Cerise Nouveau 2012 Project

750ml Bottle

A: Wine color. It looks like carbonated Cabernet ^^ One finger head.

S: Typical Cascade sours aroma, cherries, citrus, some sweetness, funk, jam

T: It's not as strong, but you can definitely get the cherries. Sour, tart, oak, funk.

M: Perfect amount of carbonation, dry finish.

O: I am very biased since I happen to enjoy all (most) Cascade sours and this one was no exception. Bing cherries aren't very dominant in the aroma or taste (although it definitely dominates in the appearance). Recommended but there are better sours by Cascade (like Noyaux, Sang Noir, Nightfall blackberry, etc.)

Edit: I let the beer warm a bit and it tasted a whole lot better. Bing cherries can be tasted more and it adds more flavor and tartness. I adjustd my scores to give a 4.5 average.

750 mL bottle poured into a snifter. Reviewed from notes.

Appearance - Bright blood red. No head. Just a few stray bubbles.

Smell - Wow, cherries. Cherry pie sweet and tart aroma. Malty and kinda musty.

Taste - More sour, but it's mostly sour cherry sourness. Less sweet than the smell suggests. Musty and grainy malts more prominent. Sour, but it dies down with the malty sweetness.

Mouthfeel - Low carbonation. Medium heavy, even a little syrupy.

Overall - Excellent cherry flavor. If you're into the intense fruit beers, this is good stuff.

Poured into a wine glass form a 750ml bottle.

Pours a deep dark ruby red with a nice off-white thin and dense head. The head recedes very quickly and is quite active and effervescent.

Aroma is strong and acidic. Starts off with notes of sour cherries. Acidic tartness mixed in with notes of delicious sweet cherry juice and cherry jam. There is definitely some oak barrel wood notes in the nose as well as some lactic and chalky notes.

Flavor starts off like most Cascade beers. Sour. Sour. Sour. Notes of tart acidic cherry juice creep up with some nice yeasty earth tones. Notes of barrel and funk can be perceived slightly in the flavor. There are some slight hints of cherry sweetness that can be perceived but for the most part the lactic and acidic sharp tartness dominates. Very similar to the Sang Noir. Mouthfeel is light and crisp with nice lower than usual carbonation.
