After installing and setting up our brewing system, we ran a couple of test batches all the way through the process. Experimental beers, if you will. The “Fish Bowl” moniker was bestowed on them as a tribute to Chris’s grandfather, who owned a pair of bars in Kentucky by the same name. We’re reminded of him every day, as our pool table and old-school neons all came from the Fish Bowl(s).

This first experiment, our very first batch, is an IPA brewed entirely with Summit hops. That variety has an extreme high alpha-acid content, imparting a huge bitter bite to the beer.

Poured a reddish, auburn body with two finger head that died quick with some lace and had a strong hoppy aroma. Taste is more of the same as there is a good citric hop presence and nice balance with minimal sweet malts so it's not too sharp or tastebud killing. Not the most flavorful or complex IPA but you get hops, a touch of sweetness and balance and a crisp finish. Relaxing and nice to have on a summer day and what more do you need?

A: Had this beer on-tap at Gene's Haufbrau, poured into a pint glass. It had a brownish color and a somewhat cloudy consistency. There was a small amount of foamy head that quickly dissipated. Good lacing.

S: A nicely hoppy aroma, with some citrus evident as well.

T: Tasted of hops (a pretty high amount), a bit of citrus (grapefruit, maybe?), and a hint of malt in the finish. Finally, Holy City puts a good amount of hops in an IPA and produces a tasty result.

M: A decent amount of carbonation with a smooth finish. Medium-bodied.

O: A completely enjoyable and drinkable IPA. Well done.
