This beer is retired; no longer brewed.

Our Boldest beer ever at 60 IBUs, and by far our longest barrel-aging time. A blend of Old World Influence and modern day ingredients and technique. Domestic malt and wheat and distinctly American hops are used to produce this rich, full bodied ale, fermented with two different yeast strains. We barrel-aged this beer in charred oak bourbon barrels for over three months. The end result is this dark ruby colored ale with very intense aromatics.

On tap at Sebago's "end of era" party. 12oz pour:

A: Dark brown with about a half-inch of off-white froth.

S: Bourbon, oak/vanilla, toasted malts, touch of floral and slightly citrus hops. hint of caramel sweetness.

T: Big bourbon character up front with the oak and vanilla. A good bit of alcohol burn and taste. Toasted grains come in behind it with just a touch of caramel sweetness. Finish is remotely hoppy. Not bad, but not enough malt or sweetness.

M: Medium bodied, moderate carbonation. Not that smooth but does have just a little creaminess to it. A bit too much alcohol burn on the finish.

O: Not a bad barrel aged barleywine, but the malt base needs to be bigger and sweeter. It tastes more like an old ale (light toasted malts) that forgot the caramel.

From my notes at the End of an Era event at Sebago on Middle St. tonight:

Deep ruby, mahogany marbled. Head settles to nothing. Smell is pure vanilla & bourbon, more so in the taste. Sweet, malty, chocolate nibs, dry finish. Tastes like a scotch as it warms. More vanilla bean. Alcohol aftertast as it warms. Rich, syrupy, though not too thick. Delicious alcohol sting.
