Triple fermented- First in the tank with a Belgian yeast, second in french oak chardonnay barrels with brett, and finally in the bottle with a third yeast for natural carbonation.

Bottle purchased months ago...don't really remember when. Poured into HF tulip. Lots of head...carbonation is ideal. Orangey hue..sure.
Nice hoppy aroma even for it being fairly aged...but brett dominates. Smooth juicy hops and brett - mixed with classic anchorage signature aromas...
wood and funk.
Great flavor - funky - brett - wood - hops. Phenomenal. Do yourself a favor and thank god (or any deity) Gabe exists...this beer as most of his are..is simply sublime.

Poured into a tulip glass a hazed peach color with a large fluffy white crown that left multiple rings of broken lace as it settled into a frothy mass,just a great pour.Citric hops are huge along with the Brett adding slight funk,I even picked up a little nutty maltiness in there as well.Powerful citric hop along with light yeasty funkiness,but its not overbearing,a little medicinal as well wich I normally don't like, but it didnt bother me so much here.This is a damn well crafted beer,I was a little worried I might not take to it as well with the Brett,but I got mad love for this brew.

Really excited for this one. Belgian Double IPA with Brett aged in French Oak Chard barrels. Crazy.

Out of the bottle the Bitter Monk is a delightful golden-yellow with a slightly off-white, 2 finger head poured into a pint glass. The head is extremely dense and foamy. Lots of little carbonation bubbles rush upward through a slightly hazy appearance from a little yeast that got into the glass. The lacing left on the glass is clumpy and sticky.

The aroma is all over the place. A sour, tart Granny Smith apple-esque smell is the first smell that infiltrates my nostrils. This is supported by hoppy citrus aromas of lemon, lime, and grapefruit. There is plenty of a bready yeast aroma in there, too. It's very interesting smelling the tart Brett mingling with such a strong hop aroma. Really good.

Whoa, that is an exciting and unique flavor. Oh meh gah... This is possibly the most original flavor I've ever gotten out of a beer. The first taste on my palate is of strong, dank, citrusy hops on the sides of my mouth (heavy on grapefruit flavors). This is complemented by a sour of explosion of sour apple and lime that also lands on the sides of my mouth, as well as straight on my tongue. Layering on top of those complex flavors is a buttery, oaky creaminess, which lasts for just a bit before being washed out by the Brett sourness and citrus hops. All the while there exists a very earthy and floral flavor.
There is a lot of crazy shyte happening in this beer. Awesome.

The mouthfeel is varied and exciting. The body of the beer is medium-full with a very creamy feel on the tongue, but all the while there is a puckering sourness and a puckering dankness from the Brett and the citrusy hops. The finish is all bitterness as the hops take over the reins.

I sound like a broken record, but this is a really crazy beer and I very much enjoyed it. If you like taking a palate adventure when you drink beer, this is the beer for you. So hoppy, so tart, and so creamy. Very interesting and highly recommended.

Beautiful goldenrod. Smells simply amazing - strong tropical fruit, apricot, wheat and pine notes, all swimming in a yeasty funk. Tastes as good as it smells. Strong sharpness up front from the hops and Chardonnay. Midway, it twists in a tangy direction and the brett really makes its presence felt. A citrusy sweetness, come out in the back and helps blunt the bite. Good, complex brew.

God, this was a great beer!
A golden color that was a little bit hazy. Thick white head that lasted forever. Very well carbonated; a lot of bubbles.

Sweet malt aroma. Also citrus, grape, and fruit.

Exciting taste. Some biscuity malt. Grapefruit, grapes, tropical fruit. A little oak.

Complex mouthfeel. Hoppy, malty, and fruity all at the same time.

Easily one of the best IPAs I've tried.

750ml bottle. Pours a hazy dark yellow with a big fluffy wihite head that retains well and laces the glass.

The aroma is a lot of brett and musty yeast with old fruits and bread. Some dirty sock comes out as it warms.

The flavor is a lot of brett with some old fruit and bready malt. There's a decent amount of bitterness in the finish. The mouthfeel is light to medium bodied with smooth carbonation.

Overall, I like it. The best Beligan IPA I've had. i like the use of Brett instead of traditional Belgian yeast. It also has good noticeable bitterness. Only downside is price at $17 a bottle.

