Pecan Wood Smoked Saison Crafted in the once commonplace, Old World tradition of bière de coupage, young, dry hopped ale is blended with old, barrel-aged sour beer fermented with native yeast. A portion of the malt was smoked over pecan wood at The Salt Lick BBQ in Driftwood, Texas. Unfiltered, unpasteurized and naturally conditioned.

Update: Our original label application for Salt Lick Pecan Wood Smoked Saison was rejected by the Texas Alcoholic Beverage Commission (TABC), after having been approved by the Federal Alcohol and Tobacco Tax & Trade Bureau (TTB). We have renamed this beer "Censored" for sale in Texas.

Bottle: Poured a hazy pale yellow color ale with a huge off-white foamy head (bit of gusher) with good retention and some lacing. Aroma of smoked malt is pretty dominant with light cereal notes also perceptible. Taste is a mostly dominated by smoked malt with some funky barnyard notes and a tart finish being also noticeable. Body is light with great carbonation and no apparent alcohol. Not an everyday kind of beer with the amount of smoke that can be found here and not really a saison anymore but nonetheless I still enjoyed this beer.

Appearance: Hazy, light tangerine with some nice gold and orange tones - pours with a ton of carbonation (yup, the bottle was a gusher) - fades to a large, foamy white cap, leaves some blobs and streaks of lacing

Smell: A lot of funky, sour, woody, smoky weirdness - some sour notes, with what smells like Brett - wet and musty funk - some yeasty saison notes - wood - earthy, dirty, and floral notes - big smoked malt component - smoky, sour, musty, and interesting

Taste: Funky and smoky, what is this, a recent Fantôme beer? - light sourness, with some lactic and Brett flavors - decidedly wet and musty with some big earthy flavors, hints of something salt-like, and lemony tartness - yeasty with some light fruits and more funk - smoke is definitely prominent, with some smoky, damp smoked malts - damp wood as well - can't say I detect any pecan, but it's still very interesting overall

Mouthfeel: Medium body, smooth, some lingering funk and smoke

Overall: Some beers are beyond weird... I'm running low on adjectives

This is an interesting mix of sour, funky, smoky, and yeasty flavors. The concept of blending a sour with a saison kind of makes sense, but I'm not sure if the smoke was necessary. Regardless, it mostly works, and this is worth a try.

Thanks to angrybabboon for sharing the bottle.

Appearance: Highly carbonated hazy straw goldfish yellow. Bubbly bright-white head leaves some small notches of lacing. Solid retention leaves a small bubbly cap.

Smell: Smoked in nice measure. Slightly sweet pecan wood layered over typical Jester King funk. Damp and musty with some hints of lacto and a solid bretty punch. A touch of lemon juice and lemon zest. Slightly herbal and earthy as well. Damp earth and then a soft spicy sweetness from the smoked wood. A bit of powdery bready elements with some pale crackery malts as well. Pale malt sweetness rounds it out.

Taste: Smoked peachy lemon bread. A nice pale malt sweetness rounds out the back. Some biscuit and crackery malt base. Smoke is slightly sweet with a touch of char and a mild spiciness. Damp musty funk as well. Wet earth. Some lemon zest and a touch of lacto. Brett adds some mild funk. More tart than smoky as it warms. Green wood.

Mouthfeel: Light body with a moderate to high carbonation. Clean and slightly crisp on the finish with a slightly slick sip upfront.

Overall: Why so secret.

It's odd, but I like it. Smoky and tart. Just unique.

I received this beer in a trade a while ago. Batch #1 from January 2013. A pecan-wood-smoked saison, where a portion of the malt was smoked at The Salt Lick BBQ joint a few miles south of the brewery. The original label for Salt Lick was rejected by the Texas Alcoholic Beverage Commission, since Salt Lick is named after The Salt Lick BBQ and Texas law doesn't allow for that direct relation to a retailer on a beer label. And so "Censored" has become it's new name.

Stored in refrigeration for a few weeks, there was no extreme "gushing" upon opening this beer, though after a few seconds the beer started to foam in the bottle and began slowly creeping out of the neck. Immediately poured this into a teku glass. The body is a dull and cloudy yellow-orange color. The head is a crisp white foam that pops away quickly, leaving not very much behind.

The aroma is quite similar to what you would find in a traditional farmhouse ale, with notes of tart apples, lemon rind, sweet wheat malt, and light brine, but with an additional influence from the barrel and smoked malt, lending it's woody, earthy, ashy smell. What was impressive is the well-balanced nature of the aroma, and the strong intensity of it all.

