Batch #001, 375ml C+C bottle into a tulip. 6.5% abv

A - Darker than most saisons. Pours a clear brown/red body with a creamy and lasting one finger white head. Great lacing and retention.

S - Funky hay, lemons, plum, apricot, spice, and vinous red wine. Aroma is of strong and complex Belgian yeast.

T - Saison like with some dubbel like flavors. Hay, lemon, and spice lead into some darker plums and figs with some light caramel malt. This really does drink like a funky and lighter bodied dubbel. Aftertaste is yeasty and warming,

M - Creamy with silky carbonation. Excellent mouth feel. Drinkability is a bit hampered by the alcohol presence.

O - A unique and tasty saison. Wild yeast isolated from local plums, crazy concept! I really liked this one.

12.68 fl oz brown bottle, caged and corked, served in a chalice.
Batch #001, note: ABV listed as 6.5%.

Pours a deeply hazy, yet glowing auburn in color with a faint shade of violet. Creamy, white head about a half of an inch tall that shows no signs of receding. Walls of condensed lacing with very little give.

A light farmhouse-musty aroma with most of the real dirty, earthen touches absent. Bright citrus and berry, not quite tart but approaches that quality. Light notes of diacetyl and a very mild toasted malt character.

Light earthen musty flavors begin this Saison's flavor profile; however, things quickly get much more flavorful and aggressive from here. Raspberry, lemon, lime, plum, and grape flavors converge all at once which creates a sharply acidic and fresh bite. Pepper and coriander balance the tartness while contributing to a slightly heavier earthen quality following a dry finish.

Medium bodied; slightly active on the palate, but surprisingly creamy as well. A real nice body to balance such dynamic flavors.

A very unique Saison. Pretty hard to complain about a fresh, local, well crafted Saison brewed with a wild yeast. Hats off to the brewers for the idea and execution.

Pours a hazy dark gold with a moderate head, that doens't have much staying power.
It's got a kind of key lime pie type of aroma, with raspberry, peach and hay,and perhaps just the power of suggestion, but I'm getting plum also.
the flavor has the same components as the aroma, with some grassiness, and herbal hops. It's got a nuanced amount of residual sweetness, that is just enough to enhance the flavors. Near perfect.
It's got a medium body, with a mellow carbonation level.
Overall another great beer from a great brewery. It's got a carefully crafted and very unique flavor profile, it's great.

Review from Notes. 375ml cork & caged bottle. Batch 001, Bottled 8/10/12; reviewed 10/19/12.

Aroma: yeasty(very Belgian in character), fruity, plum, apricot, peach, bread, grass, hints of dried fruits and lime zest with a subtly sweet malty background.

Appearance: dark gold to pale copper, thick khaki head, which recedes into a nice layer atop the beer. Fairly clear and effervescent.

Flavor: light and dry, hoppy, grassy with small amounts of bright citrus and sweet tree fruit. Malt is dominated by the yeast, which is Belgian in affinity towards abstract fruit flavors, as well as the hops but the malt adds a sweet, toffee-like finish.

Body: Medium-light. Dry but not without substance. Typical of saison-like beers.

Finish: Leaves lingering yeast tones and hoppy bitterness. The malt smoothes out the finish with a lingering sweetness as the yeast fades from the palate.

Final Note: i have 1 more bottle and will hopefully be buying more to mature for the next 2-4 years depending on how well this beer ages.

I'm impressed with the yeast that coats the bottom of the bottle after the pour. Starts with a lasting white-beige head. There's a couple of spots on the glass for lace. Very cloudy with an orange hued amber color.

When I first open the bottle, I smell sweet raspberry. After I pour it into the glass, it becomes more sour, reminding me of a framboise. It's very much a Saison after that.

The flavor is earthy and sour. There is no indication of a framboise here. There's a strong, but short lasting, bite in the swallow. Initially, I thought it was hop, but I now think it is a result of the wild yeast. Short aftertaste. The mouthfeel is relatively thin.

A-Pours a hazy honey hue. Head is off-white and creamy. Leaves a bunch of lacing strings.

S-Interesting nose. Wild yeast up the wazoo. Florals and light spice. Plum yeast strain brings some plummy notes. A yeast-laden nose. Excited to sip.

T-Flavor is sweeter and less wild and tart. Maltier flavors. Grainy with a ton of honey and honeysuckle. Yeast comes in mid-palate with some surprising force but then dies off again. The nose is better than the flavor.

M-Full bodied for a Sasion. Plentiful, massaging carbonation. Not very easy to drink. Creamy.

O/D-Smelled cool, but the flavor wasn't awesome. Mystic has been hit or miss for me. This one was a miss for the most part. In the end it was still a decent brew but I got excited for this and it let me down a bit. Their product doesn't always match their divine packaging.

On tap at MeadHall.
Pours a cloudy golden orange color with a decent off white head that slowly dissipates to a cap. Aromas of grain, straw, spice, wheat, a bit of tart fruit and a hint of earthy. The smell is a bit different, but I kind of dig it. Flavor is sweet honey and bready malts with a shot of spicy wheat and a solid hit of tart fruit. It's an interesting flavor, it is certainly different kind of like pilsner meets saison with fruit added. Medium body with a moderate to high level of carbonation and a sweet bubbly mouthfeel. I liked this, I will have to pick up some bottles when they go on sale.

Poured on tap at Five Horses Tavern. Light tropical fruit. Clean. Not too tart. Easy drinking. soft buttery mouth feel. Honey and wild flowers. Very well balanced. Cultured from local wild yeast in eastern Mass.
Real good! Surprisingly good! Very well-done. My first time trying a beer from Mystic. Will be looking for more.