Shared a bottle with my wife. This beer is golden straw colored with a big big white head. Beautiful

The nose is mainly brett, sour with a citrus freshness in the back I want more but only because of all the possibilities, belgiana. Brett, hops barrals

Don't be fooled this is all sour starts light and refreshing great mouth . The flavor of hops come in, I'm not able to distinguish which overall finish bitter earthiness.

Belgian style bomber, caged and corked, "Batch #1, July 2011". Very happy to find this fine brw at $16.99 @ Hudson Valley Bev, in Mahopac, NY

Open with an energenic "poof", pours cloudy, dull tangarine. Nice, sturdy, huge and near white head. Fluffy, puffy and very slow to rest, leaves a high collar and all sorts of high on the glass, sticky lace.

Bright nose of oranges, sour apple, green tea, limes, pepper, gin and some Belgian yeastyness. Gamey, musty, slightly sour note of the Brett also in play. Complex, flavorful and simply delicious brew. With the flavor of the sniff, continuing onto the palate. Hoppy bite in the rear, but shining through forcefully as things reach the finish.

Wow, dense flavors, complex, heady stuff. Love the style and this is one of the more intense and most well crafted versions. Get some stinky cheese, peppery salads, spicy thai food or whatever you like to eat and enjoy every sip of this one!

Hazy light golden colored with vibrant carbonation bubbles. Thin layer of minuscule white foam covers the top. I definitely get plenty of tart smelling Brett in the aroma. The flavor is a complex melange of hops,oak,and Brett. They are all dialed in just right and it works amazingly well. This is very refreshing! The body is very light and smooth,but it is packed with flavor. Excellent balance of sour Brett,bitter hops,and yet a smooth,refreshing beer.

Hazy orange and dark yellow, nearly auburn, with a thickly forming, persistent near-white head with decent retention that left sticky rings of lace down the glass.

A hugely aromatic and interesting aroma, without any one element becoming too dominant or distracting. There's plenty of big, hoppy, citrus elements here, like grapefruit and lemon, along with big blasts of funky (Brett) yeast, earth and grass, and a bit of alcohol sting, especially as the beer warms to room temperature.

A boldly flavorful and complex beer, and again, all the discernible elements stand out on their own: big, yet balanced flavors of citrus, very funky yeast, earthy elements, along with a ton of overall bitterness. There's also a bit of white-grape flavor as well after the bitterness washes away. Incredible!

Medium bodied with high carbonation.

A fantastic Belgian IPA. This one is unlike any I've ever tried before; it's both far more complex and far more bitter than any other example I've tried within the style. Superb!

Pours out a glowing citrus yellow and orange color, with tons of haziness. Pretty.

Amazing chunky brett and citrus hop aroma. Simcoe and Citra all over this one. And the Simcoe doesn't dominate with its uber bitterness either. Soft touches. Really get the plethora of hop smells all over the place from simple grapefruit, to tropical, to piney.

Same with the taste. Lots of bretty goodness, lots of citric hop tastes, perfect amount of bitterness, lightly sour, not overpowering the hop quotient here. Has almost a chardonnay or white wine like aspect to it from the spritziness. Hid the alcohol quite well. Everything just melds so nicely, great interplay.

The most unique dipa I've ever tasted. And not just unique, its f'n awesome. Don't know how belgian it is, the yeast certainly doesn't seem belgianesque, and the hops are definitely west coast stylee.

Pricey, I mean, the beer just nailed it, but still half point deduction for the price.

Price - $12/bomber

The appearance is a hazey golden color with a fluffy two inch white creamy head that lasts. A steady stream of bubbles and thick legs round out the look.

The aroma begins unmistakeably with a layer of belgian yeast funk which sets the tone followed by white grapefruit, lemons, spices and wood. Not too strong and quite pleasent.

The flavor is a slap in the face with brett yeast, pine hops, lemon and a pepper finish. A slight sourness is noticeable, however lacking is the citrus fruit and sweetness.

The mouthfeel is very bitter and dry, but I mean it is a Double IPA. The carbonation is close to perfect here thanks to the yeast working in the bottle. The body is light to medium with a crisp clean finish.