Up front on the palate is the bright, lemon-lime citrus flavor, with a serious tartness that pops about mid-palate. It's tannic and vinous up front as well, and that falls into a lingering salty and dry quality in the finish. Persistent throughout the entire experience is a strong, ashy, tobacco-like smoke, which contrasts it's earthy quality against the bright tartness of the base beer. The body is very well carbonated, and the mouthfeel is soft, with an expansive feeling when held on the tongue.

Fans of smokey red wines or oaked dry whites would probably really enjoy this beer. The smoke quality is excellent, and certainly unique. The saison characteristics are not overwhelmed and the beer is very unique. I don't know if it is something I would want to drink all the time, but I certainly enjoyed the experience.

Same trade from Nablock.

Opened up the bottle and noticed yeast overgrowth covering the entire lip of the bottle. Not a good start.

Appearance: Poured light golden yellow with a pretty large head. I was intrigued by this one due to the Pecan Smoked malt that was added.

Smell: Oh boy, just as I thought, infected. It smelled like a light struck chardonnay. Sour white grapes and nothing else from it. People kept stating there's a lot of pecan wood smoke on the nose. No way that was even present in this bottle.

Taste: Exactly how it smelled. Sour grapes, bitter, very astringent and brutal to finish. Pecan wood on the very back end was my only respite.

Mouthfeel: Bitter, bitter, bitter...

Overall: Infected, what can I say. Maybe another try? I'd prefer a hop forward beer from Jester King. Or their fruit based wild ales which I've heard great things about.

"Censored" version from the bottle.

Hazy golden orange in color with two-fingers of gently settling off-white head. Aroma is enjoyable, albeit subdued, with lemon, melon, yeast, herbs and a faint smokiness. Yeasty up front on the tongue with a nice interplay of melon rind and lemon juice followed by a palpable woodiness, salt, and a soft sour aftertaste. Medium bodied. Has a bit of grittiness that gets in the way.

Have liked what this brewery has been doing for a while, and even though this one isn't as robust as some of the others of theirs I've tried, it is another winner that sports that unique JK touch.

Jester King "Censored." (Formerly "Salt Lick"). "Bottle conditioned ale partially aged in oak barrels with wild yeast." Batch #[Unintelligible]. January 2013. 6.7% ABV confirmed per the label. FG 1.002. IBU 22. Reviewed as a saison, since the label describes it as a "Pecan Wood Smoked Saison." 1 pint 9.4 fl oz brown glass bottle with interesting label art and a fantastic branded pry-off pressure cap acquired at Whole Foods HQ here in Austin and served into an Independence Brewing pilsner glass in me gaff in low altitude Austin, Texas.

Served cold, straight from me fridge, and allowed to warm over the course of consumption. Side-poured with standard vigor as no carbonation issues are anticipated.

HOLY SHIT! GUSHER! I had refrigerated this per the label's instructions and it absolutely volcanoed on me. Beware!

A: No bubble show forms as I pour.

Pours no head whatsoever (in spite of its seeming overcarbonation). All we get a white floater ring of below average thickness and creaminess. It lasts maybe 40 seconds. No lacing.

Body colour is a hazy cloudy yellow of above average vibrance. Translucent. Nontransparent. No yeast particles are visible.

Overall, it looks about right for a saison.

Sm: The first thing I pick up is an obvious brettanomyces-induced funkiness, with soft welcoming notes of tart lemon zest and wheat. The tartness takes a turn, though, as soon as the smokiness introduces itself, yielding a strange aroma I'm not entirely on board with. Cidery and apple-y. Notes of wet straw, pilsner malts, and grains. Light crackery malts. I do pick up pecan in the smokey character. I'm not sure the smokiness mixes well with the saison aspect of the beer, but to be honest it seems to work a lot better than I anticipated; there's none of the pork, bacon, or smog notes you'd get from a rauchbier, for example. White grape. Generic floral hop character. No alcohol is detectable. A kiss of lactose.

A really intriguing aroma, but the jury is out on whether the two diametric profiles clash or come together. I wouldn't call the aroma pleasant per se. Mild in strength.

T: A brief hint of the white peppery notes I look for in a good saison. No milky notes. Wheat, pilsner malt, crackery malts, straw. Brettanomyces-induced funkiness throughout; it does lack depth though. The smokiness is nicely subdued by the lactose, but it still feels out of place. I do get some gose-esque saltiness. Clove. Lemon citrus zest and accompanying esters. Lemon peel. Has a light tartness. I don't get any wild yeast per se. And the purported pecan? Nowhere to be found. A bit cidery and apple-y. Complementary timid floral hops. It's pretty good, actually. I can't in good faith call it balanced, but I will say that it navigates its merging of two distinct flavour profiles pretty well. Good complexity. Some limited subtlety.

