This one-of-a-kind NW sour is a blend of Belgian strong blondes aged in white port barrels with raspberries, then blended with select barrels of strong blondes that were aged on the toasted meat from the apricot nut, or Noyeaux.

2011 Project

A - Pours a clear reddish-orange with a fizzy than head that fades almost instantly.

S - Very tart and acidic. Some raspberry.

T - Super puckering tart with a mild raspberry finish. Tastes wonderful.

D - Good carbonation with a light body.

O -Super acidic and tart but nice raspberry flavors do show up.

A: The head is a lacy ivory white head that disappears quickly. The body is a light beautiful pink tinged orange color.

S: A rich aroma of berries and funk. There tart comes off potently and blends perfectly with the essence coming from the berries.

T: Sweet and tart at the same time. The berries add a pleasant flavor and the souring yeast is very obvious and delicious. In the background of the beer there is a creaminess that finishes the beer nicely. Well blended and perfectly balanced.

M: A little thin body but great carbonation.

O: Graet sour. On of my favorite. Well worth actively seeking out.

The beer is a beautiful golden sunset hue. Upon pouring, the is a quarter inch of head but this immediately vanishes with a violent hiss.

The aroma offers apricots, white wine, oak, tart and sour notes, sour cherries.

Absolutely delicious beer. Apricots dominate the fruit aspect of Noyaux, leaving the raspberries in the distance. Nice marriage of oak barrels, wine, and apricots. Sufficiently tart yet soft and light on the palate, even despite the nearly 9% abv.

Overall, this was delightful. A terrific beer from Cascade.

Reviewing Noyaux from Cascade Brewing out of Portland, Oregon. This is an intentionally soured blonde ale aged in white port barrels with raspberries and apricot pits.

Score: 98

2011 project (2012 release) bottle served in a Goose Island Chicago Flag snifter and enjoyed on 02/23/13. Review is from iPhone notes

Appearance: Pours a hazy orange color with a thin amount of white head that settles to a ring around the glass. Below average lacing, average retention. No floaties; clean in appearance. 4/5

Smell: Apricots, sour raspberries and oak. A touch of vanilla and some peach notes too. A little plasticky funk too, but in a good way akin to how Cascade Strawberry smelled. 4.75/5

Taste: A nice medley of tart raspberries, tart apricot and peach. Lingering tart citrus zest and peach flavor. Nice tartness and growing pucker as it warms up. Faint oak too. 4.75/5

Mouthfeel: Medium-light bodied, low-medium carbonated. Super tart, nice pop on the palate. Dry and slightly sticky. Increasingly tart as it warms up. 5/5

Overall: This just might be Cascade's best beer. I enjoyed this more than Sang Royale and Sang Noir, which I absolutely adored. I love how tart and fruity this brew is.

Cost: $25 for a 750 ml bottle.
