i like how different this is. batch 1, 2013. pale in color for a red beer, more brassy than anything, with one of those real fizzy airy white heads that dissipates pretty quickly. panil is making some interesting stuff, their wild side is so much different than the now stock brett and lacto cultured beers of the united states. this is truly the weird side of fermentation, giving this brew and almost hot pepper like aroma, without the heat. very fleshy and vegetal, and the oak is intense on it. charcoal and drying minerality on the front end, sweeter amber malt and lactic sourness as it finishes. some find it a little one dimensional, and i can see that, but if you look deeper, there is a lot of nuance and delicacy here. ripe apricots, green melon, cherry candy, i can find a lot of weird fruitiness in here if i try hard enough. if i just sip back and sip it, i enjoy its simplicity and uniqueness on the yeast front, and am especially happy with its light body made prickly by effervescent carbonation. probably not worth the 16 or 17 bucks they fetch for it, but i like this quite a bit.
