DFH signature glass

A: Hazy bright yellow orange color. Layer of bright white head. Leaving some sticky lacing.

S: Spice. Pepper. Wheat. Grassy hops. Yeast. Barnyard. Mild funk.

T: crisp lemon. Spice. Pepper. Wheat. Old hops. Dry crisp finish. Love Saisons.

M: Light to medium bodied. Nice carbonation.

Fluffy, large-bubbled head. Settles slowly. Very cloudy. Neutral gold color. As the head settles, it leaves some spots on the glass.

Mildly sour nose. Light alcohol.

Thin bodied with a very high carbonation level. Lots of citrus sourness to the tongue. There's a bitterness without a distinct hop flavor, just simply bitter. A classic Saison with the earthy/sour notes throughout.

A very nice Saison from a very nice local (for me) brewery. Pours a warm yellow under Union Brewhouse lights and tastes nice, clean and crisp.

A - Hazy yeasty pout with minimal head.
T - I like this a lot. It is just a bit rough around the edges, like a true farmhouse ale, with a tad of funk. Slight banana finish and then followed by a metallic finish that could be found objectionable. But not my me.

This is a good example of what think a Saison should be...original

From 04/27/12 notes. Big thanks to jslot38 for sharing this, I've been wanting to try their stuff for a while. 750ml bottle from batch 3, the cork popped off by itself and hit the ceiling, but surprisingly no gusher.

a - Pours a hazy dark brown yellow color with three fingers plus of fluffy white head and moderate carbonation evident.

s - Smells of bananas, yeast, spices, pepper, and some bready malts. Nice bananas and not too much pepper, very nice nose.

t - Tastes of bananas, spices, pepper, fruity malts, oranges, bready malts, and yeast. More fruit then the nose; I like it a little bit better.

m - Medium body and low to moderate carbonation, pretty smooth body.

o - Overall a very nice saison. Nice bananas in the nose and oranges and more fruits in the taste. If you like you saison's fruity I'd suggest this one, and would like to have it again.

750 mL bottle, batch 3, poured into a tulip

A- A slightly hazy golden yellow with a massive four finger fluffy white head.

S- Light fruits, apples, yeast, peppercorns, spices, hint of lemons, some florals notes.

T- Light fruits, apples, pears, and a touch of lemon up front with a lot of pepper and earthy spices in the finish, bready malt backbone.

M- Smooth, light body, crisp.

O- A good saison that was worth the time to seek out. This is my first beer from Mystic and I can't wait to try more, have two other beers in my closet and might pick up some when I head to Boston this weekend.

Provided to me via the lovely Mrs mixylplik3, thanks for the opportunity.
Opens with a huge pop and displays what seems to be the Mystic signature level of carbonation. After the foam settles I'm left with half a glass of light golden beer with a ton of sticky white lace on the sides of the glass. Smell is spicy and fruity. Pepper, green apple, and lemon mixed with a bit of yeasty bits and candy sugar. Wow this doesn't seem as dry or as spicy as the nose was leading me to believe. Sweet sugary honey malt with bits of candy sugar and green apple. Slightly bready almost crackery bits with some pepper and coriander mixed in for flavor. Medium to thin body with a raucous level of carbonation and a sweet almost sugary mouthfeel. Seems drier and a bit spicier than the regular version. Both are great saisons, but I enjoyed this one a little bit more.

"In the times before modern industry, the cold, shorter days of the approaching winter directly affected the character of a breweries beer. For our third batch of beer we let the cooler temperatures influence the brewing process. The result was a remarkable variation on Mystic Saison. The hops are brighter, the drinkability fantastic, and balance of flavors intriguing. Because of this venture into old ways of brewing (and the distinct differences they create), we called this beer "An Dreoilin" after an ancient druid festival of the winter solstice."

Pours a huge 4+ finger head in my tulip, fizzy head that fades fairly slowly too making it tough to continue the review for the moment. Soapy lacing left on the sides, with a mostly clear tan golden color beer with many bubbles making it look like champagne.

Nose starts with typical Belgian golden malts, light wheat like aromas, then nice saison aromas take over. A typical saison light malt, juicy sweet Belgian saison malts, as well as yeast. The yeast brings light spices, a bit of citrus, and as usual a dry rustic farmhouse gritty aroma. The light lemongrass and floral hops come through a bit in the background hand in hand with the malts and yeast aromas.

Taste starts juicy with nice dry gritty malts, again typical Belgian golden saison malts, but a bit juicier, and this time more earthy bready malt flavors. Typical dry farmhouse rustic malt and yeast flavors kick in, bringing more typical saison goodness, but this time has a bit more of the earthy grainy slight funky like farmhouse flavors, but remains pretty smooth. A light citrus flavor and spices come out as well, and dance with light boozy esters. Hops are there, not as much as I expected, again light lemongrass and little floral at first, but as it finishes a bit spicy hop also kicks in. The finish is quite dry but sticky, lingering sweet tasting golden malts, little bit more of the bready farmhouse funk as well, and hints of lingering spices and citrus.

Mouth is med to lighter bodied, little sticky finish, great carbonation.

Overall pretty good, very smooth at first, nice malt flavors, the malts and yeast flavors seem to both come out of different directions but just as strong for both, but remains pretty drinkable. HOps are there but not big. A nice overall drinkable saison, but much bigger than a typical summer drinking saison, and seems to be made just for winter.
