Poured a reddish brown body with good head and lace. Had a dark fruit vibe along with plenty of sourness in the aroma. The beer has a sour dark fruit/black cherry taste with velvety boozy sweetness and hot finish.

Bottled in 2006: Pours a darker amber/reddish color with very minimal carbonation. Smell is slightly sour and slightly funky but mostly smells like caramelized wildflower honey. The taste follows the smell with a floral/honey profile supported by some tartness and some interesting coffee/roasted malt flavors. Really well balanced and drinkable, I could see this beer working extremely well paired with the right cuisine (grilled peach salad or something like that). Worth a try!

Batch #14 2011. I love sours and was looking forward to trying this one. It poured with a lively fizz. Unfortunately this one had a sour (in a bad way) taste of something gone wrong. Soy sauce maybe. I couldn't drink it.

Hazy brown color with an effervescent head, which rightfully disappears quickly.
Yeast, fruit, oak and spice on the nose.
Sourness is nearly puckering and sharp; seems a bit immature, whereas I would imagine that with age, would become a much rounder flavor profile. I have to say that I might prefer this (like my women) young, tart and a bit immature.... however I'd also like to cellar a bottle for a time to see how/if she blossoms with age. lol

Pours a clear medium brown, tinted red, with two fingers thick dense offwhite head, settles with a spray of delicate lace on the glass. Smell: hay with light barnyard funk, acetic, vinous, oaky with substantial herbal and vanilla pops, melon. Taste: melon, cherry juice, acetic, red grape skin, herbal and oaky. A lot of oak in this one. Good but relatively pricey for what you get.

A: Medium to deep purple, brown up close - an interesting hue with some browns - pours with a small, off-white head, fades to virtually nothing but leaves a few streaks

S: Somewhat light rather than pungent - some light sourness and tart notes, with some barrel and dark fruits - cherries - musty wood with some general woody mustiness - damp, earthy, old cellar - some yeasty aromas

T: Old, ripe funk - lightly unpleasant at first, but it grows on you - straight-up bacterial weirdness with mostly lactic notes - very wet, damp sourness - lightly tart - some old, musty barrel - an overall flavor of dark fruits, with some stone fruits and old cherries - cherry flesh - funkiness seems to build as it gets warm and the general watery character subsides

M: Light to medium, minimal carbonation, smooth - oddly watery, as if this was overly old, but this bottle is not that old (or oxidized)

O: If this is the "Sour Version," I may be more interested in the "Very Sour Version"

This is weird, but perhaps not as weird as I expected. There are some nice sour and funky notes here, but it also tastes simultaneously too old and too young. Maybe this was not the best year. I might try this again.

Appearance: Deep purplish red with a small creamy off-white head. Drops to a small wispy cap with a slightly thicker collar. No lacing.

Smell: Oak. Sour cherry in abundance. A touch of raspberry and a jammy fruit quality. Slightly lactic with some citric notes. Powdery yeast as well. Some grassy and earthy elements thrown in the back. Screamingly tart on the back of the nose. Mild caramelized malt sweetness with a ton of tannic oak. Heavy barrel influence. Cherry skin and lots of cherry juice and flesh. Vinous in good measure. Deep red wine. Slightly musty. Some sharp cheese and gym sock and sweat.

Taste: Oaked sweaty gym socks. Deep tannic oak with a vaguely salty and slightly sour flavor. Some cherry skin and juice as well. Slightly citric with some lactic elements in the back. A ton of oak and something that tastes like rotten fruit. Slightly bready malt presence with some backing sweetness. Almost like vomit on the back of the swallow. A touch of red wine and some grape must. Earthy with some woody and mild floral elements. Yeast adds a dry, almost powdery, flavor to the finish.

Mouthfeel: Mediumish body with no carbonation. Slightly slick on the inital sip. Finishes clean.

Overall: So much barrel.

It's a soured version of the barrel it lived in. Could stand to dry out a little and pick up a bit more of a tart edge, but the base flavors are in there. Pick up a bottle and sit on it for a few years and it might be worth the sticker price.

