Pours with a white frothy head that sizzles. The head reduces at a moderate pace to a veil. The liquid is the color of dried apricots and transparent. Sheer curtains coat the glass and there are very few bubbles rising in the glass.
The smell is rich in dried apricot aromas. There's also a bit of oak and funk in the background, but it's faint.
The flavor is tart with a bit of dried apricot flavor. The finish is completely dry with a hint of oak. There seems to be a bit of acetic tones throughout, however I think this is the combination of apricot and oak. The tartness does sustain from start to linger.
The feel is very light with very little carbonation felt.
Overall the appearance and aroma are top notch. In my opinion the flavor is interesting, because the brew is fermented to dryness. However, I prefer just a bit of sweetness to add some depth to the apricot flavor. It tastes like dried tart apricots, if there is such a thing. Finally, the mouthfeel is too much like water and requires improvement to be more to my liking.
