Ale Refermented in Oak Barrels With Strawberries: Strawberries from Fredericksburg, Texas were added to oak barrels containing mature sour beer. The beer was then allowed to referment to dryness. Unfiltered, unpasteurized and naturally conditioned. The name Omniscience & Proselytism does not refer to any claims of inducing omniscience.

Purchased a bottle of this beer at the brewery a couple months ago.

Poured into a tulip glass. A pinkish brown color with wth an excellent white effervescent head and beautiful curtain lacing. Distinct smell an taste of strawberry, along with raspberry and a bit of pears. Tart and funky but pleasantly so. Woodsy and rustic but it goes down so smoothly. I will look forward to my next bottle!

Bottle at share. Medium golden with a pinkish hue, small airy head. Gentle fruity aroma, some of the tartness comes through. Tartness is sublime, as is the sweetness. Flies under the radar. Tastes fantastic.

A 1 pint 0.9 fl. oz. bottle, Blend 5, bottled in May 2018. Poured into a 3 Fonteinen stemmed glass.

Appearance: A clear golden orange colour (from a careful pour) with a one finger white head that dissipated quite quickly while leaving some nice lacing.

Aroma: Tart, strawberry, oak, with some light funk and a splash of lemon.

Taste: Sour, tart, strawberry, vanilla cream, oak, with a touch of lemon and funk.

Mouthfeel: Dry, light to medium bodied with moderate carbonation.

Overall: I love strawberries, but strawberries in beer hasn’t really worked for me at all. This is the one exception so far though as the strawberries come through nicely and provide a nice balance with the sourness and light funk.