I'm glad I got the chance to have this. As the name implies it's bitter (100 IBU's) with an authentic belgian feel and not over carbonated. I experienced exactly what I was expecting.

Enjoyed on 10.21.2012, from bottle to pint glass.

A: A nice golden color that is more orange in the middle of the glass and more yellow around the edges. After the pour, a nice two-finger head blew up and lived for a good while before disappearing. Lacing is pronounced.

S: Lemon, grapefruit, hops, earthy malts, and some grassy floral undertones. A little funkiness here and there.

T: Earthy malts typical in Belgians, with fruits, hops, and grassy/floral notes mixed in typical of IPAs. Starts sweet and ends with a bitter taste that lingers on the tongue.

M: Medium/light bodied, with the perfect amount of carbonation. Nothing overpowering or unpleasant.

O: This was good to me, and I'm not really a big fan of Belgians.

From the C&C Bottle (Batch number one) into a Tulip results in a slightly hazy orange body with a huge frothy, rocky head that ever so slowly settles into what looks like rounded icebergs, thick lacing sticks all over the sides, very pretty indeed!
Oh boy this one has aroma in spades, you don't have to get anywhere near the glass. Wet hay, roses, grapefruit, lemons. Not subtle in the least, mouthwatering and pungent.
Taste is complex to say the least, an astringent bitterness upfront lemon peel,grapefruit rind, unsalted cracker, the funk is subdued with a pleasant wet hay earthiness. just a hint of white wine and oak. A long lingering slightly sour bitterness ends it all, but makes you want more.
Did I mention the aroma? Oh boy I could just sniff this all night.
Juicy, what alcohol?
A Masterpiece!
Edit for 2013 edition. Perfect and consistent in every way. This is no one off wonder, it's the real deal!

Metalmonk, meet Bitter Monk. Okay, Metalmonk has already met Bitter Monk twice before, and he found much to like in this very complex and unique beer. So, third and final meeting (at $15.99 a bottle, it's gotta be the final meeting -- for awhile anyway)...

A very healthy pop of the cork and you can smell this thing from a couple feet away. But first, appearance: so pale and hazy as to resemble a witbier, or a double wit, perhaps. Washed-out golden peach/pear-juice. Head is a blinding-white fluff monster while it lasts, which is longer than expected. Patchy lace of various shapes and sizes splatters the glass.

Ooh, that smell. Can't you smell that smell? It's huge. It's American, French and Belgian all at once, and it's terrific. American thanks to the uber-citrus hop tones (relative newcomers Apollo, Citra and Simcoe, for the record); French due to the heavy oak/Chardonnay presence; and Belgian thanks to the wonderfully funked-up yeast and clean, saison-like graininess. All combines to equal an exotic, electric, vibrant aroma like no other.

There's a heavy grapefruit element at the forefront of the taste, which pulls along with it the tell-tale fruity-and-funky treasures of Brettanomyces yeast (you know you're a lost cause when you can type Brettanomyces without looking at anything for help). Big blasts of tart lemonade, Chardonnay (and white wine-soaked wood), crisp green apple, lime, and something very, very earthy, in a twisted sort of way (again, the Brett speaking). Hops are big, and bitter, but just as well-incorporated alongside everything else, keeping Bitter Monk from feeling/seeming/drinking like a novelty. Reading the label, and thinking "Belgian IPA," I assumed some pineapple flavor would come into this before I had my first bottle several days ago. I don't quite get that, because it lacks that kind of sweetness...but having said that, it lacks nothing. It's fantastic.

Dry as a bone, partly thanks to the oak barrel use, I presume, and that perfectly matches the crisp medium body, the fruity/funky finish and the main tastes on the tongue.

Maybe it's splitting hairs, or focusing on things that don't truly matter, but the label's claim that this is a "Belgian-style Double IPA" is a little misleading. "Massive malt infusion" reads the back label. Really? Of course there's a lot of malt, but it still plays a mere supporting role. There just isn't enough of that sweet malty variable that partly defines a double IPA. But that's about all that wrong with this thing. And really, confining it to any style is futile -- this is one of the most unique, original and exciting beers to emerge from the U.S. craft scene in a while. I enjoyed the heck out of each bottle, and have to admit it was totally worth the $15.99 price tag.