Appearance: Auburn to brown red in color. With a head that is dark brown in color. The beer has some viscosity as it clings to the glass when swirled. A whisp of carbonation is all that remains after a quick swirling. Mostly clear with some yeast flakes that can be found at the bottom of the bottle.
Aroma: Light in most aromas. The souring yeast plays the biggest role. The cherries are present. There is a light astringency from the oak and the alcohol from the Bordeaux barrels are noticeable as well.
Taste: The beer is a little on the watery side. While I do get some of the expected tartness it's more faded then I would have imagined for a two year old. The Brett plays the largest role followed by the fruit. The Bordeaux barrels are quite nice as they provide mild amounts of oak, alcohol and a little grape.
Mouthfeel: The mouthfeel is viscous as the wine barrel really seems to take over this aspect of the beer. The beer is medium to medium/light bodied with light carbonation on the tongue.

Poured from the bottle into a tulip glass. Batch #16 vintage 2012 bottle 4549.

A deep garnet red in the glass with a classic dark brown mahogany color, even a dark orange towards the lip of the glass. Not much head, what is is about a light tan one finger head, but it's creamy and the puck always sticks around. Pretty solid.

This is a real interesting nose. Great woody and oak aromatics, splinters and hints of beef jerky. Earthy soil bent. Tart mild malt qualities, and soft vanilla like sweetness. Incredible aroma, hints somewhere between creme brulee and sharp clove like cinnamon. Wow, incredibly impressive and complex. Wonderful stuff.

Palate just sings. Mouthfeel is creamy with a hint of light body and easy coating malts. Minimal tartness but a good mix of astringency lime quality and a chewy strangely pine hop in here somewhere. Malty mix of mild sour cherry quality and light vanilla. Unlike any other Flanders style I've ever had.

This beer needs it's own category. Truly a unique and wonderful creation.

(bottle of batch 057 - 2012? - poured into a Bourgogne de Flanders stemmed glass)

A: very clear, dark purplish-red... very little foam on the pour - seemed to tumble itself down into the beer while pouring... fairly standard, I suppose

S: decent bit of barrel overtone - fresh wood, perhaps a touch of vanilla deep underneath... dark, dried fruit - cherry, grape skin - but not quite bright or sweetish... the often vibrant almost citrusy/flowery tones in other examples seemed very toned down here

T: dark, bruised fruit - mellow blend of cherry, red grape... vinous overtone... not sweet in the least, actually remarkably dry - mellow, polished tartness... vague hint of mocha in the aftertaste

M: thinnish, dry... tight, compact roundness up front - drops away like a shadow shrinking into a corner... no residual malt viscosity... carbonation is near nil, feels still

O: not bad coming from Italy... one of the more delicate, subdued examples of the style... obviously well made, but lacking life a little... reminded me most of a darker-tasting Rodenbach (Grand Cru)

