Notes/Commercial Description:
Our on-going expedition mostly dedicated to those ever questing ‘rye, whiskey, bourbon, etc. barrel-aged beer zealots’. Never heard of the rarely seen, Bavarian-indigenous mammal the Wolpertinger? Well much like the actual Wolpertinger, our “Wolpie” is a little Bavarian in nature; scarcely seen (brewed once a year to celebrate UCBC’s anniversary) and definitely difficult to define…taxonomically speaking. We define “Wolpie” (beer-style wise) as a bourbon barrel-aged Winged Nut, a potent chestnut beer fermented with a Bavarian Weissbier yeast strain.

Served in a small tasting goblet, quick review from notes.

Pours a nice reddish brown chestnut color, it shows good clarity, with a thin layer of tan foam on the surface that quickly parts after pouring.

Aroma is a little off, something funky and wild in there, a little leathery. Bourbon is noticeable, lending some brown sugar sweetness.

Tart and astringent, it was clearly infected. Very thin and over attenuated in feel, another bad sign. Some remnants of nutty chestnut and bourbon heat, but obscured by the overwhelming astringency. Had no idea this was considered a Weizenbock, wouldn't say that really fits. Drain pour.

Pours a clear, dark brown color. 1/4 inch head of an off-tan color. Slight retention and slight lacing. Smells of strong bourbon, wood, sweet malt, roasted malt, and strong alcohol. Does not seem to fit the style of an Herbed / Spiced Beer, but rather an American Strong Ale. Mouth feel is sharp and crisp, with an average carbonation level. Tastes of bourbon, strong alcohol, wood, sweet malt, and roasted malt. Overall, the bourbon is over-powering and the main aspect of both aroma and body. The review as a Herbed/Spiced beer is much lower than it would be under an American Strong Ale.

Picked while in St. Louis this spring. First beer from UC. From cellar to fridge for a hour and poured into my brand new Spiegelau tulip.

S: First thing I get is tart/sour/horsey funk. Not what I was expecting. As it warms the barrel and bourbon are there along with raisins and prunes. Almost like a quad.

A: Deep muddy brown, not the prettiest color. Thick mousse of off white head drops to creamy ring. Not much lace, no legs.

T: Again first impression is a sour. Get some horsey funk before the barrel and bourbon hit me. Maybe some chocolate and nuttiness, not sure what chestnuts add. Maybe some tannin-like quality.

M: not getting the fullness others talk about. Seems thin and over attenuated which would go with the odd sourness. Some burnt and astringency finish out an odd beer.

O: Odd beast here. Not sure if I've got a funky one. Almost kinda bourbon Oud bruin like? The odd mouthfeel say tainted to me. As is, its drinkable at least.

Dark drown in color with red highlights. Decent head retention and some light will get through this one but not much. You can definitely smell the bourbon on this one but it comes across as a sweet raisin like flavor. I also get a bit of plum and black licorice on the nose. The mouthfeel is a bit warm and thick. The flavor is all about rasins and plums and is very sweet. A bit of horse blanket flavor as it disappates in the aftertaste. Very curious.
