Notes/Commercial Description:
Monks’ Wit is distinctly fruity and spicy. The yeast lends a note of spice that accentuates the coriander, orange peel, and other spices. The malt itself provides a sweet, bready quality up front, a round fruitiness in the middle, and the hops and spices together with our pure brewing water, lend a clean, dry finish.

Poured into a Val Dieu chalice glass. Monk's Wit is a quite pale yellow-peach color. The small head the initially formed quickly disappeared but for a slight film. The nose is spot-on: light citrus-peel with a dusting of coriander and lots of fruitiness. Quite decent flavor as well, with plenty of coriander giving a pleasant herbal spiciness. Hop bitterness is higher than some wits, cutting the sweetness. Lots of fruity yeast character.

This is a surprisingly good wit. I hope this brewery can take up a traditional abbey style, and put as much care into it as well.

Served from 12 ounce bottle into tulip pint glass.
Appearance- very on point in regards to most Wit beers- pale golden color with off white foam head.
Aroma- Mild aromas of wheat and spiciness come through the glass but not too overwhelming.
Taste- Coriander and spice notes seem to predominate in the tasting notes of this beer. Wheat notes eventually make their presence along with some tangy citrusy bite in the back end. Reminds me of a Hoeegarden or a stronger version of Great White- both great wit beer offerings.
Overall- Very enjoyable wit beer with an ABV 5.2% that won't scare most session drinkers.

A great Witbier. It's got hints of citrus and spice with a creamy finish. Very refreshing with some complexity brought on by the yeast. A wonderful and refreshing beer. Highly recommended. Good work monks, keep it up!

A: Pours an orangish/yellow color.
S: citrus & lemon.
T: Refreshing creamy citrus and spice.

Good on a hot summer day

A: Pours a pale yellow color. Some head at initially disappates. Sparse spotted lacing on the glass wall.

S: Wheat and citrus & lemon present.

T: Refreshing wheat and citrus flavor. Spicy and dry finish.

M: Light, refreshing and clean throughout.

O: Good for a hot sunny, summer day.

Pours a murky light yellow with a foamy bone colored head that settles to wisps of film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is of malt, grain, wheat, and some subdued yeast and spice aromas. Taste is much the same with earthy, spice flavors on the finish. There is a mild amount of spice bitterness on the palate with each sip. This beer has a good level of carbonation with a crisp mouthfeel. Overall, this is an above average beer that is drinkable but seems unrefined in my opinion.

This tastes like a cross between Coors and a Witbier. Pale golden color with a modest head but persistent carbonation. Faint lemony flavor with a warm malty tang. Not much hint of hoppiness, but there is a scratch of bitterness. A negligible amount of spice flavors.

A light but decent quaff. From the 12 oz six-pack bought at a market in Albuquerque.