Depth of flavour is below average - but only when reviewing to style; the saison may be the deepest style out there. Average flavour intensity and duration.

No alcohol comes through.

Mf: Crisp. Smooth and wet. Strangely refreshing, actually. Excellent carbonation; this really benefited from bottle conditioning. Smacky. Fairly acidic. Complements the flavour profile quite nicely. Good presence on the palate and good body. A well executed texture for this approach to a saison.

Dr: I love the experimentation. It took me awhile to warm up to this one, but now that I have I'm really liking it. It's an extremely interesting beer, and while I can't say it's a great saison, it's a pretty good hybrid style - dareisay a unique beer. I haven't really understood the Jester King obsession since I moved here to Austin, but if they have more beers like this I'll happily purchase them. Would I get this again? Maybe for trades. The price point is a bit unreasonable given the availability of far better (even imported saisons) for near the same amount. The light lactobacillus kiss is a highlight for me. Far from forgettable, Salt Lick is well worth a try.

I recommend a snifter or tulip over the pilsner glass I had to use.

I doubt it'd age well.

Got in a trade with Cyde. 750 ml bottle into signature tulip glass; Batch 1, bottled in January 2013. Slow gusher upon opening. Pours extremely hazy golden amber color with a 2 finger fairly dense and fluffy white head with good retention, that reduces to a small cap that lingers. Spotty soapy lacing clings down the glass, with a good amount of streaming carbonation. Aromas of tart lemon, green apple, pear, clove, pepper, wheat, smoke, wood, hay, grass, funk, light vinegar, and yeast earthiness. Very nice aromas with good balance and complexity of malt and yeast ester notes, with prominent smoked wood presence; and good strength. Taste of tart lemon, green apple, pear, clove, pepper, hay, grass, wheat, wood, smoke, funk, light vinegar, leather, and yeast earthiness. Good amount of tart earthy spiciness on the finish; with lingering notes of tart fruit, clove, pepper, wheat, wood, smoke, hay, grass, funk, light vinegar, leather, and yeast earthiness on the finish for a while. Very nice balance and complexity of malt and fruity/spicy yeast flavors; with a fair amount of smoke presence and zero cloying flavors after the finish. Medium carbonation and body; with a light creamy and crisp mouthfeel that is nice. Alcohol is very well hidden with only a slight warming noticed after the finish. Overall this is an excellent smoked wild saison style. All around great balance and complexity of malt, smoke, and fruity/spicy yeast flavors; and very smooth and crisp to sip on. I thought the wood smoke note complimented the spicy yeast nicely. A very enjoyable offering.

Bottle (2013)

Thanks for opening this with me, Josh!

Unfortunately, there wasn't much I could take away from this beer that was positive. Both the aroma and flavor had strange, and strong, flavors of smoke, sharp wood, and a meaty, almost pork-like, character. This was largely undrinkable, for me. Granted, I'm not the biggest fan of smoked beers, especially when not don well. I didn't think this one was done very well, either. There was some grass and a salinity to it as well, but the smoke was too dominant for me, personally. If this sounds interesting, I'd still recommend trying it, as other people I respect have enjoyed this one. Perhaps it just wasn't for me.

Jester King Brewery - Salt Lick (Censored), poured into a Craftgeer snifter.

Look - Pours a deep mimosa with a small foamy head that dissipates quickly but leaves considerable lacing.

Smell - Tart citrus, sour, oaky, and funky as hell. Take all that and throw it in a smoker because that's what it is.

Taste - Undoubtedly lemon sour in the front that gives way to woody smokiness and a bit of salt.

Mouthfeel - Light body, sits smoky but not bad. Heavily carbonated, dry, and fades quickly. Not overly boozy and actually quite drinkable.

Overall - This is without a doubt one of the most unique brews I have ever had (something Jester King seems to make me say often). Glad I tried but I would not get this one again, it is definitely not for everyone and along those lines it's not for me, but I judged it on it's merits and it was pretty good at doing what it advertised.

Poured into a tulip. Batch #1, Jan 2013. This gave me quite a nice little clean-up to do when I found some big time gushing.

4.0 A: Murky yellow/orange/brown color. Two fingers of frothy off-white head. Retention is pretty good and lots of lacing is left.

