Also Known As: Ettaler Curator Historic Recipe

From one of the last authentic German monastic breweries Klosterbrauerei Ettal, Bavaria comes its famous Doppelbock Curator. As over the past years many of the classic bottom-fermenting Doppelbocks have been "adjusted" to make them "easier to drink", we have begged the monastery to re-brew for our U.S. customers its authentic recipe which was created in the years after 1330 when the monastery was established.

While its "everyday home version" is about 7% ABV, its historic brew goes back up to over 9%!

Served in a clear pint glass after being drawn from a tap. It's auburn-amber, opaque, yet bright, almost shiny. There's a very modest khaki head. It's not pungent, but roasted malts can certainly be caught. Then, there's even more to taste. With a velvety smooth body, and another nice layer of flavorful, but not too bitter hops. This is the original 9% ABV version, and it's barely noticeable, just another contribution to the overall taste. It may not have much glass lacing, but that's a tiny complaint and the only one. OK, maybe the bouquet isn't exactly pronounced. Everything else is excellent for the style.

Pours clear, copper in color with one inch head. Taste is pumpernickel, wheat bread and cereal. Medium heavy body, slightly sweet, roasty, moderate carbonation. Excellent brew. A bit more roasty than expected but different and good.

Aroma has nice caramel malt hints

Dark reddish brown, clear, minimal khaki head.
Smells like desert. Almost like coffee cake, brown sugar, raisin bread.
Lot of stuff going on in the flavor. Very smooth, the sweetness is perfectly balanced, I detect roasted malt, burnt sugar, some slight chocolate, no discernible hop flavor.
The abv is very well hidden, you only notice some warmth in your chest after you’ve had a few swallows. There’s a slight sourness or tartness to it that is kind of a turn off for me. It’s very well made and super easy to drink.

From the tall boy can in a snifter. This solid doppelbock pours a dark chill hazed
brownish mahogany with a nice head of khaki foam that fades to a thick ring, thin
clumping layer, and sports some nice lacing. Nose of dark brown sugars, raisin, fig,
dark cherry, and dark breaded notes. Flavors nail it with dark raisin and date bread,
subtle rye, light chocolate, dark sweet cherry, and loads of dark brown sugars with
subtle zesty hops on the rear. Mouth feel is medium, light carbonation, smooth,
and warming with a medium dry finish.

Overall----a solid brew from a historic brewery!

Dark mahogany body, clear in the pour, opaque in the glass; fairly thick head, light khaki. Deep caramel note infused with notes of dark pitted fruits; roasted grain. Rich malt flavor; figs and raisins; light phenol bitterness; molasses. Heavy body; velvety; alcohol dryness tempers the inherent sweetness.

A nice doppelbock approaching the higher end of ABV levels, but delivering a nice balanced flavor and fairly easy drinking experience.

Look: A deep, clear brown with a red tinge to it. Tan head that forms low and quickly dissipates with mild lacing.

Smell: Classic to the style. Toasted dark breads with molasses, plum and raisin notes. The slightest hint of alcohol in this one.

Taste: Dark breads immediately followed by sweet malt and just a bit of lingering toasted grain at the end of it. Almost no bitterness to speak of and a reappearance of molasses that I usually associate with Demerara rum.

Feel: Smooth and easy drinking with a moderate-heavy body, light carbonation. That said, it does almost feel thin at the end but the flavor makes up for what it lacks in that department.

Overall: An ok doppelbock, on par with the other average Bavarian versions but a tick below the truly upper echelon takes on the style.

Slightly sweet doppelbock, dark brown/ruby with thin silky beige head. Aroma is mostly roast grains with a hint of molasses. Taste has the sweetness come on full bore, with dark grains sharing the palate. Sweet nature hides the high ABV. This is a real gem.
