Ale Refermented in Oak Barrels With Strawberries: Strawberries from Fredericksburg, Texas were added to oak barrels containing mature sour beer. The beer was then allowed to referment to dryness. Unfiltered, unpasteurized and naturally conditioned. The name Omniscience & Proselytism does not refer to any claims of inducing omniscience.

500ml bottle pour into HF wine stem split 3 ways.

bottled September 2014.

Appearance: bright and translucent red bottled beer with one full finger of white head that drops down to no head.

Smell: This beer literally smells like a strawberry jolly rancher. Very appealing nose on this beer.

Taste: This beer tastes just like it smells. Strawberry jolly rancher all the way. Mild level of sourness. Not much funk. The strawberry flavor in this beer is probably the most authentic strawberry flavor that I have tasted in a strawberry wild ale besides Upland Strawberry lambic. It is quite well done.

Mouthfeel: light bodied beer with low carbonation. This beer is really drinkable. For having a pH level of 3.2 this beer is really easy drinking. It is not dry, rather the beer has a juicy mouthfeel and slightly creamy carbonation which pairs nicely with the strawberry flavors that it has.

Overall: This is a pretty nice offering from Jester King. Like I mentioned earlier, only one other strawberry wild ale has delivered a true authentic strawberry flavor profile like Omniscience & Proselytism has and that's Upland Strawberry Lambic. Honestly I like Omniscience & Proselytism better than the Upland Strawberry wild ale, but they are both pretty fantastic beers. Either way, Jester King continues to prove that they make some delicious sour beers! If you love strawberry beer you gotta try this beer. Plain and simple.

Lovely initial creaminess from strawberry, though this disappears after a few sips. Tart, oak, cedar, mild funk. Similar to Colour Five except for creaminess.

500 mL bottle poured into a snifter.

Appearance - Ruby red and pinkish body. Medium white head.

Smell - Lots of strawberries. Really comes through. A little jammy.

Taste - Strawberry. Lightly sour. Kinda yeasty. Astringent and woody. Not a very strong flavor.

Mouthfeel - Well carbonated. Pretty light. Pleasantly tart, but not what I'd call really sour.

Overall - What flavor it has is nice. The strawberry doesn't quite come through as much in the flavor, but that's not really a surprise.

Pours a clear rose with small amount of bubbles rising to the top. Barely any head. Smell is of brett, lemon, strawberry, and other berry aromas. Solid acid throughout. Never feels unbalanced. Dry, but with some sweet up front. Strawberry, wheat, fruit roll up, brett. Mouthfeel is light and prickly, with some acid on the tongue. Another excellent fruit sour from Jester King. This went amazingly with some runny goat brie.

Reviewing Omniscience & Proselytism, a wild ale fermented in oak barrels with strawberries from the Jester King Craft Brewery out of Austin, Texas.

Fall 2013 vintage bottle served in a Kuhnhenn chalice glass and enjoyed on 05/28/14. Thank you Scott for sending me this delicious treat!

Appearance: Pours a nice sunset orange color with a nice orange-to-yellow fade. Okay lacing, good retention. 4/5

Smell: Bright strawberry jam and seeds, oak, hay, black pepper and a hint of plastic. A hint of lemon zest too. So jammy, so strawberry forward. 5/5

Taste: Strawberry jam, crackers, lemon rind, oak, hay and more strawberry on the finish. Although somewhat simplistic in how strawberry-forward this beer is, it has some nice supplemental complexities. Lasting strawberry fruit-by-the-foot finish. 4.75/5

Mouthfeel: Medium/medium-light bodied, spot on carbonation. Juicy mouthfeel with a very dry finish. Great tartness, mild acidity. 4.75/5

Overall: Wow. So...much...strawberry. This was better than Atrial Rubicite in my opinion, perhaps because I love strawberries so much. This is my favorite strawberry sour sampled to date.

Cost: Unknown (bottle was a gift).

Bottle shared last night at Umberto's tasting.

Pours a hazy light reddish, with a small head, and a little bit of lacing.

Smells very bright and fruity, tons of real ripe strawberry, and some sour funk and sour malt as well.

This is a great tasting sour. There's a big hit of sour, tangy strawberry up front, and a bit of a creamy finish that reminds me of yogurt. I get a bit of oak too, but not much.

This is fairly light bodied, with lively, active carbonation, and a crisp, prickly mouthfeel.

My first Jester King fruited sour, and it's quite amazing.

Lovely red hue, smell is wonderful, jammy strawberry w/ funky brett in the background. Taste follows the nose, berries, leathery acetic mild palate, dry finish. I think strawberries and a tough fruit to tame and this beer is executed well.

Killer strawberry aroma. Taste is pretty good. Really nice tartness and balance of flavors. The wood is more present as it warms. I wish the strawberries were as pronounced on the taste as they are on the aroma (like the raspberries in Atrial), but it is still very nice. Another great fruited sour from Jester King.

Dry and tart but not the most sour. A tad too sweet from the overwhelming jammy strawberry flavor, but definitely goes down smoothly. Close to perfect.

Serving: 1 pt .9 oz bottle ("blend 2, September 2014"), poured into a Riedel Bordeaux glass.

Appearance: Clear, bright pink orange like a rose wine. White, soap sudsy foam and sparse lace. Bottom of the bottle pours hazy and deeper pink.

Smell: Wet hay, yogurt, earth, funk and ripe strawberries. Invites deep inhalation.

Taste: Refreshing lactic acidity followed by earthy yeast and strawberry jam. Sweetness emerges as it warms, but remains bone dry and crisp in its finish.

Mouthfeel: Medium to light body and carbonation.

Overall: Crisp, refreshing and wonderfully balanced for all its complexity. Strawberries are apparent but still subtle.