The beer pours a gorgeous, muddled pink, almost like a fruited Berliner Weisse. It sits in the glass a regal, dark purple color with maroon and ruby hues. The beer pours with a head of miniscule, creamy white bubbles that form a pillow, and then quickly settles into a fat scrim around the beer. In body, the beer is dark and hazy, but clear of particles and cloudiness. On the nose, the beer smells of light vinegar, cherries, leather, and nearly vinous. Touches of grape and soft plum dance on the edges of the scent along with rich vanilla from the oak. The funky leather and cherry scents are earthy and rich with vinegar, which I adore, but they are also constrained and mellow. The nose of this beer revels in subtle complexity; it is funky, but not in a way that would kick your nose. On the tongue, the beer tastes tart with acidity, sweet with fruity malt, and bitter with oak tannin. The oak leaves a strange twinge to the pucker in your cheeks. The beer finishes dry and tannic. In flavor, the beer begins as sweet plum juice, tinged with tart cherry leather, this bulls head on into a wall of rich, oak tannin that blankets the middle of the sip, all but obliterating the fruity notes and bringing vanilla, earth and finally a touch of chocolate into play. Touches of grape juice and rich red wine can also be sensed in the start of the sip, while the finish is long and decadent with oak, vanilla, touches of tart grapes, and bitter herbal tannin. The aftertaste is hard to distinguish from the finish, as the beer has tremendous lasting power in the mouth. For all intents and purposes, the finish and the aftertaste are the same. In body, the beer is on the light side of medium, with a middling carbonation that gives a nice pillow to the tongue. Mouthfeel is smooth, if a bit watery, providing superb drinkability until the beer hits the back of the palate. In the back, the tannin does touch with a quick bite of astringency, but this quickly fades to just leave a bit of tightness in the tongue. The mouth is left slightly dry, with just a touch of saliva oozing in to cancel the lingering acidity of the beer. Overall, this is yet another superb Flanders Red. This particular beer revels in the rich character it gained from unique Bordeaux cognac barrels. Admittedly, I have not drank a lot of cognac from Bordeaux (I thought Cognac could only be made in a region surrounding the town of Cognac?) but I think an experienced Cognac drinker would definitely find subtle hints within this beer reminiscent of that drink. This is a Flanders Red of subtle intrigue and beauty, like a fine red wine. It unfurled on my tongue like a puzzle, and I very much enjoyed that. My chief complaint with the beer comes from its thinness. I want my Flanders Reds to be medium bodied, and this one is just a little too far below this bench mark for me. It is superbly drinkable, but loses a little oomf. The beer’s tannic structure also allows it to grip the mouth quite nicely, and provides some amazing complexities, though it is a little too raw for my personal tastes. In the end though, it’s a great Flanders red.

750mL (batch 16, bottle 1782, October 2012) into a tulip. Pours a deep brown mahogany w/ a thin off-white head that settles pretty quickly to a foamy collar.

Aroma is nicely tart and oaky with an underlying fruity sweetness.

Taste follows nose. A delicate balance between sweet and sour, neither dominating. Interplay between dry oak, gentle acidity, and dark sweet malt.

Mouthfeel is medium-bodied, as balanced as the taste, finishing semi-dry. Thirst-quenching, refreshing, drinkable.

Overall a very good Flanders red ale; my only critique is that it might be a little one-dimensional, but it's still very enjoyable.

A: Pours a translucent ruby red with a small amount of off-white head (assuming you pour aggressively; there's almost none otherwise). If you end up with some head, it retains a little around the edge of the glass, along with some surface film, which leaves spotty but clingy lacing.

S: Pleasant tart sweetness, with a cake-y grainy note. Very nice.

T: Mildly tart, mildly sweet; it is nice, and quite drinkable. It doesn't have any outlandish flavors, but it's definitely in the direction of a sour.

M: Medium body, medium carbonation.

Overall, very good, but maybe not outstanding enough to be excellent. It's fairly subtle, with good but not great depth. Very nice and worth drinking.

Batch #14, 2011 Vintage. Poured into a Teku glass. Deep mahogany with dark pink highlights. Nice two finger head makes this look like a photo shoot. Smells of cherries, apples, and cider vinegar.

The smell follows taste and this is a really, nicely soured ale. Soft edges of oak round out the acidic and sour attack of cherry and berry fruits. A hint of grapes, along with the tannins from skins in contact with oak, comes through; very vinous. Medium-light bodied. Finish leaves a nice funk lingering.

Very good sour, made in Italy! The Italian beer scene has really made its mark and this is one offering that helps support that cause. Next time a wine drinker reaches for a pinot noir to go with a chicken or salmon dish, this could probably be swapped out. I'd also love to try this with sauerbraten.

750 ml bottle, 2012 vintage, Batch #15, Bottle #1184. Served in a Unibroue tulip, the beer pours a reddish/brown color with about an inch off-white head. Head retention and lacing are both good. Aroma is nice, the brew smells like tart cherries, oak, green apples, funk and vinegar. Taste is similar to the aroma, it tastes like tart cherries, grape juice, dark fruit, oak, green apples and vinegar. Even though it's mostly tart, there's some fruity sweetness noticeable. Mouthfeel/body is medium, it's coating and is well carbonated. I think this is a good, tart, enjoyable brew. Definitely worth a try, I'll have to get another bottle to age and see how it turns out. $16.99 a bottle.