4.75 S: Smells great. The smokiness is so enticing - porcine city. Doesn't come off as very sour, it's more of a funky tanginess. Woody, funky with herbalness, rotting wood, and outdoorsiness. Hay and grassiness. A bit of fruitiness. The smokes blends supremely well with the funk. I couldn't ask for much more.

4.25 T: Taste is also really great. The sourness comes through stronger than the nose. Porcine smoke again, light sourness with plenty of tanginess, woodiness. Funk gives rotting wood, herbalness, outdoors, and hay/grassiness. Peachy fruitiness.

3.75 M: Lighter medium body. Plenty of light, somewhat spritzy carbonation. Supremely smooth.

4.25 D: Very nice beer overall. Awesome nose and great everywhere else.

A - Pours a straw/hay in color with a two finger eggshell head.

S - The smell first off is like opening a bbq pit smoker. The smoke is cut with a light sweetness that brings it all together. Behind that is a lemony tartness with some funk.

T - Lemon sour on the front, some funk/wheat/hay and the sweet smoke from the pecan wood comes in midway through. Ends a little salty with may'be some white pepper.

M - Light bodied with high carbonation. Finishes dry.

O - Really an interesting combo here. I can see this as a love it or hate it beer. But, to me it's really great and refreshing.

Bottled Jan. 2013. Pours out a straw gold, very hazy. Heavy carbonation makes for a great 2 inch head. It settles to a dusting on the top, leaving on bits of lace behind.

The smell has the sour citrus of a Berliner-weisse, follow by a kick of BBQ smoke and some farmhouse funk. Intriguing smell.

Wheat, fresh lemon, smoked wood and a slight sour grape aftertaste make an odd combination of flavors. Not bad, but very different. The mouthfeel is light, but a bit heavy on the carbonation.

I enjoyed the ride, but won't pick up another one. Did compliment my pork tenderloin pretty well though.

Just when you think you've tasted it all... A smokey sourish Saison? Clever in its recipe formulation and grounded in rustic history, this ale is as curious to the palate as it is drinkable.

The pour delivers a rusty-straw color that's just a shade deeper than your average farmhouse ale. The hazy beer releases an exuberent level of carbonation to fuel a fluffy ivory-white head. Firm withstanding and intricate lacing all indicates a well made beer.

Incredibly tart aromas strike the nose with white wine and cider-type acidity. A wrap of fragrant smoke wafts about the sour fruit for a tale of two beers living in the same glass. Musty grain, straw and wet hay give an earthen component that brings the tartness and mesquite together.

Then to taste, the early palate is all sour saison. Sour white grapes, crab apples, orange peel and grapefruit align on the tongue- all in a supple under-ripened way. The middle delivers a brine and earth melange that's common to sea salt, grain and hay. Cork-like wood is just the hint of something unexpected to come. The late palate sheds all that fruit and introduces a taste of campfire, scotch, and mesquite. The unique balance is void of meaningful sweetness as the smoke is unsupported, much like more fragrant nutty cigars. Just as soon as the taste subsides... Bam! ...a late aftertaste of heavy peat echoes in surprising form.

Light on the palate, the carbonation pushes the grain from the tongue and ushers in a racy finish of sparkling white wine, acidity, peppery warmth and a powder-dry ash that's oddly compelling.

The unique combinations of taste seem to swirl around each other and never come together. It's unusual that I prefer it that way. The beer continues to deliver flavors and textures to different parts of the mouth even as the mouth acclimates to it deep in the session. Quite a mysterious ale!

A - Looks very saison-y: opaque golden hay in color with a white, fluffy head.

S - BBQ pit smoke-bomb... I was a bit afraid I was not going to like this one after my initial smell. Smells extreme for a beer; reminded me of some smoked German beers I have tried and did not care for.

T - Barnyard and hay...Salty And smoky. Very different than anything else I've ever had before. The sourness reminds me of apple cider vinegar. There's a slight bit of spice in the back of my mouth in the finish, maybe some lemon and black pepper. ***I'd love to see a 100% barrel-aged version of this with some ancho chiles.

M - really nice... Not heavy at all; it's perfect for summer. I can hold a sip in my mouth and feel like there's nothing there... I really like the level of carbonation.

O - I wish I would have had some Feast BBQ tofu to go with this brew; that is a match made in southern-flavored heaven. JK has become one of my most sought after brewery, and this is just another example of why that is.

A - light watered down hazy straw color. Not much else (head/lacing).

