375ml bottle poured into a To Øl Teku

The beer pours a deep jet black color, intensely opaque with a thick, tightly packed khaki colored head that has very good retention and leaves a bit of spotted lace behind. The aroma is of roasted grain, molasses, light licorice, bourbony oak, a bit of peat with some rubbing alcohol. It's simple, straightforward, but a bit uninspired and boring. The flavors are of heavily roasted dark grain, licorice, oak, light bourbon, touch of stone fruit and a bit of peat is present on the tongue too. The body is a bit thin, quite lively and active for a bourbon barrel stout, coats the mouth moderately well, but this is by no means silky, rich or terribly smooth. The finish is a bit creamy and soft, but still a bit prickly.

Verdict: A bit of a miss from these two breweries, both of whom have made some beer I really admire. I was hoping for this to have many qualities found in To Øl's Goliat, but it was substantially thinner and less impressive all around. While it is very drinkable and not over the top, it's a far cry from many of the world class bourbon barrel stouts being made these days.

Pours inky black in color with deep tan head that held fairly well before fading into a medium collar and wispy head. Aroma is mostly deeply roasted malts, some sweetness either from the bourbon barrels or the honey, oddly indistinct sweetness. I also get some dark fruits in the aroma. Taste is about the same, with some toasted oats coming through. Good full body, silty mouthfeel, and low carbonation.

Poured into a Reuben's Brew snifter. Pours pitch black, opaque in the glass with a thin light brown head that dissipates to a ring around the glass, leaving light lacing. Nice aroma of bourbon, dark toasted malt and chocolate. Flavor of toasted, lightly charred malt, cooked caramel, light chocolate and hints of coffee. Finish is roasty, lightly charred with some lingering hop bitterness. Medium to heavy bodied. A well made roasty, hopped imperial stout with an interesting mild caramel candy flavor hidden in the malt. The finish is a bit harsh at first, but mellows out as the glass is emptied. The bourbon is sadly not as prominent in the taste as in the aroma, but adds a little character to the overall dark flavor.

A: The beer is jet black in color. It poured with a thin tan head that quickly died down and left patches of bubbles on the surface along with a thin collar of bubbles around the edge of the glass.
S: Light to moderate aromas of dark and sweet malts are present in the nose.
T: Similar to the smell, the taste has flavors of dark malts and a light amount of sweetness.
M: It feels medium- to full-bodied on the palate and has.a moderate amount of carbonation.
O: This beer isn't that difficult to drink considering its strength because it manages to hides its alcohol rather well.

Corked and caged 375mL (12.7oz) bottle from Sprayberry Bottle Shop (Marietta, GA). 11.99. No bottling date. Served in a Three Floyds teku.

Pours cola black with a finger and a half light mocha hued head. Very little retention and very little lace.

Aromas of roast malts, dark cocoa, caramel and barrel. Sweetens nicely as it warms up.

Nice bold, roasty flavors. Bitter dark chocolate, sweet bourbon, roasted malt, burnt caramel, coffee, light vanilla, faint honey and a little booze. A pretty solid blend of flavors that keeps the alcohol in check.

Oily medium thick feel with light carbonation. Bitter cocoa and mild bourbon finish.

A well made and enjoyable stout. Not quite as complex as anticipated and priced just beyond repeat purchase but it was certainly worth the try.

375ml green bottle with cork and cage poured into a gold-rimmed half acre snifter.

Pours a smoky looking black with a big illustrious dark khaki head with great retention and lacing, very nice pour.

Smells of chocolate, charred wood, coffee, tobacco, roasted malts, and toffee.

Taste is bitter and smokey, with some chocolate, a touch of honey sweetness, some toffee, but tastes surprisingly thin and watery throughout. I don't get much bourbon or barrel character.

Mouth is low carbonation and medium bodied, would've preferred a thicker feel. Sticky finish.

Overall, this clocked in at almost $1/oz and for the taste I don't think it's worth the price of admission. Interesting to try this honey bourbon barrel stout, but all three of those notes were not pronounced enough to carry this beer.

Bottle to snifter.

Pours nearly black with amber hues on edges. A healthy fine bubble amber head slowly returned to a frothy rim and slight film. The smell is tons of bourbon and dark roasted malts. This beer is very fragrant and volatile. Im not getting much oak in the nose but oak and tannins certainly come through in the taste. The strong bourbon smell is muted in the taste, giving way to roasted malts and a little coffee and coco. Minor notes of marshmallows, vanilla, and pecans are present. This ale is full bodied with moderate carbonation and low viscosity. Not bad. If you highly enjoy ba stouts then you should try this. I would likely pass next time but I enjoyed this. It doesn't come close to the big boys of ba stouts produced in the states.

37.5cl green glass (ugh...) bottle with black-foiled over hood and wire cap (aka cage) over a cork acquired at a local SoCal beer store earlier tonight for $16.00 USD and served into a Mitchells of Lancaster flared stem-tulip in me gaff in low altitude Los Feliz, Los Angeles, California. Reviewed live. Expectations are high, I'm really in the mood for an "Imperial Stout Brewed with Honey and Aged in Bourbon Barrels." I dig the stylish label art. 11.2% ABV confirmed. Imported by the Shelton Bastards.

