25.4 fl oz brown bottle, caged & corked served in a chalice.

Hazy, straw highlighted copper in color with a very faint shade of salmon. Carbonation filled bright white head that recedes to a delicate, smooth sheet. A bit of spotted lacing with decent strength.

Dry, farmhouse must that is accompanied by a thin, yet noticeable candied sweetness. There is an underlying, faint tartness of raspberry and cherry.

The stiff, somewhat earthen farmhouse must is initially over-matched by a young citrus and berry tartness: orange, lemon, raspberry. As the tartness subsides, the darker earthen must returns in the middle; a bit bland. A dry, airy finish is followed by a moderate bitterness with a wheat-based, near adjunct aftertaste.

A light medium in body. Active on the palate, yet dry. Texture is reminiscent of a very dry champagne.

Nothing too exciting here. The cabernet barrels add the unique tartness, but otherwise this is a pretty standard Saison. Unfortunately, the product just doesn't seem to justify the $13 price tag.

Bottle: Poured a light yellow color ale with a super large foamy head with great retention and some good lacing. Aroma consists of rustic malt with light residual sugar notes and cabernet notes with light tart feels. Taste is also dominated by some tart notes with rustic malt and some vinous notes from the Cabernet barrels. Body is about average with great carbonation and no apparent alcohol. Very well balanced in terms of drinkability and complexity.

Pours a fairly-clear golden color with a nice white head. A bit of lacing on the way down.

The aroma has a bit of Cabernet Sauvignon, and this increases as the beer warms up. Behind that comes some saison spice and a bit of a light earthy character. The flavor loses some of that barrel character and instead has some tannin and is a bit too heavy on the phenols.

Body is light with a fairly-crisp finish. Light oak and tannin. Overall, above average, but not quite as good as the Sauvignon Blanc version.

Pours a mostly clear deep golden color with a huge bubbly white head that slowly fades after sticking some lace to the sides of the glass. When the bottle first popped I was assaulted with lots of wonderful sweet fruity aromas, but as my sample sits those have dissipated. Smells of pear and pepper with a sweet malty backbone and a bready yeasty quasi funk going on. The flavor is sweet and bready with some honey and sweet fruit like maltiness underneath a peppery yeasty bite. There's a slight red wine vinous quality that rounds out the edges nicely. Medium body with a spirited level of carbonation and a sweet bubbly mouthfeel. This is a nice Saison, but I feel that the Cab barrel adds a red wine flavor that doesn't agree with my palette.

I saw a display of this at Julio's in Westborough, MA and the thing that pulled me in was definitely the barrel-aging.

A foamy head but not pillowy. Not sure if it was my glass, but really no lacing throughout the consumption (ok, a runny lacing).

A little funk on the nose. Definitely not overwhelming. I'd like to think I smelled a hint of oak, but hard to say.

Overall, a very smooth taste. No sour. A good balance of hops and malt and yeast. Yeah, I'd call this quite balanced. Not much funk on the taste.

Good carbonation.

In terms of saison, I think that the barrel-aging actually had a pretty minimal impact on the the beer but despite that, it stood out as a very sold beer for the the style. I'd drink it again in a heartbeat.

A: A very cloudy golden pour. Enormous bubbly white head. Head retention is top notch. A smattering of lacing.

S: Oak. Bready yeast. Some pear and lemons. A touch of tart grapes. Pretty subtle aroma, less so than the sauvignon blanc version or the non-barrel fermented version.

T: Oaky up front (and throughout) with some bready yeast, cloves, pepper and lemon peel. Surprisingly strong tart grapes after that. Drying lingering tartness in the aftertaste.

M: Mid-range body, carbonation is dead on. Drying.

O: Another interesting saison from Mystic. I'd say this is 2nd to the sauvignon blanc version. This version is more fruity, more tart and more oaky, which unfortunately dominates just a touch compared to the other barrel fermented version. Perhaps it spent more time in the barrels? This is still a decent improvement over the normal saison and is far from a bad beer.