S - tons of smokey sweet tobacco and salt. Extremely pronounced

T - Slightly sour and heavily salted, all smokey tobacco at the finish. Vinegary sours aftertaste. A bit too smokey imo

M - light bodied, ok carbonation, sourness makes it quite drinkable. Kind of hitting the back of my jaw a bit

O - Thicker smoke bomb with nice sour complimentary flavors but the smoke is just too much

Pours a hazed golden yellow hue with a two finger head and clingy lacing everywhere,the smell is strong smoked pecan wood,funk and citrus quite an enticing smell,the mouthfeel is medium bodied and well carbonated maybe too much and has tastes of smoked pecan wood them the saison takes over with hints of lemons,limes,oranges,only the slightest touch of funk which is highly dissapointing for me and the finish is a mix of herbal earthy bitter hops and sweet smoked pecan and overall when reading the label I was thinking this is going to be one hell of a unique beer but unfortunately it's just a nice smoked pecan saison and probably my first jester king that I would not revisit cheers.

Jester King tulip glass

A: Cloudy bright yellow straw color. Two fingers fluffy white head. Good carbonation. Lacing sheets start immediately.

S: Nose reminds me of the Gotlandrika from JK. Also the smoking Fantome Saison (weird batch) that I had this past fall. It's not an overpowering bacon smoke, but more subtle than that. More peppery notes and spice. Good barnyard dryness, and as others have mentioned Band Aid smells. Maybe some light lemon mixed in there too.

T: Tip of the tongue you get prickly carbonation. Hints of that sweet smoke from the pecan wood. Nice pepper notes as well. That lemon comes through a little bit. Maybe some touches of faint tartness/sour. Dry finish. Very clean.

M: Light to medium bodied. High carbonation.

a gusher of a bottle, poured into a jester king glass. clear golden yellow pour with lots of fluffy bright white head. smells of smoked wood, chipotle peppers, band aids, funky brett scent. my god this is an excellent tasting beer. as a huge fan of sours and rauchbiers, this is right up my alley. lots of smoked flavor, wood, with a nice bretty funkyness, and also a slight acidity to it making it a very light sourness. this is simply perfection for a summer night. lighter/medium body with high carbonation, this is a very delicious and refreshing beer.

an amazing offer from jester king. their beers just keep getting better and better. if you like sours and if you like smoked malt beers - do not think twice.

A. Glowing orange-gold with a large white head. Pretty beer.

S. Earthy wood smoke, light citrusy acidity, a bit of pale malt.

T. More woody, meaty smoke, a bit of dry mild sourness, orange rind, oak, coriander.

M. Light-bodied with active carbonation.

O. This is pretty interesting. The smokiness is strong but not off-putting. I just wish the blend had included a little more of the sour beer.

Pours a pale yellow colour, very hazy, white head, nice lace. The aroma was undoubtedly smoked pecan wood. That's a very strong smoked wood. I've had some beef jerky that was pecan wood smoked and it was the most intensely smoky thing I've ever had. Lucky, the Salt Lick is pronounced, but not a one pump chump. There's some subtle tart and Brett notes, oak and yeasty esters. Taste of rich smoky pecan wood, mild tartness, Brett funk, yeast, bread, oak tannins, soured bread. Carbonation was lively, but not overly done. Body on the lighter side, slight crisp and refreshing quality.

It's a unique smoked beer, but the oaky sour smokiness is strangely tasty...

definitely one of the strangest beers ive had in a while. smoked over pecan wood, the malt profile of this beer is sweeter than an oak smoke, lighter than the peated smoked beers, and overall just very unique. it pours a sort of drab ugly brown tinted wheat beer color, hazy and pale with an inch or so of white head. the nose is way out there. some in our group thought it smelled and tasted like bandaids, but I did not agree. I smelled a really earthy sweet smoke, almost like a fruit wood, from the pecan, and still quite a bit of sour yeast from the blend. wheat malt, bittering hops, and a complexity that is unrivaled. the beer is quite light and easy to drink, although it is not for the traditional lager drinker, or even the traditional saison drinker, this is entirely unlike anything else around. the funk is intense, the smoke is different, and the hops do their best to bring the thing together, but its an oddity for sure. fantastic carbonation, lighter body, and a lot of attitude. I would expect nothing less from jester king, who is doing some very clever stuff right now. not sure I will seek this out again, but a huge thanks to drlovemd87 for sharing this with us. a beer for the adventurous palate.

Hazy golden orange pour with a thick white head that settles down to a cap. Soapy lacing.

Strong smoky aroma with some lemon yogurt way in the background.

Taste is tart lemon and citrus upfront with lactic acid and smoke following up. Smoke is much more subtle in the taste than in the aroma.

Drying on the palate.

Really enjoyable.
