Lovely dry finish. Unusual hops

one of the better saisons I have had in awhile, perfect for spring, still appropriate for summer. its hazy and blonde and pale and thick and frothy and beautiful. it has a grassy hoppy nose and the faintest funk that hints brett, but I think its just a clever yeast strain uncommon and unfamiliar to me, really well done here, well built brew. I had this in a bottle at a place called hen of the woods or something like that, right near the lake in Burlington, Vermont. it was served in short stemmed glasses, and we ordered oysters on the half shell to shoot with it. the horseradish and vinegar sauce they came with both went extremely well with this earthy and grassy brew, that seemed to thrive on the briny minerality of the oysters. its fuller bodied, but all wheat and nothing more than a real low lovibond in color. its creamy and well hopped, maybe dry hopped, but hardly bitter. its a softer funkier summer straw thing, with a tart finish. the yeast is amazing here, really finished its work as far as sugars are concerned. its dry but still creamy and large in feel. bubbles are prominent but its not sharp in that way, just pillowy and big, truly phenomenal stuff from one of my new favorite breweries. mystic is absolutely killing it!
