Ambrée was inspired by the rustic farmhouse ales of French Flanders, particularly those brewed by Brasserie Thiriez in Esquelbecq — one of our favorite breweries in the world. Ambrée is a dry, tart, naturally conditioned amber ale fermented and matured with dozens of different strains of brewers’ yeast, native wild yeast, Brettanomyces yeast, and souring bacteria. It’s 6.4% alcohol by volume, has a finishing gravity of 1.005, and is 3.5 pH.

one of the more interesting jester king offerings, although i suppose they all have my interest. this, like so many other beers out there, falls somewhere between a flanders red and an oud bruin in style and flavor, although instead of blending the two, teasing one with the other, or just tossing around style terminology, this one does something different with that gray area between them. it smells like a flanders red, lactic almost vinegar character, oaky too, but the flavor is all darker roast grain, more akin to the oud bruin. its not just lacto though, there is really appreciable brett character in this brew, from start to finish. its a sensory transition from one to the other, a pleasant and patient journey, and one i look forward to taking again some day. the appearance was unconventional too, brown suds flowed out of the bottle slowly when it was opened, but the head on the dusty brick red brew was cream colored, a strange byproduct of this crazy yeast they have down there in austin. full bodied and quite sour as it warms up, i liked this a lot, for being familiar and different at the same time. nice with grilled pork. thanks to drlovemd87 for bringing this one over.

750ml bottle, batch #1, from a treasure trove of brews brought back from stateside by doktorzee. Man, that's a lot of yeast for an ingredient list. Also, awesome tweaker-friendly bottle cap!

This beer pours a murky, dark orange-brick amber hue, with three fat fingers of reserved, tightly foamy, and verily creamy beige head, which leaves some broad strokes of coral reef lace around the glass as things slowly bleed off.

It smells of lightly biscuity brown bread, thin, watery cheese, muddled savoury spice, dry and acrid melon and citrus fruit, a touch of blacker and mustier orchard offerings, white and green ground pepper, a bit of free-agent sugar, and tanned leather. The taste is mildly tart drupe and citrus fruit, mealy un-ripe funky cheese, grainy, faintly bready malt, further apple cider and raspberry pie fruit esters, and an underlying, and weirdly supportive green mustiness.

The bubbles are fairly active, but little beyond a playful S&M tautness, the body medium-light in weight, and quite weak in it smoothness, the yeast, bacteria, and sure, hops, having just a bit too much ingress here. It finishes off-dry, the fruitiness and underwhelming malt having their time in the sun (in Texas, that means more than it does in most other places), before that peppy, acrid, and funky nature comes 'round full bore, both barrels, and all that.

A nicely complex, and well, more complicated wild ale than most I've yet encountered on this particular continent. All the promise of funk is duly rendered, but in a most agreeably tempered way, at least for those of us with at least a modicum of experience with the style. One of those offerings that grows on you as you delve deeper into it, stuff you didn't really notice at first now providing lingering 'wait a sec' moments. Nice.

750 mL bottle poured into a snifter.

Appearance - Hazy deep orange. Almost copper. Big khaki head. Thick collar.

Smell - Musty. Brett. Light fruitiness. Lightly toasty malt.

Taste - Tart up front. Bretty. Again, it's got a bit of a cherry flavor, but not much. Bread. Tart finish.

Mouthfeel - Pleasantly tart, but all over the place with its tartness. Medium body. Medium carbonation.

Overall - Muddled flavors, but they're all pretty good.

This just did not work for me at all. Maybe tasting along with 5 other varied beers at the same time didn't do it any favors.

The best Jester King beer I've had thus far. The perfect amount of sour flavor that makes you want to keep sipping and sipping. Plus, with the low-ish ABV, it becomes perfectly feasible to do so.

November 13 bottling, batch 1 I believe. Beautiful head, body a bit murky with some glinting ruby tones. Quite a bit of fruitiness in the aroma - green apple, cherry, something woody. Fairly sour but balanced by a substantial malt backbone. Touch of red wine vinegar but a dark bread, almost chocolate, note comes on strong. Makes me think in a way of Flanders meets Biere de Garde.

Unexpected and without stylistic constraint; quite phenomenal.

Serving: 1 pt 9.4 fl oz bottle poured into a stemmed pilsner (beer tulip) glass (bottle marked "batch #2 - 10.09.2014).

Appearance: Dark, murky reddish Amber brown. A Frothy, bubbly, khaki head builds and leaves good lacing.

Smell: Tart, yeasty aroma with some honey sweetness, wood and earthy minerality.

Taste: Red wine vinegar, toasted malt, earthiness, yeasty sourdough bread. Finishes dry with a lingering herbal bitterness.

Mouthfeel: Light to medium body and moderate, bubbly carbonation.

Overall: Light, refreshing and tart but with some nice maltiness and overall complexity.

A: Pours a dark, murky, nearly opaque red/brown color. A beige head forms, and recedes after a minute. Light lace.
S: Vinegary, tart cherry and apple skin up front. A baked bread and musky yeast aroma as well. Pretty simple, but everything works well together.
T: A substantial, but not overwhelming acidic/tart bite. That is also vinegary. Cherry and apple skins. The tartness fades after a minute. Then baked bread, with a bit of dry oak character take over (even though this is not barrel aged as far as I know). Maybe a hint of buttery malt peeking its head through after this warms?
M/D: A medium body and moderate carbonation. Just a bit on the thin side. Easy to drink, and I am enjoying the bottle this afternoon.

