This is another great gastropub/high end burger bar that has opened up in Las Vegas along with The Burger Bar and Todd English Pub, two of my favorites. It's in the new Cosmopolitan Hotel and has a nice open atmosphere with an adequate size bar and (I believe) three dining rooms.

Beer selection was quite good, including a lot of locals as well as beers from the east and west. There were two New Belgians I had never seen, a number of California favorites and a separate can list. The canned beers are served in riesling (mini-duvel) glasses. The staff is knowledgable about beer and have tired everything on the menu.

Although I didn't eat there, they had many delicious looking items such as their take on mac and cheese, numerous high end burgers and many unique appetizers. I tried to go back for dinner but Vegas took over and I couldn't make it back.

I would recommend going to this place and then venturing next door to the Aria and also checking out Todd English.

I went back the next year and had food there. It was awesome. Very inventive and decadent. Burger with brisket and bbq sauce, philly cheese steak egg rolls, lobster mac and cheese. Amazing.

Been here twice in the past few months. Came away with a positive vibe each time.

Holsteins has a good tap selection, but are still catering to the C.M.B. drinker who is experimenting, rather than to actual craft beer afficionadoes. A few things on tap were worth trying each time, but nothing was the big, offensive flavor monster i was looking for.

Atmosphere - good. Steakhouse meets hooters. Nothing wrong with that. Lots of dudes, which is odd for Cosmo.

Service - very good. Bartenders know their stuff and can keep up a conversation.

Food - pretty good. Very fast delivery, but it all tasted fresh. Mostly a burger n fries joint. Had the beef n bbq burger. Pretty awesome.

Selection - nice selection, but still very safe. Lots of inoffensive selections - mild ales, lagers, pilsners, etc. theres room for a DIPA or two, or a little sumpthin wild, or a barley wine, but no, we get safe selections to keep the tourists happy.

Value: Its in the Cosmo. In Vegas. A burger n fries with two pints was $37 with tax. Par for the strip, but much better quality than most.

Stopped here while walking through the Cosmopolitan. Easy to find on the second floor especially with the big cow in the middle of the place. Very bright interior with lighter wood tones, and there was a very large bar here with some comfortable sofa/chair seating just off the bar. The main dining room is in the back. Despite the clean and comfortable decor, they were blasting crappy dance music which for me is nauseating.

The beer list was good, but not great. Beers like Anchor Steam, Firestone Pale, Tenaya Creek Hop Ride IPA, Indian Wells Mohave Red, and Ommegang Abbey Ale were among the usual Stella, Guiness, Newcastle beers you can find anywhere. The beers I had were fresh.

The burgers here are also good but overtly expensive like the beers. But this is the LV Strip.

Personally this was a decent beer stop on the strip, but the music would probably keep me away in the future.
