Our first unfiltered offering, Summer Swelter Ale is the perfect warm weather beer! Summer Swelter Ale is light and refreshing while still keeping your taste buds interested. The malt base features a hefty dose of wheat for a big, fluffy head and a soft, round body, yet keeps the beer drinkable even during the dog days. The light malt character is more than balanced by a blend of citrusy American hops, giving Swelter a crisp bitterness without being overpowering. The hoppy citrus aroma complements the ingredients that make this beer so unique: lemon and lime peel, Kaffir lime leaves, and lemongrass provide an subtle yet unmistakeable floral nose and just a touch of bracing tartness, taking the refreshment of Swelter to the next level.

Baxter Celsius Summer Ale
12oz can, packaged 6/27/12

Pours a hazy pale gold with a small frothy head. Average retention and lacing, though the color has a nice glow to it.

Aroma has a distinctive lime component, along with an earthy and lemony spice character. Pretty nice, actually.

Flavor is surprisingly bitter at first. Kind of a raw, citrus rind thing. This gives way to a hay-like, malt flavor that lingers over the dry finish. Not getting much tartness. The more I smell and drink this beer, the more I am reminded of key lime pie. It's a pleasant association, but not what I necessarily want in a beer. As the drink wears on, the bitterness seems a bit much for a mass-appeal summer beer-- did they not factor in the contributions of the spices and herbs? Mouthfeel is light and drying with medium carbonation.

This is the first Baxter beer I've actually thought to be well-executed. It is refreshing and free of defects, an as-advertised summer ale. Alas, it still does not do a whole lot for me personally.

A-Pours a swampy apple juice color. Head is quite good looking. Head is bright white and frothy. Head retains when I thought it would pop away. Head also leaves fine lacing spiderwebs.

S-Lemons and limes. The limes are clearly distinguishable. Smells like a lime squished in your palm. Light Noble hop aroma. Also a bit minty. I found a lot of interesting surprises in the nose.

T-Wheaty and heavy on both lemon and lime. Limeade combined with wet-grass hops and spices. The flavor showcases some muscle. I always respect a Summer beer with some 'oomph'. High acidity. Very clean shaven.

M-The body matches a heavier beer. Sessionability isn't supremely high simply because it isn't just a watery Summer brew. I like the body. It has curves.

O/D-Almost reminds me of a gin and tonic with a lime wedge plugged onto the lid of the glass. Very acidic. Rarely do you get lime as a flavor in beer (Besides Bud Light Lime of course!). I find this to be Baxter's most well crafted beer, but it doesn't suit my beer needs. Nevertheless, this is a far beyond average Summer brew and it is worthy of purchase.

Poured a 2" white head with medium life. The body is a slightly hazed light yellow. It smells of malt, citrus, and spice. The taste mirrors the smell but also has a nice hops backbone and it's the hops that carry through in a medium long finish. Quite refresing. Good summer ale.

Poured from the can into a pint glass. Very bright yellow color with a nice fluffy head. I was turned off though by the copious amounts of floaties (lemon chunks) swirling in my glass. I guess it was meant to be drunk straight from the glass, as I didn't find it very visually appealing. Great citrus smell. Very fresh and fruity flavor. The huge amounts of lemons and limes come through. Mothfeel was not too tart, which was nice. I found this to be a flavorful summer ale that I'd drink again, straight from the can.

Yay cans.

Pours a pasty white huge almost 3 finger head that forces me to stop pouring in the SA perfect pint glass, with lots of bubbles rising up from the etch at the bottom. The head fades semi slowly as it's reinforced, with bits of sticky lacing, over mostly clear semi hazy yellow pilsner color.

NOse has some interesting aromas, light lemony citrus, lemony hops, lemongrass, a light grassy noble hop aroma, lemon zest, hints of wheat, and almost an orange zest like citrus.

Taste tastes kinda spiced, almost autumn pumpkin like spiced but not quite there... light lemon zest and hint of orange even, lemongrass, and light grassy hops, with a hint of juicy lemonade, and slight lemon pledge like taste. Light malts and wheat underneath give it a mouthy feel slightly, but those spices just seem a bit weird. A hint of lime as well. Bitterness cuts through more from the citrus zest than grassy noble hops. Finish is fairly dry with long lingering citrus zest, lemon peel, grassy hops, and a decent rind bitterness.

Mouth is lighter bodied, good carb.

Overall not bad, interesting citrus and rind spices, decent hops, malts and wheat flavors underneath add a nice touch, good carb, but the overall spices just seem, not where I want them to be, maybe, can't really label it more than that.

Cloudy lemon yellow. Aggressive white head almost runs over my Baxter can-glass. Neat Fresca looking can.

Lemon lime and bright grassy hop aroma. Tastes like key lime Extra gum, lemon poppy muffin and grass. Prickly hop resin mouthfeel.

Hands down the best Summer beer I've had due to low abv, it's full of flavor despite that low abv, and it comes in a take everywhere can. My only qualm is that the aroma is so striking that you lose a lot in the can. Bring a Solo cup.

Poured into a pint glass. This one pours a hazy yellow with a frothy two finger cap of white head.

Citrus hop notes in the aroma with hints of grass and toasted malts. Lots of tropical fruit characters like pineapples and oranges. A little bit mild on the pallet with hints of lemon grass and bitter hops on the finish. Orange flavors come through with a nice malt backbone.

The body is medium and somewhat sticky. Overall another solid offering from these guys. I'm sure this will be a summer staple for me.

Poured from the can, part of a sampler 12 pack.

An unattractive beer. Hazy yellow, with a nice size white head that left some lace. But a lot of particulate matter that sedimented on the bottom of the glass.

Strong citrus aroma, a little wheat.

Strong citrus taste, particularly lime. Not much else to taste

Metallic lime mouthfeel, harsh.

Not a beer to drink again. I poured two to see if the first can was an anomaly; it wasn't.

Into a pint glass:

A: hazy yellow colored body with a light yet foamy lumpy white head. The head lasts about a good minute. There are a ton of bubbles up the sides of the pint glass. A decent amount of carbonation gently rises from the bottom.

S: hops up front with light citrus backing it up. Some malts come in as the beer warms.

T: tangy yet sweet sort of lemon combined very nicely with the malts, some coriander and lemongrass comes out as the beer warms.

M: light, smooth, crisp, drinkable

O: another good beer from Baxter's. Get to the head of the grill line - Summer Swelter (formerly named Celsius)! Well done!

Poured from a can into a tumbler, the beer is a bright, hazy, unfiltered, lemon-yellow coloring with a light, frothy, low profile white head. Aromas are light and crisp, with a toasted grain backbone and citrusy highlights. Flavors are toasted cereal, with a tangy, sweet, and slightly zesty lemon and lime blended highlight. Spiced overtones, with coriander, lemongrass, and a touch of nutmeg. Very well blended, and remains crisp and effervescent overall. Smooth bodied throughout, with a light feel despite the dynami palate. The aftertaste is roasty and sweet, with a grain/cereal profile. The finish is effervescent, light, and has a slight linger to it. Very easy to drink, and extremely sessionable. Great warm weather brew.

Frothy white sticky head on a hazy lemon-straw body. Grassy, lemony nose. Smooth, crisp, and nicely bitter. Clean grainy finish. Super drinkable, fresh and delicious. Slight hoppiness, maybe some spicy, herbal notes, could be the lemon and lemongrass. ABV is nice and low so you can slug a few on hot summer days.

Another successful offering from Baxter! I think I found my summer session beer!

Edited to add: You'll probably finish it too fast to notice, but you get a nice hit of lemon as it warms!
