

S: Heavy whiskey aroma. Sweet with lots of toffee and oak, very fragrant. Vanilla too.

T: Like the aroma, whiskey-heavy. Heavy boozy caramel and toffee. Light fruitiness, some citrus primarily I would say. A bit of spice from cloves and pepper but not much, mainly muted by the whiskey I think. Lots of oak and vanilla, especially in the finish. A little bit of lingering drying oak and spices in the aftertaste. Big and boozy and sweet in general.

M: Pretty heavy, higher carbonation and whiskey cuts it a bit but it's still hard to ignore. Pretty boozy to boot.

O: Whiskey aged tripel, a surprisingly good combination. Big malty and sweet beer for sure, not much in the way of belgian influence since the whiskey is quite strong. It works though. Quite complex and decently balanced.

Pours a hazed golden amber with basically no head. A touch of a vanilla nose. I get clear barrel influence throughout. Not a lot of whiskey to speak of really, but mild hints of it. Same degree of fruits; barely an accent. Almost a soft kind of feel to it, as if it were a liquefied fabric. I've noticed this on several other barrel aged beers as well. Anyways, this is a nice beer. A bit pricey, but well worth trying. Another good one from this brewery. Looking forward to trying the 3 others I have of theirs.

Pours like no-pulp orange juice, with a thin white cap that scrams and leave a small island and lasting ring. Quite turbid.


Med. strength aroma, rounded tart, apple, candi, hints of citrus, sourdough bread, floral.

Yeast is more prominent in the sip, but all the flavors of the aroma are here, with candi sweet and fruit following closely. sip closes with hints of alcohol and a bit of oaky liquor joining floral and tart fruit notes. As it warms some herbal bitter joins in. Sort of a muddled mix of unbalanced flavors here, not really all that tasty for sure..

Low carb., even for style, a bit too thick in the mouth, with a finish that is less than optimal, as it picks up some sweetart as it gets to prime drinking temp.

I think this one could stand an upgrade, but glad I got to try it.

A: clear, amber color with intense rocky head that is incredibly dense and thick and kept it all the way
S: pronounced oak but not over-bearing, slightly cloying and yeasty
T: WOW!, this beer is incredibly intense, deep tripel qualities, cloying with malt and yeast, balanced by a strong taste of oak, a bit dialed back on oak would bring out the tripel qualities a bit more, amazing beer, and there is really none like it
M: rounded, full, cloying, oak adds an amazing element, a bit hot in finish

A - Pours a mirky orange color, off-white head, spotty lace.

S - Big whiskey nose, oak, some of the base Tripel sweetness. Pretty big and boozy, and if you like whiskey with a bit of beer, then you'd like this nose.

T - Less whiskey then the nose, but it's still def there. Oak, candied sugar sweetness (not as sweet as the regular version...thank you Lord), whisky booze, and some fruit in there as well. Alcohol is there, no doubt about it. Finish is sweet whiskey booze.

M - Medium, good carbonation, sweet creamy finish.

O - Well, this was a step up from the regular Tripel, which is good. That said, it's so damn boozy I couldn't get through my pour. If you like whiskey and sweets, then you might like this. I didn't care for it all that much.

Pours a little fizzy beige head. Color is a hazed golden yellow.

Aroma: Very fruity with oak. Yeasty. Very muted nose. I don't get hardly anything here.

Taste: Too much whiskey mixed with some yeast, bready malts, and spice. Not a good combination in my opinion.

Mouthfeel: Warming, hot, and dry. Medium bodied with a low amount of carbonation. Ends dry.

Overall, I wasn't a very good tripel. Whiskey wasn't a good barrel for this beer. Way too dominate.
