Batch 001, 7% ABV.
A: A hazy light orange pour. Very large and effervescent white head. Great head retention as it refuses to fade away easily. Substantial but thin spiderweb lacing everywhere.
S: Very fruity. Kind of a nice crisp citrus and floral character. Loaded with bananas and a little clove. Very refreshing and pleasant.
T: Wine is more prominent here with a dry white wine flavor. Has a little citrus, some banana and some sweet graininess backing it up to balance it nicely. Spicy cloves and white pepper kick in in the middle and finish. Oak and really dry white wine also kick in in the finish and lends to an overall dry and spicy aspect, almost completely the opposite of the beginning. Nice contrast.
M: Nice medium body, smooth and a dry finish.
O: Hell of a nice saison from Mystic. Almost as good as their sauvignon blanc version from a year or so or go. In some ways I actually enjoy it more. Nice complexity, nice balance of flavors and nice contrast of flavors too. Really starts out sweet and fruity and turns spicy and dry.

750ml corked and caged bottle served in a tulip. Pours a hazy, straw-gold with a loose white head that quickly dissipates into a froth. Nose is somewhat dull and subdued - hints of spice and zest. Taste is quite saison-esque and the chardonnay barrels are definitely present and add a unique and pleasant quality to the flavor profile. Mouthfeel is light-medium in body with a lively, almost crisp carbonation and a kiss of dryness. Overall, I really enjoyed this beer and am quite pleased with the use of white wine barrels in the aging process. I'd love to see more farmhouse ales aged in white wine casks.

Love their saisons, and aged in a barrel, how could you lose? Chardonnay should only add the slightest hint of fruit and vinous characters as well as some barrel notes hopefully. Batch 002.
Pours into my Ommegang tulip with a nice big creamy frothy 1+ finger head that sits there forever it seems, and leaves walls of lacing all around, great looking head, the lightly clear mostly hazy golden straw honey colored reveals bubbles streaming up from the bottom which reinforces the head.
Nose is nice, big farmhouse funky aromas, dry bready yeast with some nice saison funk, very farmhouse funk that is almost Brett like but not quite there, that great saison funk. Mild grassy notes with a little straw doughy like note, light lemon rind and lemongrass notes, and some wheat, with a light vanilla barrel note, hint buttery like oak too, nice oak rounding, and bit of bright golden fruit.
Taste starts with more malt notes to start, some wheat flavors and even a little creamy, into some bready grainy straw like malt characters but not a lot, and a touch of sweetness overall, more sweet than I expected at first. A pretty big lemony flavor, little lemon rind and lemongrass, bit of doughy flavors. Then into saison funk, with mild grassy doughy funk and saison bready yeasty funk, not nearly as farmhouse funky as the nose made it out to be, but theres a nice touch of it. Then into a nice buttery oak, hint of vanilla and overall oaky flavor, the longer it goes and more it warms the more that toasty oak flavor comes through. Then a little bright golden like fruit. Finish is dry and mild bitterness, more lemony rind lingering, little saison farmhouse funk, little grassy and bready.
Mouth is med bod, nice carb, little creamy and smooth.
Overall pretty nice, great saison characters with a great farmhouse funk, nice saison characters with lemony notes, lemongrass, grassy, wheat, etc, and great buttery toasted slightly vanilla oak barrel with faint hints of golden fruit. Very nice.
