One of the better options for a good beer on the strip. Obvious warnings about prices, you'll pay dearly for that quality IPA.

The selection tends to be solid with several local options, as well as several of the more notable national craft brands (think Dogfish, Sierra Nevada, et al).

The food is good but fairly forgettable given how much good food you can get on the strip, and even within the same area at the cosmo. Get your beers here, and food across the way at the "food trucks".

Still one of my Vegas strip favorites. I'm a huge hop-head and they were featuring several top notch IPA's during my visit including Alpine Duet. Try the Nom Nom burger with Kobe Beef, 1000 Island Dressing, and Potato Chips on a Wheat Bun. It can get a little crowded at night, so you might want to hit this place up for a great lunch.

On the 2nd floor at Cosmopolitan this glorious burger and shake restaurant is a sneaky good beer bar as well. I always sit at the bar or in the lounge area.
They have a number of rotating taps from deschuetes, dogfish head, stone, and a mix of smaller breweries as well. I had a fresh squeezed IPA with my longhorn burger my last trip to Vegas.....and it was excellent. I always go here when I am in town

You come here for the vibe and the food, not the beer, but overall the beer selection was great for a non-beer focused spot on the strip. Food is excellent, as was the service.

I have been staying at the Cosmopolitan since it opened and it clearly is my favorite hotel on the Las Vegas strip these days. I had meant to try out Holsteins on a few occasions but I just hadn't been in the mood for a burger until my recent trip over Halloween 2014. Its on the second floor and relatively easy to find. I didn't want to spend too much time there so I sat at the bar. Nice decor and friendly service. Beer selection was great but I don't remember all the offerings. pretty sure I had Mamas yella pils. Refer to their website for a comprehensive list. Burgers were top notch but a bit expensive. When you get down to it, nothing is inexpensive at the Cosmopolitan other than a comped drink for gambling and it still isn't quite free- as a tip is basically required. I would definitely try Holsteins again when in the Cosmo and in the mood for a burger. The milkshakes they had also looked really good but I was too full after the burger to order one.

Been here twice in the past few months. Came away with a positive vibe each time.

Holsteins has a good tap selection, but are still catering to the C.M.B. drinker who is experimenting, rather than to actual craft beer afficionadoes. A few things on tap were worth trying each time, but nothing was the big, offensive flavor monster i was looking for.

Atmosphere - good. Steakhouse meets hooters. Nothing wrong with that. Lots of dudes, which is odd for Cosmo.

Service - very good. Bartenders know their stuff and can keep up a conversation.

Food - pretty good. Very fast delivery, but it all tasted fresh. Mostly a burger n fries joint. Had the beef n bbq burger. Pretty awesome.

Selection - nice selection, but still very safe. Lots of inoffensive selections - mild ales, lagers, pilsners, etc. theres room for a DIPA or two, or a little sumpthin wild, or a barley wine, but no, we get safe selections to keep the tourists happy.

Value: Its in the Cosmo. In Vegas. A burger n fries with two pints was $37 with tax. Par for the strip, but much better quality than most.

Stopped here while walking through the Cosmopolitan. Easy to find on the second floor especially with the big cow in the middle of the place. Very bright interior with lighter wood tones, and there was a very large bar here with some comfortable sofa/chair seating just off the bar. The main dining room is in the back. Despite the clean and comfortable decor, they were blasting crappy dance music which for me is nauseating.

The beer list was good, but not great. Beers like Anchor Steam, Firestone Pale, Tenaya Creek Hop Ride IPA, Indian Wells Mohave Red, and Ommegang Abbey Ale were among the usual Stella, Guiness, Newcastle beers you can find anywhere. The beers I had were fresh.

The burgers here are also good but overtly expensive like the beers. But this is the LV Strip.

Personally this was a decent beer stop on the strip, but the music would probably keep me away in the future.