Split a 750 poured into a duvel glass

A- pours a hazy murky golden with a two finger white head that dissipates nicley, a nice medium amount of
Lacing spots the glass.

S- melon, oak, wine notes, I kinda expected a little more aroma from this one, smells good though, I wouldve know it was a wine barrel but probably wouldn't have guessed red wine from the nose alone.

T- citrus, bannana, melon, oak and wine character,
I feel like the red wine notes come out, subtly, in the finish, the use of the barrel is very nice with this one, it doesn't overpower the base beer, but rather adds subtle complexities of wine and oak notes. I was expecting aide aggressive red wine character to dominate the flavor, this is nice.

M- medium bodied with a a high/medium carbonation that leaves it with a slightly effervescent feel, creamy in the middle with a dry finish, I'm really loving the mouthfeel on this one.

O- A very nice beer, I usually don't like saisons, but this was nice, and the barrels were used as a nice addition rather then a defining force, well done all the way around, deffinatly would recommend this one.

750ml bottle.

Pours hazy gold with a copper hue. Two-plus inches of dense white froth. Thick, tattered lacing and a solid coating on the surface for the duration.

Aromatics lead off with cut grass, cloves, green apples, bubblegum, and cracked pepper. Hints of vineous, toasted oak, and vanilla follow through.

Light bodied with a creamy, pillowy mouthfeel.

Biscuity malt and tart wheat lay a base for earthy spice and tannic oak and grapeskins on the palate. Slightly vineous and bone dry with apples and clove dust. Extremely phenolic with plenty of funk, bubblegum, wet hay, and a hint of juniper.

Finishes with lingering spice, tannic oak, vineous fruit, and a hint of honey.

Looking forward to see where this one goes in the cellar.

A-Pours a murky apple cider color. Head is not huge but it retains very well and is bright white. Head leaves consistent lacing splotches.

S-I prefer the aroma of the Sauv Blanc fermented version better. Still, its a nice smelling beer. Tartness and a bunch of oak. Musty and only mildly sweet with some notes of pepper. I think the Cab barrels really enhanced the initial aroma of the base beer, but I absolutely love the nose on the Sauv Blanc version. This smells quite dry.

T-This is definitely an interesting flavor. You can really grasp that red fruitiness from the barrels. Finishes quite vinous. Also leaves a lasting oaky flavor. Decently tart. Quite dry. Quite a unique, yet pleasant flavor.

M-Medium bodied with lots of carbonation. Dry. Leaves a lingering feel and taste.

O/D-Overall, this beer is pretty cool. I liked the Sauv Blanc version considerably more. But this is a beer that is blatantly worth trying. It just doesn't flow as well as the Sauv Blanc version, but hey, I really enjoyed it nonetheless. A bit steep on the price at about $12, but it is a 750 ml. Worth a shot. Unique.

This was an improvement over the regular saison, though some of the rough edges of that beer still were apparent and it did not have the polish of the Blanc version. Flavor is overly tannic and oaky with a light vanilla finish that is eventually consumed by booze and grain from the saison. Appearance is adequate, a clear gold with a nice white head. Aroma is predominantly barrel heavy with some light saison spice as it warms. I enjoyed this the most of our tasting group, but still wasn't crazy about it.

Beer is golden / amber and clear with a white head of small and large bubbles, some lacing, moderate carbonation.

Aroma is mostly wine, sweet grapes and a little yeast.

The wine character covers up or makes absent almost everything I disliked about the base beer and made it undrinkable. This is more like a carbonated wine with a slightly grainy aftertaste. I may even have this beer again one day.

Poured into a tulip. This one pours a golden yellow with about an inch of fluffy white head. It settles leaving a solid rim of lace.

The aroma has a nice vinous aroma with some hints of tartness in the background. A little bit of grassy hops but this has a nice fruit character to it. The pallet has notes of oak and some vanilla with hints of red berries. A bit of grassy hops and biscuit malts.

The body is light with somewhat excessive carbonation. Overall this one is tasty. Nice one to try. Would love to see more BA saisons in the future.
