375ml bottle. Thanks Joe. Poured into a Hill Farmstead stemmed glass today, 3/31/2014.

App- Dark copper, nearly brown body with a thick two finger, nitro-like effervescent white head. Splotchy lacing. Good retention.

Smell- Tart green apples, white grape tartness, herbs, bread, a little bit of earth. On the sweeter, fruitier side which I find interesting due to the stated lack of fruits used in brewing this beer but rather the wild yeast being harvested from local Massachusetts plums. Even after reading this on the bottle, I still do not find plums per se, but the fruit tartness is certainly very pleasant.

Flavour- Plum juice, dates. Quite sweet and sugary. Bread, a bit of floral notes and earthiness. Identifiable but subtle estery yeast notes of an amalgam of bubble gum and banana. Finish is almost vinous, with a lingering earthy bitterness. Does not lack for complexity and I consider this to be a very unique flavor profile even if I didn't know where the yeast was harvested from.

Mouthfeel- Medium bodied, very well carbonated and quite creamy. Grape tartness and an earthy bitterness on the backend, which is very dry and makes for a sipper despite it's relatively low ABV. A bit hard to drink due to the surprising bitterness.

Overall- A fascinating flavour on this beer which is compounded by the fact that there is zero fruit used here. The wild yeast is pretty much solely responsible for the sweet, dark fruit flavours in this saison which translates to a solid, if a bit overly bittersweet farmhouse ale.

Some random thoughts. This has been my favorite of the mystic beers. Love the concept of the local yeast. This one is cultivated from plums. Fantomesque to me in terms of the frutiness without real fruit. I've had this fresh and with a bit of age and like both. I think this was a bit overly carbonated fresh but it has settled over time. The yeast has done its job turning this into a thicker creamier experience. There are a few more sour notes as this matures. Overall I would consider this an outstanding local beer with several layers iof complexity. Reminiscent somewhat of orval or a lighter version of a quad.

Appearance: 1.25 inch head, high carbonation, orange/red/brown in color, cloudy

Smell: bread, apricot, tropical fruit, and dough

Taste: apples, funk, bread, apricot, tropical fruit, and dough

Mouthfeel: sweet with a bitter middle spike and a less bitter end--funky, medium in body, medium-high carbonation

Overall: Surprisingly super complex--very nice mix of apricots and apples..Some saison elements, but drinks like a holiday beer or a light quad..Expensive, but well worth it.