A good example of a Flanders stye sour. Not in your face at all, but a substantial tartness upfront. Overall, just enjoyable if not exceptional, and there is nothing wrong with that.

A - Pours a dirty-murky medium brown with a huge light than head that fades slowly.

S - Spices, yeasty, burnt sugar, wheat.

T - Mild tartness, subtle spices, woody.

D - Tons of carbonation with a lighter body.

O - Subtle, but dark spices and woody. Nice light tartness.

Appearance: Pours a dark amber color which verges on mahogany; the rocky beige head leaves squiggles of lace here and there

Smell: Red wine vinegar, brown bread, green apple and funky barnyard tones

Taste: Acetic red wine vinegar, up front, with brown bread and funky barnyard elements developing; green apple and caramel tones pick up the rear with the vinegar aspect ongoing

Mouthfeel: Medium body with moderate carbonation; somewhat puckery

Overall: A different tasting beer but quite interesting and a real accomplishment

Enjoyed from a cask at Jester King on 2/1/14, 4 ounces poured into a Jester King "Wine" glass. Reviewed from notes.

Appearance: Hazy tanned leather color, with a loose but persistent bubbly beige head. Unlike any other beer I've seen before.

Smell: Lots of green apple, with a funk that evokes cheddar cheese. So if you like that combo, you'll love this. I happen to love this. There is a fruitiness behind that sour green apple and funky cheese that is best described as a subtle raspberry.

Taste: Very earthy. Lightly tart, not overwhelmingly sour by any means, with a solid bready malt backbone. The apple and raspberry come through here too. It almost seems like it's had fruit added, but of course it hasn't. Perhaps one of the most unique flavor profiles I've ever experienced.

Mouthfeel: Very low carb, probably because it was enjoyed from the cask. The flavor lingers a while, and the beer is on the thin side.

Overall: That beer was so interesting and unique, it is in a class of its own. I've never tasted anything like it before. Really top notch, JK. You've done it again.

Bottle was moved around the fridge but Jesus the gushing on JK beers is getting ridiculous. I'm sure some of the haze is due to yeasties in the glass. Orange/brown body. Beigeish head sticks around really well for a sour beer.

Dark bread, cheese, apples, cherry, and leather aroma.

Taste mirrors nicely with malty flavors, funk, and fruit. Super easy drinking with some light tartness. Great body and carbonation working here.

Started off unsure about this one at first cap crack, whiff, and sip. It won me over quickly though. I want more but it is hours away in Austin.

Earthy musty and spicy, not overly "wild". Dark in color caramel forward but just not much of a fan of this one.

Appearance: Poured into plastic cup (Yes, i know) at Austin Beer Guide "Winter Release Party." Served out of a firkin. Was fairly dark at the bar, so i'll forgo the appearance mostly. It was a cloudy, reddish-brown. Thin head, which dissipates quickly. Champagne-like tight bubbles, medium carbonation. I would have liked to see this in proper lighting.

Aroma: First impression - Apple/Pear Cider. Very wine-esque with massive light tropical fruit notes. Tons and tons of sour cherries and grape juice on the nose: extremely pleasant. Reminds me of a Sauvignon blanc.

Flavor: Sour cherries, green apples, slight strawberry and raspberry notes. It's really hard to pin-point this beer, extremely complex. Fairly tart, which is very refreshing. Each sip dissipates very quickly, leaving you wanting another. Extremely dry. This will be incredible in another few months. Perfect cellar beer.

Overall: Wow, Jester king has really stepped into their prime territory. This is the epitome of their barrel program. Although I think this is a world-class beer as-is, I think it would benefit from age tremendously. All around, this is an exceptional brew. It is very evident that there was massive amounts of time, effort and thought that went into it. Expect big things to come from this small brewery.

Batch #1 bought on bottle release day.

A: murky dark brown in color, forms a substantial tan head which quickly disipates to a thin bubbly layer around the edge of the glass. Got a couple sediments floating around the surface, not sure what they are probably yeast.

S: first thing that hits is dark cherry fruit, leather, yeast and green apples, slightly floral and candi sugar.

T: very clean taste, somewhat like a red wine, grapes, slightly acidic, refreshing.

M: a slight malty backbone, think a heavier use of malts would have helped, but well balanced nonetheless, not too thick nor thin.

O: another great brew from JK as always, would have enjoyed to see the flavors shine thru a bit more, but extremely enjoyable and delicious will have to do for now.

The beer is hazy and amber to brown colored with a small head. the aroma offers, funk, green apples, earth, fruit, berries. perhaps a touch of champagne in the flavor with a pronounced earth and brettanomyces character. Granny Smith apples, delicious and tart. Easy drinking, yet wonderfully complex and intriguing. An elegant beer and one I would certainly recommend.

Batch 2. Really fresh almost fruit-like flavor. Very good. Not much sour yet still a 3.5 pH. It's just super easy. JK is getting better at this!
