Farmhouse ale aged in Adelsheim Vineyard chardonnay barrels with brettanomyces cultured from drie fonteinen in Beersel, Belgium. We believe this beer will continue to develop in the bottle over time.

Shared from bomber (showing 6.40 ABV) into 1/2-pint mason jar. Nicely complex farmhouse ale. Would be interesting to see if aging improves, or flattens out.

750ml bottle of an unknown bottling date. Served in a Side Project stemmed glass 3/15/2015.
A- Hazy copper-orange body, two finger thick and effervescent white head, splotches of lacing, above average retention time.
S- Crisp tart lemon, a bit of barnyard funk, wheat, peppercorn, oak, a hint of white wine. Smells sweeter than it actually tastes.
F- A bit of white wine dryness, tart lemon, funk, hay, wheat, fair amount of dry oak. Not as much peppercorn as on the nose.
M- Medium bodied, crisp and dry, not particularly soft or velvety like some of the other better barrel-aged saisons I've had. Stil, very drinkable with a nice combination of tart lemon and oak on the finish.
O- Pretty damn solid barrel-aged saison. It's not Flora or Saison du Fermier, but it's not that far away either.
