A really good, really simple, true imperial stout. Enjoyed at Tørst in NY from a tap into a wine glass.

A - Near-black, but it was a dimly-lit bar. A finger of unbroken tan-colored head. Decent lacing

S - Minerals/dirt, and that wake-up-to-fresh-pot-of-coffee smell. Hint of molasses and dark, ripe fruit. That typical stout/porter smell. Almost no creamy or vanilla smell to it.

T - REALLLY black coffee. Almost makes your face curl with the strong coffee taste. It settles nicely into a smooth baker's chocolate/cacao. Lacks any smooth vanilla or milk chocolate - almost 0 sweetness.

M - Stung a little at first, but finished nicely toward the back of the mouth. Leaves a slight coat.

O - This is a great benchmark stout. A truly simple, imperial, strong stout. No fancy flavoring, just a damn tasty beer that is just beer.

And now for the dark half ... Or side. Whatever. After the boozy bitterness of Yang, this is a welcome foray into the world of roasted smoky malts, well-rounded sweetness, and an ABV that is near-perfectly concealed. Perhaps this very contrast is why this tandem is supposed to form the ultimate black and tan. I shall have to try this melding. For now, Yin alone features what might be the darkest head I've ever seen on a beer to date, a cacao brown rich froth that starts large and looming but quickly tones down. We get an opaque brownish black brew releasing a potent aroma of dark chocolate, espresso roast coffee, and a subtle dark fruit (raisin) top note. Well-attenuated semi-thin and ultra smooth mouthfeel like Yang, the palate features the same elements as the nose but with an added smokiness that becomes more pronounced in the dryish roasted finish. Fairly tame carbonation. Emergent grape juice, licorice drop, and caramel flavors build along with the smoke, and its only near the end of a tulip glass that the booze starts to twinkle through. I appreciate more of a syrupy mouthfeel in these high caliber stouts but by and large this hits the sweet spot.

A: Very opaque. Seems to be a dark black color, but tasting in a dimmer room, so it's hard to tell the exact color. Dark tan head, about 1/2 finger. dissipates somewhat quickly. Almost no lacing.

S: Somewhat boozy, but not overwhelming. Woody, smokey.

T: Cold: Smokey/Sweet. Light malts with some smoked wood flavors coming through. Warm: Fresh espresso bean and subtle fruitiness accompany a high percentage dark chocolate (Think ~92%) flavor lingering on the palate. The dark chocolate flavor builds up while the espresso flavor remains as I drink, a pleasing booziness breaks through, reminiscent of a well crafted bourbon. It warms extremely well. Actually, I would almost rather drink the entire drink at room temperature.

M: In between, leaning more toward the viscous end. Ideal carbonation. Lingers on palate to modify the pleasant aftertaste.

O: While the smell is not extremely complex, that is the least important factor in my opinion. This is a fantastic Imperial Stout-- my first experience with Evil Twin, and it definitely lives up to my expectations. You need to try this if you haven't. It's one of the best I've had.
