Detritivore was made by adding the same cherries that were used to make Montmorency vs. Balaton to fresh beer in stainless steel and allowing the combined beer and fruit to referment to dryness. This was the same technique that we originally used to make La Vie en Rose with the raspberries from Atrial Rubicite. As with La Vie en Rose, the second refermentation of the fruit results in subtler, more delicate flavors, as compared with the more intense flavors that result from the initial refermentation.
Detritivore is fermented using native yeast and bacteria from the Texas Hill Country, but is not spontaneously fermented, as our brewers actively introduce our house blend of saccharomyces, native wild yeast, and souring bacteria to the wort, rather than relying on inoculation by ambient, airborne microorganisms. We brewed 100% spontaneously fermented beer both last winter and the previous winter, but all of this beer is currently aging in oak barrels and has yet to be released.

been wanting to try this one for awhile now, so it was cool to get to do two vintages side by side. batch 5 from 2018 and batch 8 from 2021, really different beers. neither has a ton of color, barely even pink, thought they would show the cherries a little more. i love this second use fruit series they have done, and this one i think is among the most different from the original more fruit forward beer, not as lambic-esque on the ferment, more brisk and tart in both vintages, the older one being a little more acidic overall. i can taste a lot more of the grain here too, less jammy and intensely bold fruit, so the balance of the base beer is more on display, i almost even get a little rye spice although i dont know if there is anything more than pale barley and white wheat in this. these arent that fruity to me, hints of rose wine and cranberry in the mix in addition to the ghost of the cherries, lots of earthy minerality too, aiding in the dryness, and just a little more tartness in both than i need. a little flattering oxidation in the older one, more funkiness in the newer one actually, and some rustic farmhouse character, straw and hay to me. neat how fermented out the fruit seems to be, more tannic than juicy or anything here, decent body on this and excellent bottle conditioning on both, a commonality now for these guys, who almost always master this aspect of their packing. very subtle fruit beers here, neat to be able to have them right after the montmorency vs balaton bottles, totally different brews. ageing very well.

One of the prettier Wilds I can remember, clear and burnt amber orange. Smells are more common, more lemon than I need. Tastes follow, but the lemon is less tart than I expected... as is the overall impact on my palate. Sufficient bubbles for a Wild; Detritivore cleanses the palate well for more food. I had it with vegetable soup; flexible enough for that medley. I had half a burger with a sweet mustard sauce; good enough. I had the other half with a sweet BBQ sauce; it won.
Only my 8th from The Jester King, but my first Wild from them. I've focussed on their saisons because I figured they were designed to match what looked like a creative pizza kitchen. But, I could easily have Detritivore with their pizza. Does Jester King have a frozen line of pizzas. J'en doute.

I was fortunate to have this on draft at a local burger joint. It was pour d in a Piraart tulip glass.
Pretty beer. Cloudy pinkish yellow with a nice head and great lacing. Nice berry and cherry smell and taste. The flavors are a kaleidoscope of different fruit: cherries, raspberries, strawberries, lime and watermelon. As it warms, the beer becomes more floral and herbal, with a very pleasant funkiness. Tasty and refreshing and yes it went well with a hamburger!

This pours a slight light pink color. Light cherry notes come through on the nose. There's definitely a sour cherry blast, mellow and tart, matched by the effervescent. Fantastic beer.

Poured into a tulip. A bright pink-orange color with a thin but persistent white head that left nice tracks in the glass. Aroma was quite funky with hay and even a little petroleum mixed with cherries and faint bread. The taste was less funky and showcased the slightly tart and delicious cherries. Tremendous cherry flavor. Light bodied with lively carbonation.