Bomber from Bierkraft. Pours up hazy fruity coloured body with a quarter inch of retained head. Funky aroma. It all works - the brett, the barreling with fruity nuances, the hopping. Easy mouthfeel and a pleasant drinker, as I finished it all over an hour's lunch.

Poured from a caged-and-corked 750mL bottle into my Dogfish Head oversized snifter.

Hazy amber liquid supports a delicate raft of ivory soft peak whipped foam. Superior retention and complicated webs of thick 3-D lacing...

Apricot, passionfruit, kiwi, and other fruit presents in the nose along with a long citrus note, yeasty phenolics, and a pungent undercurrent from the Brett. Quite a melange...

Potent funk presents on the palate with a ton of earth and pepper; strong floral notes suggest lavendar, orange blossom, jasmine, and rosewater as well. The bitterness comes on slowly at first but then grows over time. I'm guessing the Apollo hops are hard at work here, the resinous core of the beer militating back against the Brett. Crisp citrus and mint notes emerge in the finish along with a moderate alcohol kick. Pine and forest floor become more present as the ale warms.

Not-quite-full-bodied, effervescent, yet somewhat oily (as it should be).

The Brett. is once again very potent in this ale, threatening to dominate the flavor profile if not for the massive contrapunal force of the bittering hops. Not sure amidst this what the barrel aging contributes...quite a BIG beer though, which should appeal to hop-heads who are fond of funk...though it may alienate everyone else.

Ale Aslyum chalice - lot of great things involved here - citra hops, brett, french oak chardonnay barrels. I love all of those things and naturally found this beer to be quite great - very lush fruit profile - papaya, melon, mango, citrus, lemon. Both the barrel and the brett are great compliments to the hops - everything marries quite well.

Bottled in July 2011..what? I guess some DIPAs don't give a shit how old they are. Holy hell, this is a truly astounding beer. The appearance is that of a Belgian strong pale. Smells like amazing citrusy goodness. Taste follows the nose..great citrusy taste with plenty of subdued hoppy goodness. A little buttery from the chardonnay aging. Truly great. I would seek this beer out ASAP.

Appearance - Murky and hazy pale orange body. Big off-white head. Good retention.

Smell - Brett all over. Acidic notes and a lot of Belgian yeast. Pine hop profile isn't my favorite, but the Brett keeps it interesting.

Taste - Hops at first. Just a touch of sweetness before the Brett takes over. Surprisingly Bretty for how fresh the bottle is. A little tang in the back and quite a bit of bitterness.

Mouthfeel - Dry and bitter. A little harsh as a result. The Brett accentuates the bitterness in the finish.

Overall - Excellent beer. Bretted to hell, but well done. The hops manage to come through despite being a Brett bomb.

750 ml corked and caged bottle into a couple of glasses.

Pours a clear copper, with 2 fingers of rich, bright-white head. This retains with a robust foaminess, leaving back a sticky looking latticework of lacing. The aroma smells floral, musty, zesty, and piney, all wrapped up in one, with an underlying mix of juicy citrus and sweet grains adding a strong ripe twang to this. Just a light touch of warmth kisses the nose about every other whiff of this. Man, those Simcoe hops are really standing out to me the strongest here.

The taste is bitter grapefruit, juicy tropical fruit, hefty malt sweetness, and a lemony and earthy smack of flavor from the Brett. The Brett pulls into the finish, mingling with dry Chardonnay notes that come in off the sides, with an oaky feel that sticks to the tongue along with some lingering dry resins. The mouthfeel is medium to fuller bodied, with a smooth oily creaminess that actually flows rather easily in the mouth despite the high ABV here. There is just enough of a prickly crispness to this to help keep those hops lively on the tongue.

I wish that I could have gotten to this one a little fresher but I was pleased to find that the hops still packed a flavorful punch here, blending in wonderfully with the Brett and barrel notes to form a beautiful marriage of flavors. I’ll be seeking this one out again. It’s damn tasty.

I had slightly higher expectations for this one but needless to say it was good and I respect it but I was not that into this beer.

A-Golden orange with a sticky white lacing and a big head.

S-Smells very oaky and a bit of oranges. Some pine and grape.

