Notes/Commercial Description:
Thomas is the third installment in our "Bearded Farmer" series of saisons. In keeping with the farmhouse brewing tradition, each successive beer is brewed a little (or a lot) differently than the ones before it. Thomas is brewed with pilsner and Munich malts, hopped with New Zealand Wakatu, Motueka, and Pacific Gem hops, and fermented with a single French saison yeast strain.

appearance: Hazy golden. Thick, frothy head.
smell: Yeast, funk and a touch of fruit. Quite dry.
taste: Much like the nose. a tingly bitter finish. Some malt in the taste I didn't get in the nose. Again, quite dry.
overall: Enjoyable, probably won't seek this out again though.

Thanks to umich03jm for splitting the bottle at a recent tasting. Thomas pours a rustic, sunburst color with a highly opaque center and a lighter, semi-translucent outline as it approaches the glass. The beer is largely volatile, producing a massively bubbled, chunky white head that leaves a few nice spots of foamy lacing on its way down towards the bottom.

The bottle says this brew is fermented with a single strain of "French saison yeast". Well, whatever that entails, this yeast is some pretty potent stuff. It comes through very heavily in the aroma; yeasty left and right with huge amounts of bread, clove, orange peel, sweet banana-like esters, and light fruity sweetness. No notable peppercorn in the aroma though the bottles states otherwise - I'm really getting mostly yeast characteristics with a mild onset of floral notes from the hops.

It's a bit funkier on the palate than first indicated from the aroma; cheesy, barnyard funk, still backed up by copious yeast infusions including more clove, bread, and some faint banana sweetness. Some citrus spritz makes its way through the cloudy yeast attacks; namely lemon peels and orange zest. I finally get some peppery notes in the finish, just adding a hint of spiciness to the aftertaste.

The more I drink this, the more it seems to be growing distant from me. It's good, but the heavy hand of the yeast is proving to be more palate wearing than palate rewarding. There isn't quite enough of a balance that shines between the gargantuan sized yeast profile... Normally I'm a fan of yeasty brews, so maybe I'm just not particularly fond of this strain. The mouth feel is pretty heavy and clumpy as a result; thick and carbonated well.

Big thanks to umich03jm for splitting this one (apologies for not remembering his real name... d'oh!) but I don't think I'd travel down this path again. It started off a bit better than it finished, and that was only with a five or six ounce pour; an entire bomber of this would be quite daunting. If there was something else to lay tameness to the yeast, it might work, but it gets a bit cumbersome the way it currently is.

750 mL bottle poured into a snifter.

Appearance - Hazy bright orange. Big white head. Thick collar and very nice surface foam.

Smell - Very grassy. Herbal. Smells almost spiced. Appley esters.

Taste - More herbal. Lots of malt. Kinda bitter. Very herbal in the finish.

Mouthfeel - Medium body. Bitter.

Overall - Eh. Bitter and malty. Really herbal from the hops.

Tap at Grapevine. Hazy goldy-orange pour. Rocky white head, laced the glass a bit.

Aroma, funky stone fruit, light peppercorn. Citrus zest.

Taste, some caramel, stone fruit, tangerine. Some light yeasty funkiness pushes the sweetness away. Finish is nice and dry. Herbal hop bitterness with some hay.

Heavy side of the light scale. May be more of a function of the lower than normal carb present in the mouth. The dryness still keeps it easily drinkable.

Preferred this one to the McCullough. Have not had the Huey.

@ Craftsmen

Hazy yellow topped with a small,fluffy head. Fresh, floral and fruity aromas along with a solid Bretty funk presence, pale malt, and a little citrus. Peppery yeast and citrus peel flavor, bitter hops, straw, and flower petals. Crisp and dry...super drinkable for nearly 8%. Quite nice! I think I could drink a lot of this.

A: into a tulip: deep hazy gold body with a massive head of off-white foam. Ample lacing inside glass.

S: floral, hint of lime; oak and grass; citric and barnyard-y

T: straw and bread and biscuit-like impressions, crisp up front, faintly sweet toward the close, but then dries out; earthy and organic-tasting, but a pilsener flavor equal to the farmhouse flavor.

M: light-bodied, fuzzy with effervescence, bittering finish; crisp throughout

O: Rustic malts and a nice hop blend (Zealand Wakatu, Motueka, and Pacific Gem) = old world meets new world in a very spot-on saison. Recommended.
