Notes/Commercial Description:
Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

A - Pours a deep red with a finger of reddish pink head that falls somewhat quickly back into the glass. This is a truly beautiful looking beer.

S - Whoa. Raspberry jam, anyone? One of the best noses of any beer I've had this year. There's just so much fruity aroma coming out of the glass that I can smell it from 2-3 feet away.

T - Jammy jam jams. I honestly thought it would be more sour, but it's really more of a fruit bomb with some moderate acidity and mild tartness. This isn't a sour in the way that Cascade or The Bruery would make a fruited sour; it reminds me much more of something like Rose de Gambrinus, just without that signature Cantillon funk.

M - On the dry side, but nicely offset by the fruit flavor and tartness. Carbonation is spot on for a beer of this style - not over the top, but unquestionably present.

O - This is a really well put together beer, and by far the best thing I've had from Jester King to date. If you like raspberries, this is a must get. Looking forward to future batches as well as future JK coolship projects.

If you like raspberries, and sour ales, look no further. The Atrial Rubicite is the most flavorful and delightfully sour farmhouse ale I've ever had, with a dominant raspberry profile. A truly unique creation that is a pleasure with every sip, with food or without.
