750ml bottle into Duvel tulip. Batch 1, bottled 8/13/11.

Appearance: Very careful pour (of a cold bottle) yields a glass of foam. Dissipates slowly, leaving thick walls of lacing. Head is nice, but this is a bit of a pain in the ass.

Pours a slightly hazy gold, once the foam turns into beer.

Smell: Fruity and yeasty, with a little pepper. Faint mineral and lemon. Effervescent. Not much spice besides pepper. Gives an impression of a few different fruits, but kind of a not-fleshed-out suggestion. Smells bright and refreshing, but ultimately a little dull.

Taste: I sometimes pan should-be-complex beers for tasting the same every sip... no worry of that with this beer.

The first sip has lots of yeasty flavor, with interesting savory undertones that appear well into the sip. Dry finish devoid of aftertaste. Subsequent sips tone down considerably with the yeast flavor, but reveal some undercooked bread and lemon rind. No clove or harsh phenols, just slightly fruity, subtle Belgian yeast flavor, almost-solvent-like-alcohol, and a little pear on the back end.

After I pour the next glass (not even halfway through the bottle; this thing seems to fill my Duvel tulip with foam for every 6th of the bottle I pour), the flavor gets notably more powerful. It's suddenly sweet and fruity, with a prominent mineraly note. Less watery, more creamy.

All told, most sips don't really rise above 3 to 3.5 territory for taste... they never have off notes, but they're not overwhelmingly interesting on their own, nor more palatable than the average saison. I'm bumping the score to a 4.0 because there's a lot going on without clashing, and the only consistent aspect of the flavor is its softness.

Hard to explain "softness", but everything that happens (mild funk, fruity or herbal hops, fruity esters, yeasty flavors) is subdued without being bland. Given the good mouthfeel, it makes for a refreshing beer, and experiencing all these different flavors is ultimately quite enjoyable.

Mouthfeel: Light side of medium bodied, high side of moderately carbonated (despite the pouring difficulties). Dry finish. No alcohol heat.

Overall: Tasty, and a strong start for this new brewery, but not in the same league as Captain Lawrence Saison, or Fantome, or Saison Dupont, or other readily available beers from across the stylistic spectrum called 'saison'. I enjoyed it, but too often I found myself taking a sip and being left wanting more from the beer.

Batch number: 011.

Pours a clear golden yellow with a foamy bone head that settles to wisps of film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is of malt, grain, yeast, spice, and grass aromas. Taste is much the same with malt, earth, and grass flavors on the finish. There is a mild amount of hop bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and dry mouthfeel. Overall, this is a pretty good beer with a nice earthy quality in the flavors.

OK a strange one here...
poured from bottle into tulip.
Really nice head on a slightly orange color brew.
Aromas of saison peppery notes but also a hint of banana like hefe yeast.
Taste is fruity saison with a lot of german hefe influence. Some peppery finish with a lot of fruity esters. I wish it had a bit more saison personality but the flavor is not bad.
My biggest wish is for a bit more dryness...it still has some somewhat residual sweetness but not bad.
Its a bit over malty but in general its a good brew. Not a seeker but worth a try if you see it.

Poured from the bottle a cloudy nectarine yellow color with two fingers of bright white head. Just a bit of wet lacing with this one.

Aroma of lemon, ripe tropical fruit and herbal notes and table sugar along with a yeasty mustiness.

Tasted of tangerine, lemon, ripe tropical fruit, spicy herbal notes sugar, yeast and crackers. Finished clean.

Medium bodied, sticky and dry with a moderate carbonation.

Perhaps a tad too sweet but still a tasty Saison from Mystic.

Pours a nice medium golden color. Fairly cloudy. Medium just barely off-white head. Good retention. Aroma is a nice mix of fresh malt, saison yeastiness and light fruitiness. I'm getting green grapes, white wine, peaches, blueberries, apples. Honey. Malt flavor is bright and fairly sweet. Mild pepper. Some very light funk. Mildly herbal. Taste starts fairly sweet with a good dose of honey-ish malt. Then, some apricot and grape fruitiness kicks in. Finally, the beer finishes with some drier yeast notes and a bit of lemony, floral hops. Lightly effervescent with some decent body to the beer. Tasty enough, but it's mostly well-trod territory. I remember liking Renaud a bit more, though I think this one is a touch more fruity. Still, it's a solid, well-made saison.

A: Pours a cloudy straw color with a fair amount of light white head. A film with some bigger bubble retains, leaving good lacing.

S: Sweet and yeasty, on the subtle side for a saison.

T: Fuller sweetness than the aroma suggests, leading into a lightly hoppy refreshing finish. The 7% isn't particularly noticeable except perhaps for a moment on the finish.

M: Medium body, medium to high carbonation. It's fitting for the beer.

Overall, quite good, and nicely refreshing without being too light.

A seamless and prolific off-white head lies patiently on top of a ruddy-orange brew.

Big notes of Orange, white grapes and Belgian yeast followed by lesser notes of pear, lemon and other somewhat sour, light fruits to the nose.

More strong notes of orange and lemon up front with layers of Belgian yeast mixed with a slight fruity funk, and finishing with a peppery background that also includes some butterscotch and burnt sugar way down low.

Medium bodied and not as crisp as expected, with a hint of creaminess in the middle and some heat at the back.

Having a hard time pacing myself with this underrated but flavorful and potent brew.