T-Very barrel forward to say. The chardonnay barrel treatment really shines through and is just a little too overpowering. This really is not an IPA but some sort of hybrid between like a saison and something else.

M-Nice carbonation that really allows the flavors to shine through.

O-This beer was good but I was not that into it. It is pretty drinkable for what it is but i think it is a one try beer for me.

Big shoutout goes out to my doppelganger for sharing this one with me! Served from bottle into a Bell's stemmed tulip. Poured a hazy golden yellow with a three finger fluffy white head that subsided to one finger slowly. Maintained nice lacing throughout the glass. The aroma was comprised of sweet malt, funk, citrus, citrus hop, earth, and lemon rine. The flavor was of sweet malt, lemon rine, citrus, citrus hop, grapefruit, funk, and earth. It had a light feel on the palate with medium-high carbonation. Overall this was a pretty good brew. This beer really worked well for me. The citrus aspects going on here were quite well incorporated with the rest of the brew and the funkiness took it to the next level for me. I wish more Belgian IPAs were like this one... Really glad I got the chance to try this one and I would do so again anytime.

Pours a hazy golden straw color with a big white head that left webby lacing all along the glass.

The aroma is unique and has 3 distinct aromas. The first is the belgian yeast which provides some clove and light phenols. Next comes a huge hit of brett along with the chardonnay oak barrel. Dry white grapes with some farmhouse funk. To cap things off is a a tropical fruit hop aroma. The brett dominates the aroma.

The taste is of a sweet pale malt with some light belgian yeast flavors. The brett comes in and funkifies everything. The brett goes well with the dry chardonnay oak flavor. The combination brings a nice tart flavor. The hops kick in toward the end. Some tropical fruit hops to go along with some pine. Definitely some resiny hoppy bitterness in the end. The brett not as strong in the flavor and the hops take on more of a presence.

There is a moderate feel with active carbonation. Good balance between sweet, tart and bitter.

A nice complex BIPA. The brett takes the show in this beer but the hops help to provide an offset. I would like to see a touch more clovey/phenols from the yeast.

Picked up at Beaumont Market in Portland, Oregon for $13. Taking my time, and pouring by parts into a Meyer's Duvel tulip, I managed to drink the whole 75cl bottle over the span of a couple hours. I didn't see this information in the other reviews so here's some bottle flash: "Ale brewed with Apollo, Citra, and Simcoe hops. Dry hopped in the barrel with Citra hops. TRIPLE FERMENTED - First in the tank with a belgian yeast, second in french oak chardonnay barrels with brett, and finally in the bottle with a third yeast for natural carbonation. A: Slightly hazy guava in the glass, huge rocky white head, lots of clumpy lacing. Are you not entertained?! About as appetizing as a beer can look. 5/5

S: Brighter citrus consisting of lemon and lime, some nice wood, Brett earth in full display, and a definite grapiness. I honestly didn't know that this was done in wine barrels before the pour, so I checked the label to see if Nelson Sauvin hops were used. Nope, French Oak Chardonnay. The wine is easily appreciated. 4/5

T: Out of left field this suddenly becomes quite the DIPA. The nose promised a complex beer but the taste is pungent and aggressive with the hops right out of the gate. Big citrus and deep bitterness truly define tongue numbing. Only after going back for a sip or two can the earthiness and spice really be singled out and only then by thinking about it. I've used the term grapefruit frequently in the past when describing IPA's, but this is the truest representation I've ever had of eating a segment of the fruit, membrane and all. Even the long tingly bitter finish is intact. I think it's best to consider the taste as the sum of it's parts rather than individual components. The hops lend the great bitterness and citrus, the brett gives a true earthiness that can only be found in pith, the wine barrels further enhance the organic nature of raw grapefruit. I say again, this is grapefruit in a glass. As simple as that sounds, this is remarkable and unique. 5/5

O: A stunner of a beer. The second beer I've had from Anchorage and the second home run as well. The brewer's talent seems incredible. The grapefruit segment I described in the flavor could be a happy accident but that just seems too uncanny to be chance. This beer was designed to be that way and that just might be the most impressive thing about it. I don't like Belgian IPA's. It doesn't matter this time though because Bitter Monk is in a league of it's own. Find me a valid comparison. I don't believe it exists. 4.5/5
