a more reserved raspberry wild ale than atrial rubicite, but one of equal quality and complexity. its got a watered down orangey pink color to it and a very short lived white head. i can imagine this looking a little different from the bottle than the tap, more heady and hazy maybe, but my pour here was clear and rose colored, and not as carbonated as i wanted it to be. the nose has a nice saison funk to it, without the sourness of some of the other jester king wild ales. the nose is lighter on the berries too, i really smell the yeast first, which is summery to me, pollen laden, and just right with the tart berries. the flavor is about the same as the nose, floral and musty too, a nice mix of feelings throughout. the berries are not so center stage, more of a highlight to the base beer, which straddles the saison/wild like pretty closely. what i love here is how dry the beer is, not a lick of residual sugar in this one, which is a nice platform for the yeast flavors and the tartness of the fruit. i just iwsh it had more carbonation, it really needs it, and im wishing for it pretty hard. i think i like rubicite better, in fact i know i do, but its hard to argue the quality and intrigue of this brew. a totally different use of raspberries, i really appreciate a brewery with enough skill and sense to approach it both ways.