Pretty cool place that’s much closer to the heart of the strip than the other beer-centric spots in and around LV.
Holstein’s is located on the 2nd floor of the Cosmopolitan, which is conveniently right in the middle of the strip. If you’re in a hotel like the Aria, Bellagio, Ceasar’s, etc. you’ll find it to be a pretty easy to reach spot.
Their menu consists of standard-fare bar food (burgers, appetizers, fried things) as well as a gourmet milk-shake menu. The shakes are really good and the food looked/smelled nice although admittedly I had already eaten when I arrived. I imagine I’ll likely end up eating there at some point, though.
For beers – they have quite a few. Roughly 20 drafts ranging from Franziskaner to Firestone Walker and the Bruery. Additionally they have a 3 page beer menu with an additional 50-60 bottled items. I didn’t see too many overtly rare items, but there were plenty of atypical bottles. They had numerous imports (Granitbock, Old Engine Oil, Hen’s Tooth, Monteith’s) that you certainly don’t see every day. I think the casual drinker who likes “conversion” crafts and even pretty serious geeks would both be at home here.
There has to be a rub, right? Kind of. Like lots of places in Las Vegas, prices are steep. Admittedly, it’s a town where people drop hundreds at the drop of a hat…but don’t expect any bargains. Draft pints ranged from $8-10 for normal items and bottles were in the same neighborhood. I didn't see anything under $6, macro bottles included. The similarly structured Burger Bar is a bit cheaper across the board, although Holstein’s might equal them with a wider variety of food and nearly as many bottles.
Atmosphere is a little loud, although I did arrive just as the club across the hall was opening. Once they did, about ½ the people in Holstein’s bailed, so I’d guess it’s a popular pre-club spot if that’s your thing. As a late night spot in itself, you're not going to hear much of anything. The staff was good, though.
Honestly, I was pretty happy and will definitely go back. In Vegas I tend to try to eat well (mainly because you can) and look for a good place for beers and snacks to fill the role most nicer restaurants lack. Holstein’s does that nicely, plus it’s not far from most of the major resorts. Recommended…as long as you aren’t broke!

EDIT: The food is pretty good, but man...those prices are steep. Shlenkerla Marzen is a whopping $15.50!

Holsteins Shakes and Buns is another burgercentric restaurant on the Vegas strip, located in the Cosmopolitan Hotel. The surroundings are hip and modern, as is the casino/hotel it sits within. It's a mostly open space, not too dark, not too light. Noise level is quiet enough to allow conversation, but loud enough to not hear everything your neighboring table is saying.

I'd call the service professional. It was orderly, and quick. It was closer to fine dining than neighborhood pub.

The main attraction is the burgers. I had the hen house burger(beef patty topped with bacon and fried egg)with a side of steak fries. It was a top-notch burger; buns, egg and toppings all were great. The fries were just okay. We also split a couple apps: pizza twinkies and philly cheesesteak rolls. The twinkies were somewhere between pizza, corndog, and mozzerella sticks. Fun, tasty start to our meal.

Holsteins has about twenty beers on draught. The list contained a fair balance of german imports, english ale, belgian specialties, and west coast beers. I had an IPA from Tenaya Creek with my meal. It's good to see a local on the list.

By Vegas strip standards, this meal was reasonably priced. There are enough non-burger options to keep those who don't eat beef happy. They serve some fun, and interesting appetizers. The beer list is solid, and for those who don't care for beer, the cocktails and shakes looked good.

I was at Bellagio and decided that I would make the short walk to the Cosmopolitan .There are two food items that I had been hearing about, yes I know this is BA, and I wanted to try them.The hotel itself is very impressive, I have no business dealings anywhere in City Center so this was my first time here.Holsteins has a comfortable atmosphere and it was not busy at six pm. Service was spotty at best. The beer selection is not huge but impressive, the first thing I spotted was Genesee Cream Ale, I am originally from the Northeast so I grew up on this beer. But I managed to control myself and tried a Sweetgrass APA, first time for this one and it was to sweet for me.Next I tried a Shiner Bock on draft, first time I ever had this on tap and as with so many it tastes different in a good way. The food item was the Truffle Lobster mac and cheese, outstanding!!
The other food item was in the restaurant called The Henry which is their coffee shop, it was a crab and truffle deviled egg with caviar, again outstanding.

I stopped at Holsteins in the Cosmopolitan Hotel on a mini-pub crawl on the Las Vegas Strip.

The place is a noisy casino lounge:restaurant which specializes in burgers and shakes.

Quality is OK There are no US macros, but there are some dubious Euros on tap. Stella, Boddington, Guiness etc.

Service was good. Typical of a casino lounge.