Poured from a 500mL bottle into a Jester King stemmed glass. Acquired in a trade

Pours a bright cherry, slightly hazy body with a bubbly white head that reduces fairly quickly to leave little lacing or retention.

Aromas are sharp and inviting.. big, juicy strawberry aromas upfront mixed with tart lactic, vinegar, oak, farmhouse funk, cherry, lemon. I could smell this all day.

Upfront the strawberry shines with a pretty acidic sour berry taste, lemony citrus on the follow through with a nice oakyness to compliment. The finish is tart, unripe berries, funk, and a sour fruity bite. Mouthfeel is light and easy to drink. Tough to sip this one!

Overall an outstanding beer, nicely balanced and very flavorful.

A: Pours a hazed reddish/orange color. Basically no head forms, except for a bit of white foam that comes and goes in less than a second. Like most Jester King, the color is stunning.
S: Strawberries for sure, that are slightly medicinal. A hard candy like sweetness, and substantial tartness. An odd lingering bitterness.
T: A medicinal strawberry character, substantial candy sweetness. Acidic tartness. A lingering and odd bitterness which finishes dry after the initial sweetness.
M/D: A light body, and very light carbonation. Again, after the initial sweetness, finises pleasantly dry and refreshing. Though watery and thin, Needs to be more crisp. Certainly easy to drink. The sweet and tart interplay works well.

A little too medicinal and sweet for me. Not the great jammy fruits that I get with Atrial. Still very much enjoyable, but like most Jester King the hype train takes over with the ratings.

The beer comes in a beautiful pink hue.

The beer has a decent amount of strawberries and tart qualities. Reminds me slightly of an Almanac fruited sour. More towards sour with touches of strawberry flavor instead of a jammy note like Atrial.

I greatly enjoyed this, but I'm a strawberry fiend. The aroma was pure strawberry, like strawberry icing. Flavor was all strawberry, not overwhelmingly sweet, light carbonation, no lactic hangover for me. Color took the prize here. Deep, red, never fading. Excellent brew

A- Pours a cap and collar white head. Body is soft red.

S- Smell is of dry strawberries, not much sweetness which is okay.

T- Strawberries pop here on the tail end of each sip. Can almost taste the small strawberry seeds. Low on the sourness, perhaps a 2.5 out of 10 on the Duff27 sour scale. Sweetness starts to come out as it warms.

M- Actually a low(er) carbonation level here, it fits well. Medium mouthfeel.

D/O- High drinkability here. Best strawberry flavor I've had outside of New Glarus Strawberry Rhubarb...and enjoy this just as much. Thanks kojevergas!

Pour is clear grapefruit pink with very little foamy off white head. Nose is a bit watered down fleshy strawberry, moderate plastic, light grain notes. Flavor is has the plastic right up front, ripe strawberries, some burnt rubber lingers through the finish, faint acetic acid, lightly sour. Lighter body, lower carb, fairly palatable.

Appearance: Pours a hazy peach color topped modestly by the head; retention is not great though it leaves some dots behind

Smell: Very dry aromatics with the strawberry fruit coming through along with the Brett

Taste: Not quite ripe strawberries and leathery dryness from the Brett; the tartness picks up moderately, after the swallow, and lingers into the finish

Mouthfeel: Medium body with low to moderate carbonation; very dry and moderately puckery

Overall: I really like the subtlety here; the fruit, the leather, the dryness and the tart elements combine very nicely

Bottle pour at Shelton Brothers The Festival 2014 held at Crafted in San Pedro, CA.

Pours a hazy light red with a foamy reddish-white head that settles to wisps of film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is sour with malt, strawberry, earth, and funk aromas. Taste is much the same with sour strawberry and strawberry jam flavors on the finish. There is a mild amount of acidity on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is a good beer with tasty sour strawberry and strawberry jam flavors.

Full disclosure* I am continuing to develop a taste and affinity to sours so I'm not looking for pucker face sours.

Had 8oz sample draft pour @ jk.. The nose on this thing of beauty was like a strawberry patch! Look was darker than I expected, even has some strawberry seeds swirling in glass. Taste; mild strawberry with sour finishing with slight sweetness. Feel; light to medium feel but sweet & sour with together to create crisp refreshing feel.

A- Light red body with a hue of purple, light pink-white head that dissipates fairly quickly. Not much in the way of lacing. [4]

S- Strawberries, strawberries. Just ripened strawberries, oak, a bit of earthy funk. A bit of lactic acid. The most jammy, strawberry-forward smell I've encountered in a beer. It's very nice. [4.5]

F- Just like in the nose, there is a ton of strawberry fruit flavours that make this taste like a mildly lactic jam. Some leather, earth. Distinct Jester King yeast flavours that I may or may not have already described, but it's been present in the vast majority of their beers. Lots of strawberries, a bit of lactic acid and funk. [4.5]

M- Medium bodied; on the thinner end of that particular spectrum. Nice soft carbonation, bone-dry finish that is tart with a lot of strawberry jam that seems to dry up instantly. [4]

O- Probably the most strawberry forward beer I've had the chance to try. A bit simplistic, not a ton of complexity, but there is a ton of strawberry flavours in this beer. Seek it out if you enjoy strawberries in particular. [4.25]

I love the look of all these fruited sours. Bright pink, some nice bubbles circling the edge of the glass. Smell is strawberry forward, a lot. Sour strawberry. Taste gets you the strawberry right away, not as sour as I was expecting, though. It's such a clean fruit flavor. Not too sweet, nice dry finish. The mouthfeel is medium, slight carbonation. Really easy to drink. Need to be careful here or it will be gone too soon. Another brilliant attempt by JK... Maybe my new favorite of theirs.
