It wasn't spring until I was by the campfire with friends and cooler full of Mary of the Gael. Probably my favorite beer. Mystic was my favorite local brewery. This beer was made great by Mystic's yeast. It tastes like a brett and french saison mixed strain. Excellent beer. Will be missed.

Poured a honey color with a 4F head in a Mikasa Tulip.
Good head retention.
Spice and fruit aroma.
Mild, smooth MF.
Fruit and spice taste with a moderately bitter finish.
Best served at 48°+.
Delicately balanced Saison: nothing is overdone with this beer, balance is key. One of my favorite Saisons recently.

Poured from a 750 ml bottle from this recent release into the test glass
A - A bit of haze, honey colored backdrop. Excellent carbonation feeds a thick never ending white cap.
S - Some dusty straw, light toast malt, a bit of cracked pepper, some old orange rime.
T - Warm toast, with orange reduction, honey comb, a bit of grassy funk
M - Medium in body, soft water profile, semi sweet start, then a very nice carbonation clean up. Finish has enough bitter hops to balance things out.
O - A very good farmhouse, finish is a bit slick but a minor detail

There must be a new batch of these 750ml bottles. Totally hazy rusty orange with a big fluffy head. Smells grassy, spicy. Tastes spicy and grassy, some bitterness with a hint of funkiness. Feel is rather bubbly and full-bodied - fine for a farmhouse saison. Overall, this is a very good example of a farmhouse saison.

Corked bottle poured into brewery branded oversize wine glass.
Pours a nice cloudy, golden honey with a nice one finger head. The head dies down fairly quickly.
The smell is rather subtle with orange peel and fruit notes. The taste follows the nose. Refreshing citrus notes with a subtle grass. The flavor is a little too subtle for me but great spring saison.
Overall I would drink again but more for relaxing at night watching the coals die out on the grill. Not the best buy certainly nowhere near the worst.

Very nice overall saison, leaning far closer to a sweet, Belgian Pale style yeast presentation than a rustic saison. Straw, wheat, and light spices.
Refreshing, dry, and sparklingly carbonated.