Served cold, straight from my freezer, and allowed to warm over the course of consumption. Side-poured with standard vigor as no carbonation issues are anticipated. Not paired with food.

Yields an unsatisfying "plip" upon removal of the cork; carbonation seems very under-cooked. I'm worried.

As I poured, undercarbonation became obvious and no head was forming, so I increased vigor substantially.

A: Pours a 1.5 finger height head of nice dark tan colour. Great cream and thickness. Good (~4+ minute) retention for the high ABV. No bubble show. Light thin inconsistent lacing as the head recedes. Fairly soft complexion.

Body colour is a dark opaque solid black. Not quite a jet black, but dark. No yeast particles are visible.

Overall, it looks pretty good but far from ideal. It's spot-on for the style and I'm looking forward to trying it, but there's definite room for improvement.

Sm: Evident barrel/wood notes; mellow oak with a touch of vanilla - which comes off slightly artificial as though from vanillicin as opposed to actual vanilla beans. I do get honey, which mellows and balances the aroma nicely; this is an impressive aspect for sure. Not strictly bourbon-y; there are the aforementioned oak and vanilla notes but they don't come off distinctly like bourbon (barrel). I'm a bit let down by this. Dark malts. No yeast character or alcohol comes through. Some buried roast. Coffee and accompanying roast. Cream.

As it warms, the vanilla is bothering me more and more, standing out as artificial and contrived. It kind of clashes with the natural cohesiveness of the rest of the aroma. I hope this doesn't manifest in the flavour profile.

Subtly executed. Above average in strength.

T/Mf: Damn, the vanilla sweetness does clash with the rest of the flavour profile. It hits from the open and doesn't die until the climax. Body is your usual chocolate and dark malt combination, complete with a disappointing lack of roastiness. Some cream. Chocolate is lacking; it's sort of a vague unevocative milk chocolate that leaves you wanting more. Not particularly rich. Not getting any oats. The honey aids its cohesiveness but adds a bit too much smoothness, reducing the efficacy of flavour delivery. Flavour duration is average for the style. Flavour intensity is below average for the style. I'm having trouble finding any coffee notes.

I don't get distinct bourbon, but the artificial vanilla is present. Oak is much more buried and lends little to the beer in terms of flavour. Maybe it acts as a guiding undertone, but the honey obscures it.

I don't get yeasty character, oats, notable hop character, smokiness, or wood. Alcohol is quite well hidden, but does poke through somewhat. I like the beer, but it leaves a lot to be desired in terms of complexity, subtlety, and to a lesser degree, balance.

Mf: Smooth and wet. Too smooth, shortening the duration of flavour and restraining depth and delivery of flavour. In this sense, the presence on the palate is troublesome and distanced. I don't feel like the full depth of flavour is presented by the texture. Lightly silky, which isn't appropriate for the type of imperial stout this is. Good body and thickness. Good carbonation. Suits the style fairly well, but it's far from custom-tailored to its flavour profile. It almost feels like an imperial oatmeal stout in its unnatural smoothnesss; I'm not convinced honey was the best choice here.

Dr: Quite drinkable for its high ABV, no doubt about that. It's an approachable enjoyable beer in the style, and obvious care was put into it. But the barrel notes don't come off as evocative, and I'm not sure the base beer benefits all that much from the decision to barrel-age. The vanilla is flawed. I do like it, but I definitely wouldn't get it again at this price point. Interesting stuff with some nice elements, but it never comes off truly great. I'll enjoy finishing it, but I doubt I'll remember it a fortnight from now. Glad I tried it once, but wish it was $10 or less. Of course, we have the Shelton Bastards to blame for the pricetag (and price never affects my reviews). A nice stab at the style, but it needs work to elevate it.

Appearance – Pitch black, somewhat syrupy with a dark chocolaty foamy head. Very nice lacing initially, then the lacing is almost non existent as the head fades.

Smell – Malty, with honey and molasses.

Taste – Malty with a slight bitterness offset by honey.

Mouthfeel – This beer felt a bit watery; I think this style needs a little more alcohol and carbonation. Easy to drink, without much aftertaste.

Drinkability – Easy drinking for 11.2%abv, but I think it needs more alcohol/carbonation.

The colour is black (120 EBC), the low compact head is bown (good retention). Lots of thick lacing on the glass.

The smell is hoppy and rather bitter. The roasted notes are lighter than expected. Dried apricots, prunes and a touch of raisins. Sweet notes of caramel and molasses. Some alcohol in the background.

The taste is warming with notable clean alcohol flavours. Roasted, salty flavours makes me think of salt liquorice. Apricots, raisins and molasses. Hints of Christmas spices and milk chocolate. Full body. The aftertaste got growing alcohol flavours, salt liquorice, bitter herbs, some grassy hops and a strong clean bitter flavour. The finish is quite short, leaving just some alcohol in the mouth.

