Notes/Commercial Description:
Returning to the practice of bière de coupage or beer that is “cut”, Hibernal Dichotomous is a blend of young farmhouse ale (63%) brewed this past November (2013), mature barrel aged beer brewed with lavender, rosemary and spearmint in November of 2012 (25%), and fresh pressed watermelon juice (12%).

Review from notes, 7/4/14

Appearance: Somewhere between honey and yellow gold - mostly hazy, but there is some clarity - big carbonation to start but rapidly fades to a small, off-white head, then fades to a few wisps, leaves minimal lacing

Smell: Very, very, VERY unique - fruity, juicy, floral, and minty - some Jester King saison/funky weirdness - to me, the spearmint, the lavender, and the watermelon are the biggest aromas here secondary to the floral, funky saison aromas - maybe a light hint of sour - lightly sweet malts with some lightly sweet fruitiness

Taste: Somehow even weirder than the aroma (which is not a bad thing) - saison yeast, with some funk, some light tartness, and some fruity esters - green apples and pears - watermelon is more obvious than in the aroma, with some nice, remarkably fresh-tasting watermelon flesh - lavender and rosemary, with some spearmint - light sweetness, light tartness, a touch of funk - some truly bizarre co-occuring flavors here, but it works surprisingly well

Mouthfeel: Light, smooth, nice carbonation, very drinkable

Overall: Judgment of this beer is not dichotomous; the answer is always "yes"

Jester King makes a lot of odd beers, yet they still can surprise me. The use of spearmint and watermelon juice seriously makes no sense, but somehow they made it work. Yes.

750 mL bottle poured into a snifter.

Appearance - Clear golden yellow body. No head, even with a vigorous pour. A very thin collar, nothing else.

Smell - A little acidic. Faint fruitiness. Musty. Kinda perfumey.

Taste - Nice tartness. Watermelon is present, as are all of the herbs, amazingly. The lavender is the most interesting. Lemony tartness lingers in the finish.

Mouthfeel - Medium low carbonation. Very light.

Overall - Went back for seconds of this. Love a flavorful, low ABV beer.
