This NW style sour blond ale was barrel-aged for 28 months before spending an additional two months on 300+ pounds of Black Cap raspberries: think Nouveau Beaujolais with raspberries. Vinous then sweet aromas of tart raspberries are the first to be noticed. Sharp, acidic notes of tart berries and leather on the palate lead to a sharp, dark berry presence and a finish with a prolonged dry fruit note.

750ml corked and caged from the 2016 Project. Opened 6-26-21.
Good pop and hiss upon opening.
1/2 finger head falls quickly to a ring and island. Slippery lacing. Head revives to a full cap when roused.
Purple/dark red with good clarity when held to the light.
Red wine like aroma with the red fruit and wood barrel, brambly berry fruit is bright and gives it a little extra pizzazz. Grape juice. Tart raspberry, with a big punch of acid.
Light body, medium and prickly carbonation. Mouth puckering/bracing acidity.
Very Good.

A 750ml corked and caged bottle, 2016 project. Poured into a 3 Fonteinen stemmed glass.
Appearance: A slightly hazy deep reddish maroon colour with a less than one finger pinkish head that faded quickly while leaving some sparse spotty lacing.
Aroma: Lightly tart, jammy, raspberry, oak, grape skin, with notes of cherry and apple cider vinegar.
Taste: Sour, tart, raspberry, blackcurrant, sharp, acidic, lemon juice, a touch vinous, and woody oaky notes.
Mouthfeel: Sharp, acidic, light to medium bodied with moderate carbonation.
Overall: Like most Cascade wild ales, there is sharp acidity, but in this case, it wasn’t overwhelming, and balanced a bit by the sweet raspberry. This was enjoyable.

Bottle share. Ruby pour, head disappears. Berry aroma, mostly fruit, tart. Taste is also straight up berry, mildly tart, tangy and tingly finish. Cascade has the style down pat.

Pours a dark reddish purple with hardly any foam.
Smell is pretty acidic with heps of raspberries and blackberries.
Taste is powerfully sour, toeing the line of mouthpuckering, making my mouth water wildly. Ripe raspberries and blackberries dominate, and the acidity clings to your mouth for ages.
Mouthfeel is medium and stringent, well carbonated.
Overall, this is not for the fainthearted. Massively sour, and so tasty.
