Alex’s bottle. A little cognac flavour, but only ok on the base beer in drinkability. Higher on aroma that didn’t deliver through to taste. Maybe it was good at the release party.

Wow. Nearly perfect appearance; obsidian with a slightly tan head, great retention and foamy lace. Some may want more syrupy cling, but that's not the direction this beer leans. Aroma is orange marmalade of the more bitter variety, baking chocolate, oak, fruity chili (dried, leathery fruit, tropical pulp), hints of sweet baking spices (from spirit one presumes). Really smells and tastes like there's more than just chili in here. Taste follows with a bit of roast that never dominates. Add some charred marshmallow. Barrel is locked and loaded; fully integrated with no spirit / heat. The body is still full, velvety. Scary easy to put down at over 12%.

Imperial stout brewed with chilies and aged on cognac barrels for four months
Drunk right after the base beer

APPEARANCE: A clear black pour yields a 2+ finger, creamy, medium looking, light mocha colored head with great retention. Head slowly fades to a full creamy cap leaving lots of lacing on the top of the glass. A black body with medium levels of carbonation. Slight wisp remains and leaves touches of lacing on the glass as it empties. Same as the base.

SMELL: Roasted malts, lots of dark chocolate, sweet cream and chili notes on the nose. Well balanced with some milk chocolate there as well. There's a touch of cognac and a hint of oak there as well, tapering the chilies compared to the base beer. Bold and really nice.

TASTE: Very much the same as the base with a touch of cognac through the middle and some oak at the swallow. The chilies are more subdued but they're still there. Milk chocolate and sweet cream up front with roasted notes, oak and cognac into the swallow. Bold and lingering finish of pure chocolate, sweet cream, roasted notes, cognac barrel and a bit of chili flavor as well.

PALATE: Very nice here. A definite improvement on the base. Medium body and medium carbonation. Very creamy on the palate, not foamy like the regular version, goes down smooth and finishes a bit sticky. The chili is replaced with light cognac barrel notes lingering on the palate.

OVERALL: This is a big improvement on the base beer. The feel is much improved, as it's smoother, less foamy and the heat is balanced by the cognac barrels. The barrel aging is certainly mild here, not being nearly as pronounced as a lot of other barrel aged beers, but if you can appreciate nuance, this is definitely a class act. Really enjoyed this and appreciated how all the layers worked well together. Highly recommended.

As much as I like the heavy hitters, I also like the nuanced. This is a prime example of the latter. I can't taste the chilis outright, but believe I'd notice them if they were missing. The body is divine; so velvety. This beer is a true pleasure to drink

Aroma roastiness, spice, dark fruits, cocoa, faint coffee, vanilla, & cognac. Taste chocolate, oak, vanilla, cognac, chili, licorice, ABV. Excellent!

375ml bottle poured into a To Øl teku glass. Enjoyed on 9.9.14, reviewed from tasting journal.

The beer pours a deep jet black color, thick, viscous and oily with some cola brown hues and a nice, thick, foamy khaki head that has nice retention and yields a fair amount of spotted lace. The aroma is quite nice, lots of chocolate, oak, stone fruit, cognac sweetness with some mild chili pepper heat and a touch of candi sugar. The flavors are massive, really rich and decadent, bittersweet bakers chocolate, light marshmallow fluff, cognac, brown sugar, oak, vanilla with just a hint of warmth from the peppers that also brings out a bit of stone fruits. The mouthfeel is perfection, thick, rich, coating, gentle, silky, incredibly smooth and mellow, low carbonation that is just present enough to give life to the beer.


Verdict: An absolutely delicious beer from To Øl, and one of the finest beers I've tried that showcases chili peppers. Wonderfully complex and incredibly delicious, balanced so well, definitely a true gem.

Served alongside the standard version.

Near black body with a thin beige cap. Aromas of roast, chocolate, sweet booze (cognac). Similar to the standard version. Spice character is a bit overwhelmed by the presence of the cognac barrel. Still, rich chocolate cake with a touch of smoke and char. Good stuff.