The carbonation is quite strong, a bit stronger than I think is appropriate for the style. Lots of small lager-like bubbles. The liquid is medium smooth and a little dry.

My expectations on imperial stouts are high, even more so when it comes from Omnipollo and To Øl. This one is a bit too straggly with too obvious alcohol.

Poured from a 375mL bottle into a brandy snifter.

A: Full finger of mocha head tops a completely opaque black head.

S: Fruit and booze and fruit and chocolate. What a scent! Vanilla and plum.

T: A boozy, bourbon-y, sort of stout. Lighter and sweeter than expected. More than a hint of fruit (tart and earthy). Vanilla. Has the oak added complexity here? It's hard to tell.

M: How luxurious! How smooth, how ensorcelling, how superlative. The honey adds the requisite weight.

O: An incredible imperial stout from a pair of incredible breweries. Highly recommended. Would have again.

Picked up at Julio's a while back. Poured into my Duvel tulip.

A - Pours a nice deep dark brown almost black with a thin quarter inch mocha head that fades to leave a thin thin blanket. Not much for lacing, but, solid for ABV.

S - Aroma is fairly week not much chocolate (actually none), some nice honey sweetness and faint barrel. Solid amount of alcohol too.

T - Taste is slightly acrid/bitter. Not much chocolate, some roasted malts, coffee, honey sweetness, bourbon heat. Really could use some chocolate to round things out here.

M - Mouthfeel is pretty solid. Creamy and silky, not much booze. Quite nice actually.

O - Overall, this had potential to be pretty good. Its not though. Its okay, the honey and bourbon and roast work nicely with the coffee. At the price though I would like more bang for the buck. At a dollar an ounce or so I expected MUCH more.

Bottle. Aroma is chocolate, booze, oak, and faint herbal hops. Appearance is black with a thin tan head. Good lacing. Taste is roasted barley, burnt toast, honey, oak, and booze. Full body with low carbonation. Overall rich, complex, and very good. A little warm so some ageing might be good.

A: Black with a mocha head.

S: Vanilla, coffee, chocolate, oak, plum, dark fruit in the nose.

T: Dark fruit slightly tight fruit come out first, followed by oak, vanilla, chocolate and coffee.

M: Full bodied and smooth.

O: So much better than the ratings on BA would have one suspect. Well worth the price tag if you can get your hands on it.

On-tap at Northdown. Served in a snifter.

A - Dark tan foam settles to a partial cap and splotchy lacework. Pitch black body.

S - Somewhat boozy, with loads of bourbon and even some overt alcohol presence. Base beer is your typical Danish stout, with loads of char, anise, and roasted malts. Thankfully the honey and oaky vanilla help to balance things. Solid, albeit slightly rough.

T - The taste isn't quite similar, with loads of bourbon and oak over top of a very charred and acrid Scandinavian stout full of burnt malts, smoke, and espresso bitterness. Honey is still there, but the sweetness dissipates well before the finish. Alcohol is again present and lingers.

M - Smooth medium body, dry and oaky finish. Light alcohol warming and a bit thin for 12%. Carbonation is a bit higher than expected, but not unpleasant.

D - It's a very typical barrel-aged Danish stout. Decent enough, but I'm glad I didn't spring for a bottle at the $14. Drinking an entire 375ml bottle would result in serious palate fatigue due to the char and booze.

I never mention bitterness in my reviews, my bitterness taste buds are ridiculously under-
sensitive.

APPEARANCE : Pitch black on pour with dark brown hue. Head is mocha, more than medium sized on pour, goes back down at a leisurely pace leaving some tough looking lacing.

SMELL : First nose is coffee, chocolate and some smoke with a herbal hop side. Second nose pushes the hop profile aside and really amplifies on the mocha chocolate side. Some honey starts to come out. Third nose is all about the honey : black roasted honey. Very nice twist on the too often same-as-usual approach on the stout style.

TASTE : This stuff shines on the palate. The flavours are full and well layered : most of the roasted-malt-related tastes are toned down, giving much of the room to the wild honey and the bourbon barrel. Very well done.

MOUTHFEEL : Thick but not overpowering. Definitely what I want in this kind of stout. The carbonation makes everything easier to handle. I'm a big fan of this almost-syrupy texture in stouts and this brew nails it hands down.

OVERALL : Another very fine product from To Øl. Kudos as well to Omnipollo. I've got a case of 12 of these bad boys and damn am I glad I do. This is seriously good stuff. I don't understand the 86% rating this brew got. Since it's only stated in Danish on the bottle, maybe not everyone was aware that this was brewed with wild honey and aged in bourbon barrels? The honey side is definitely an interesting side of this brew. I'm really digging this.

a - poured a one finger thick creamy, coffee-colored head into a snifter. the body was black with brown edges.
s - bitter coffee with a hint of chocolate.
t - roasted coffee, dark fruits, bitter finish.
m - creamy and medium mouthfeel.
o - this beer had some nice characteristics to it and probably the best omnipollo i've had but it didn't wow me in any way.
