Notes/Commercial Description:
Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse yeast, native yeast from the Texas Hill Country, souring bacteria and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned. Atrial Rubicite is our first beer to be packaged exclusively in 500 ml bottles.

A barrel aged beauty of mature sour beer that had several hundred pounds of raspberries added it. It pours a dark ruby color with a little head that disappears quickly. The aroma of raspberry hits you immediately. The taste is initially sour but the tartness of the raspberry quickly overtakes that. It finishes slightly oaky and lightly acidic. It’s almost like a Berliner Weisse w/ raspberry syrup dropped in already. I'm generally not a sour beer fan at all but this brew is good. The vibrant and fruity flavor offsets the sourness very nicely.
