01/20/13 From bottle at home. "No sugar left" is an understatement. Looks like it's all been converted to the ABV, 10.5. Downright sour, if you ask me. Interesting but once is enough.

Lemony tart funky barnyard nose with some fruit notes over bready malt
Pours hazy amber under a rich, moussey 2" light tan tinted foam cap that slowly descends to a thick film. lacy.
Palate: Has the gold, rich Imperial/Double IPA malt and the big Belgian style wild yeasts – tastes mostly like lacto with the Brett just starting up. The hops are not big for an Imperial IPA but they are big fro a Belgian and they provide an interesting bitter accent on the end that balances the lemony tartness Some butter-toffee notes in the background.
A rich finely bubbled soft carbonation only possible with wild yeasts and bacterial supports a lusciously creamy medium body. A big, bold, tart and refreshing beer.

Tasty. Nice smooth taste. Doesn't taste nearly as strong as it is

11.2 oz bottle into a pint glass. This one will be interesting: it's not fresh as an DIPA (at all, really...), but that also means the wild yeast will have developed some.

Appearance: Pours a murky copper color with a large amount of sediment floating around. The head is a finger high and barely off-white in shade. Retention isn't that good, but the texture is nice and sticky - ergo, it leaves behind nice streaks of lacing on the glass. (2.75)

Smell: At the first whiff, it smells like an aged DIPA, featuring a lot of caramel malt and subdued hoppiness. But then something strange happens. The wild yeast comes out to play, bringing both earthy funk and some phenolic fruitiness. If I really focus, I can still pick up some of the citrusy hops coming through. Whatever the case, this one is going to be damn interesting... (3.25)

Taste: It opens up with a strong, caramel-laden sweetness to it. There's a definite candied hop note floating around, as well, and even some vanilla. The brett takes on a fruity, phenolic note near the back end. Considering how dryly it was brewed (no residual sugar, allegedly), it's not as alcoholic as it could have been. Still, it does have a palpable booziness on the back end. At first, I wonder where the brett is hiding, but further sips reveal that it's just melding well with the malt/hop combination. This one is really unfolding as I drink it - after many sips, I'm picking up some SMOKY notes. Wha? This is such a strange beer, but not really that cohesive, either. Even still, this is something to be respected. (3.75)

Mouthfeel: Light and dry for 10.5%. Actually, it's only dry on the immediate back end - due to the age, I'd even call it sweet. Throughout, it gently reminds me of its strength, but its light body means it goes down with relative ease. Having said that, it's almost entirely a sipping beer with mild carbonation. (3.5)

Overall: This beer is crazy. It's complex like Orval, but also very much like a(n aged) DIPA with its sweetness. Basically, the old DIPA bottle actually paid off. If you've got some old bottles of this lying around, drink it. It's still really good, just not very hoppy. (3.75)

3.58/5: Light on the DIPA, but high on the nucking futs

To Øl is danish for two bothers (which is a sick name btw), and was induced from conversations with Mikkeller (note this is not a Mikkeler beer, as I thought it was - the similar packaging and mikkeller imprint distracted me). Ov-Ral is the breweries first release (co-brewed with Mikkeller).

Like Mikkeller and Evil Twin, To Øl is a gypsy brewery. Ov-Ral was brewed at De Proef Brouwerli, Belgium, and is appropriately a Belgium IPA of high quality. The nose is strong malt and the taste is complex but resinous sweet in flavor.

Overall, this beer is excellent, though at $6.0, I could opt for a cheaper DIIPA with similar flavors (sixpoint's resin). Should I want strong malt character and complex flavors with strong body, I would consult Ov-Ral.