Batch #16. 2012. Bottle #5335. Poured into Duchesse goblets.

Red-brown with red-orange hues. Aerating on the pour, a collection of large bubbles still remain, on the surface, by the hundreds.

Acetic aromas permeate through noted of oak, golden raspberry, currant, lemony tartness, and wet haystacks. Thinly fruity, but nicely funky. I'm excited to find out how sour this might be.

Very oaky and decently sour. Currants, tart raspberry, and moldy lemon. Lots of woodiness, in fact, so much that the base beer might not hold its own in terms of fruitiness or malty sweetness. While I love the wild funky notes typical of American sours, this Flanders Red is missing the cherry balsamic umami of a Rodenbach or the gooey vanilla of a Duchesse. A very light cherry note is at work here, but it's very tart. The thinness of the body really reveals what there is and isn't in this beer. Still damn tasty.

Panil Barrique is a nice Flemish Red that crosses over into American Wild Ale territory. It has great sourness for the style, although it's not as sturdy as you might hope. Finishes cleaner and shorter. Actually, very refreshing.

The flavor is not strong and not overpowered by the sour flavor. The oak aging is not as prevalent, just a hint. Overall, this is pretty tasty but mild. I would drink this again but it's not my go-to sour beer! Wish the flavors were bolder, as I think the oak aging would be fantastic. Batch #16, bottle 2505.

750 ml bottle into tulip glass; Bottle #1048, Batch #9, 2007 vintage. Pours lightly hazy deep ruby red color with a 1-2 finger dense cream colored head with good retention, that reduces to a thin cap that lingers. Spotty soapy lacing clings on the glass, with some moderate streaming carbonation. Aromas of sour cherry, green apple, red grape, pepper, clove, floral, oak, hay, red wine vinegar, funk, light leather, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/funky yeast notes with moderate oak barrel presence. Taste of tart cherry, green apple, red grape, floral, clove, oak, hay, red wine vinegar, funk, light leather, and yeast earthiness. Fair amount of fruity and earthy tartness on the finish; with lingering notes of tart cherry, green apple, red grape, clove, oak, floral, hay, red wine vinegar, funk, light leather, and yeast earthiness on the finish for a good bit. Very nice balance and complexity of fruity, tart, and earthy yeast ester flavors; with moderate malt, oak, and acidity; and a great sweetness/acidity balance with zero cloying flavors after the finish. Light-medium carbonation and medium-full bodied; with a fairly slick and moderately acidic mouthfeel that is nice. Alcohol is very well hidden with minimal warming noticed after the finish. Overall this is a damn nice Flanders red ale. All around nice balance and complexity of fruity, tart, and earthy yeast flavors with moderate malt and oak balance; and very smooth to sip on for 8% with the moderate acidity. A very enjoyable offering.

Appearance: It has a nice reddish/brown color to it. It has a nice off-white head that dies down moderately and leaves little lacing.

Smell: The aromas definitely give out hints of tart cherries, oak, funky yeast and some caramel.

Taste: Like the aromas, it has some tart cherries, some red wine, oak, funky yeast and faint caramel.

Mouthfeel: It has a medium carbonation with a nice overall balance and feel.

Drinkability: It's a very smooth drinkable beer accompanied with good flavors and aromas.

Poured into fantôme tulip glass. Batch #16 from 2012. Bottle #2544.

A: deep, dark reddish brown color. No real head when poured delicately into tulip. Noticeable carbonation working its way up the side of the glass. Lacing along the edges of the glass.

S: brett, dried fruit, cherries. Oak is present.

T: cherry tartness upfront with very faint hints of funk. The oak adds a nice finish to his beer and smooths out and blends everything. Pretty drinkable as well, as it's pretty delicate on the sour side.

M: seemed surprisingly drier than expected. Not bad.

O: pretty great example of a Flanders here. Adds its own unique touch as well. Would pick up again at some point in the future.