Selection included 24 handles. There was a good mix from Sierra Nevada to DFH, international selections plus local Las Vegas brews.

Food: NA

Value is poor. The place was pricey even by Las Vegas standards. $8.50 a pint plus tax.

Skip this place if you can.

Just got back from Vegas and unfortunately did not discover this little gem until my last day. It is in the Cosmopolitan Hotel, which is very nice as well.

I was pleasantly surprised by a fairly substantial beer menu. Many of your better imports, domestic crafts and beers from the west coast were on the list. And even more importantly, they actually had them on hand. Too often I see reviews for places that say they had a great selection but didn't have many of the beers available. Waitress was very knowledgeable about their beer list, and took the time to recommend some more regional selections to try.

And as for the food. I had a "Big Fat Greek", essentially they took a Gyro and put it on a bun. Absolutely delicious. By average standards it was a bit pricey, by Vegas standards it was pretty economical. Sandwiches are 10-20$, beers 5-12$.

This will definitely be my first stop on my next trip to the desert.

This is another great gastropub/high end burger bar that has opened up in Las Vegas along with The Burger Bar and Todd English Pub, two of my favorites. It's in the new Cosmopolitan Hotel and has a nice open atmosphere with an adequate size bar and (I believe) three dining rooms.

Beer selection was quite good, including a lot of locals as well as beers from the east and west. There were two New Belgians I had never seen, a number of California favorites and a separate can list. The canned beers are served in riesling (mini-duvel) glasses. The staff is knowledgable about beer and have tired everything on the menu.

Although I didn't eat there, they had many delicious looking items such as their take on mac and cheese, numerous high end burgers and many unique appetizers. I tried to go back for dinner but Vegas took over and I couldn't make it back.

I would recommend going to this place and then venturing next door to the Aria and also checking out Todd English.

I went back the next year and had food there. It was awesome. Very inventive and decadent. Burger with brisket and bbq sauce, philly cheese steak egg rolls, lobster mac and cheese. Amazing.

Visited Holstein's at the brand spanking new Cosmopolitan about two weeks after opening. The Cosmo is pretty swanky, a nice addition to the strip in my opinion. It's higher end, but not as stuffy as The Bellagio/Venetian/Wynn/Encore, etc.

Holstein's is another trendy, upscale burger joint, of which there are several now in vegas: Burger Bar, KGB, Stripburger, LBS, to name a few of the more well known. Holstein's is the only one I've visited, however, so I can't offer a comparison.

The restaurant is located on the second floor of the casino, along with several high end eateries, creating a pretty expensive food court. Holstein's is pretty loud, with music blaring constantly. It's not too bad, but don't expect any romantic conversations. I honestly can't really remember the decor, but it's definitely a spot for a casual meal - if being a hamburger joint didn't already give that away.

The menu is full plenty of tasty sounding casual dining choices, featuring burgers, sandwiches, sausages, salads, etc. My party zeroed in on the burger selections, which included variants including: greek, korean, japanese, chili, vegie and indian, among others. Be sure to check out the menu on their site.

I got the Longhorn, a burger topped with bbq beef brisket. It was really pretty good, not that I have a lot of experience with these new high end versions, but I enjoyed it tremendously. Cooked perfectly medium as requested, smothered with a tasty shredded beef and bbq sauce. All of the burgers are served with your choice of shoestring fries or steak cut. I got the steak cut and they were fine. Everyone else in the party enjoyed their burgers as well, though one person thought the buns were a bit too stiff (crunchy from toasting, I think).

They have a tap list of about 20-25 beers and another 80 or so in bottles. Again, check their site for a current list. It's a pretty strong menu for vegas, though nothing earth shattering. A few locals thrown in with fairly commonly available crafts. Again, a bigger selection than most places in vegas though, so I'm not really complaining. Prices are a bit steep, but par for the lv course: mostly around $6-8/pint, with the belgians being closer to $13-14.

For dessert, we got the Fat Elvis, a brownie with peanut butter pudding and banana ice cream. It was fine, nothing to write home about. We also got the candy store, which was an assortment of bit size treats, including a push up, drumstick, marshmellow puffs and a few other items I don't recall. I wouldn't recommend this dish.

Overall, I can recommend this place, though I myself wouldn't be rushing back, but only because there are so many great restaurants to try in Vegas.
