Notes/Commercial Description:
Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

500ml bottle (Blend 2, August 2013) poured into a Lost Abbey teku glass.

A - Pours a beautiful, crystal clear, bright pink/strawberry/raspberry red color with a finger of fizzy pink head that falls to the surface quickly.

S - Fresh raspberries galore from beginning to end. Nice perfumey and floral like aroma, fruity with a very mild tartness and the slightest hint of funk that intensifies as the glass warms a bit to add a nice barnyardy feel to it.

T - Nicely tart up front. Much drier on the palate than the aroma would indicate. Tartness is crisp and medium intensity and backed up by tons of fresh raspberry flavor. Lactic, dry sourness, very mild funk. Tons of raspberry goodness throughout and plays off of the tart/sour aspects extremely well. One of the nicer raspberry wilds I have had.

M - A lightish medium body and medium high carbonation level consisting of very fine bubbles. Very tingly and lively on the tongue. Slightly puckering and definitely causes the mouth to water with the lactic tartness. Pretty standard for style, but nice nonetheless.

O - Very good raspberry wild ale worthy of the attention and hype it is receiving. I could easily drink a lot more of this. Will have to keep this one on my list in hopes of coming across another bottle or two.

If you like raspberries, and sour ales, look no further. The Atrial Rubicite is the most flavorful and delightfully sour farmhouse ale I've ever had, with a dominant raspberry profile. A truly unique creation that is a pleasure with every sip, with food or without.