Batch #16, 2012, Bottle #2161. Pours dark purple-brownish red from the bottle. Small bit of cream colored head. aroma of sour cherries, blackberries. Big heavy mouthfeel with very little carbonation. Lots of fruit up front with a good tart punch and dry oak finish. Cheery, blackberries, and grapes. Not sure I like the big body on this and tend to enjoy more effervescent sours. Not bad, but I could do without it as well.

Tried this a second time at Tipples Rare and Barrel Aged Beer Tasting on July 13, 2014. Like it much better this time. Still pretty ugly, but a nice sourness to go along with the sweet black cherry flavor, oak, and very nice sourness going on. Big chewy oak here intermingled with nice tart cherry fruits. Very nice.

Bottle (batch #16 2012) to fantome tulip

A: It is a reddish brown dark copper color with little no head but a medium lacing whitish brown in color. It has noticeable high carbonation and is dark to semi opaque but not too cloudy or clean either.

S: You can definitely tell it spent some time in barrels as the oak is fairly strong but in a good way. There are wine like dark fruit scents similar to red wine grapes or dark cherries. You can definitely tell its been naturally fermented but does not really have any funk on par a flanders though.

T: It is slight sweet and tart up front with a fruit juice flavor that is fairly complex it does have wine like aspects but it is sleigher. There are some sour hints but they are not nearly strong enough though it seems they could come out more with age. It is not necessarily a distinct flavor but overall it is very earthy, not like dirt or funk (as there is none of that) but spice wise the time in the barrels is noticeable here. Pretty solid overall would like to see how it develops

M: In terms of feel this is very juicy and smooth as it goes down very easy for 8%abv it is similar to watered down wine in terms of feel. The carbonation is nice, light and champagne like but not nearly as bubbly it matches the style though. The finish is crisp light and clean which adds to its drinkability.

O: Overall I like this beer its really solid to style with good flavors and easy to drink. That being said I defiantly want to see how it can develop with a few years on it as it was not very sour and a lot more juicy then tart. If it develops how I think it could it could make this beer a lot beer, but for now its good but tacking in some aspects especially in strength of taste though the feel is pretty good. I would recommend this is worth a try if you can get it.

From the bottle.

Appearance: Ruddy brown, barely any red on the edges, head is tiny and off-white.

Nose: Lots of sweetness compared to a traditional Flemish red. Almost honey-like note at first, followed by a good amount of ripe cherry. Oak is definitely there in the back with a toffee and vanilla undertone.

Taste: Very balanced and even but in the end it falls a bit flat. None of the flavors really pop. The honey is still there and plenty of cherry-tinged oak that finishes with a coca cola like syrupiness. Tartness is balanced by the extent of the oak presence here.

Mouthfeel: Not exciting and a bit flat.

Overall: A different take on a Flemish red. The tartness seems very toned down by the extensive oak aging (Cognac barrels probably are the root cause). Still a nice and easy sipper, but not nearly as complex and bold as other reds.

From a 750 ml (Batch 11, 2011) into a tulip.

A-The brew is walnut brown in color with only a slight hint of red. The head is one fat finger of light mocha colored foam that drops slowly into a thick ring. Even for a sour, this is not a terribly attractive beer. Lots of chunky, visible carbonation.

S-This thing has tons of oak on the nose. It also gives a fair dose of sweet cherries, some vanilla, a touch of sour grapes and vinegar. It is funkier and earthier (think horse blanket) than some Flanders Reds/Oud Bruins, but not quite geueze-like. Pretty complex.

T-The taste tracks the smell closely, which is good. The sour factor is medium with dry oak being more dominant than tart fruits. For fruit flavors, cherries are most noticeable, but there is also some tart pear and grape. The malts come through as well, with a sweet vinegar punch.

M-The feel is medium to slightly heavy for the style. Carbonation is lighter and the feel is appropriately slick.

O-This brew is a winner. I like the oaky, subtle complexity of it all. There are beers with more pucker power and this beer clearly does not try to hit you over the head with acid. Instead, this one really shines in the use of oak to give an dry, earthy, complex tartness. A complex and drinkable example of the style.
