Wild Wild Brett Rouge is an unfiltered, slightly tart wild ale, fermented entirely with Brettanomyces yeast. Brewed with hawthorn berry, rosehips, and whole hibiscus flowers, Rouge pours a reddish hue delivering soft floral aromas and tropical fruit flavors with a tart earthy finish.

Poured into a tulip AND a weizen glass. Why two glasses? The answer is that is gushed like a mf'er and I needed another the weizen glass to salvage. Batch 6/11 and bottle #498 of 1600.

2.5 A: Murky reddish peach color. Fizzy peach colored head falls quickly.

3.5 S: Interesting nose. Brett funk is only moderate in strength, but it does give a nice outdoorzy component including wet hay, grass, apple orchard, and a dirty earthiness. Beyond that there is herbs and fruits. I assume what I am smelling are the rose hips, hibiscus, and hawthorn berries, but I'd be lying if I said I had any idea what those smell like. Otherwise, there is a touch of caramel, a touch of roast, some apple and grapey fruitiness, and a bit of peppery spiciness.

4.0 T: Taste is very good. Not as "wild" as I'd like, but well balanced and insanely drinkable. Outdoorzy funk leads the way again in the form of hay, wet grass, apple orchard, etc...(see above). A lot more of the herbal character comes out in the taste though. Potent, though well integrated, it's just the way I like it. Lots of fruitiness as well. A ton of apple with grape, plum, raisin, and a slice of orange. Again the malts are toasty with some caramel. Heavy, savory richness which is a bit strange given the brett involved, but I couldn't imagine it being better any other way. Huge "brett" finish.

4.0 M: Despite the gushing, the carbonation is fine. Heavier medium body. Lots of creaminess. Good here.

4.5 D: Very tasty beer that is far too easy to drink. I haven't had a lot of CS yet, but what I have had has been great.

750ml bottle, batch 6/11, bottle 346/1600. Pours a clear light pinkish copper with a huge creamy pink-white head that retains well and laces the glass.

The aroma is sweet fruits (cherry), perfumey floral spices and dry brett.

The flavor is pretty mellow - some overripe fruit, musty leather, and some dry brett and slight sourness in the finish. The mouthfeel is medium bodied with smooth carbonation and is a bit watery.

Overall, interesting, but a little too reserved for me. I definitely look forward to future beers.

A wonderful story of brett, my love. A good sour, where the bitterness of rose hips and herbs that go into these teas only add to the story. Rouge is red but this baby was cloudy peachy coloured. Smooth for a sour, more of a tart ale. Bottle 1180 out of 1600. Good drinkability and introduction to these guys.

Big thanks goes out to Charles for sharing this one at the Down South Beer Tasting while aasher was in town to visit! Bottle #1316 of 3000! Served from bottle into a Mikkeller taster flute. Poured orage with a minimal white head. Maintained excellent lacing throughout the glass. The aroma was comprised of sweet malt, funk, earth, tart, and subtle earthy funk. The flavor was of sweet malt, funk, tart, fruit, and wood. It had a light feel on the palate with mild carbonation. Ovearll this was a decent brew. With a name like this, I was honestly expecting to be kicked in the face with Brett... However, this did not happen. I was a little letdown by this fact if I am honest. However, this was a nicely balanced brew that let you know Brett was present, but it wasn't the star of the show. Worth trying if you get the chance, but that is about it.

Appearance – Pours into a tulip with a mahogany color. About a finger of white head is achieved that dissipates at a moderate pace leaving nice lacing.

Smell – Quite a bit of floral notes, slight tartness, a bit of barnyard funk, lemon zest, oak, and wet hay.

Taste – Quite similar to the nose. A nice brett flavor mixed with the wet hay and other barnyard funk. The floral notes form the aroma are prominent. Just a hint of lemon zest, not very sour, and just a bit of other citrus flavors.

Mouthfeel – Medium bodied, prickly carbonation, finishes dry.

Overall – An interesting “American Wild Ale” though not one I’d have again. I wish it was a bit more tart and sour.

Tart, sweet aroma, floral and herbal with an underlying lemon twang. A little simple and clean on the palate, but prickly and medium bodied. Funky and a touch fruity. An entirely solid, drinkable, likeable, if not entirely awe-inspiring beverage. Looking forward to cracking my bottle.

Bottle 779/1600

Pours a cloudy amber color with a large, lasting off-white head that eventually falls and leaves a few rings of lacing on the sides of the glass.

The nose brings some light barnyard and earth notes. Some cherry and light floral character in the background. Flavor has mild Brett, a touch of fruit, and a very light perfume element.

Flavor sticks around for awhile, coating the palate with a light funk, followed by a touch of bitterness on the way to a dry finish. Body is light with good carbonation.

Probably my least-favorite of the series. I didn't get enough of the additives and the Brett wasn't super forward. I liked all the components, but would have preferred for something to push forward to the front.

Poured in to a tulip. Very carbed, ended up shooting all over my wall. Hazy red/orange color with a 2 finger, frothy head that lead to good lacing.

Smell was fairly mellow. Some definite Brett aroma of musty and barnyard smells. Slightly grainy and malty. Notes of cherry. Slight berry aroma.

Taste is light and mildy malty. Slight bitterness in the finish. Some flavors of cherry and lightly floral. Mild berry flavor. Musty and funky. Mildly tart finish. Slightly earthy.

Mouthfeel was medium/light body with high carbonation and a bone dry finish.

Overall nice beer to showcase Brett. A bit annoying I lost a good portion of the beer on my wall though.

Bottle @ home. Beautiful, dark rose, cloudy appearance with a pinkish cream head with good retention. Really a nice (rosey) floral, lightly funky, mild to moderate barnyard, mildly yeasty, light red fruits (strawberry), some citrus fruits, slightly tart nose. Interesting first taste- light red fruity, yeasty, delicate, lightly tart flavor. With a little more inspection, there’s a mild floral element, mild tartness, strawberry, red fruits, pretty mild, subdued yeasty flavor. Some of the drier elements on the finish with also flavors of straw and more citrus fruits. The floral element is quite nice in the beer. Really a delicate mouth feel and a mild tartness that probably will develop with a little more age. As with some of their other beers, I think aging this a little while will help but leaps and bounds ahead of my previous tasting of their sours/wild ales.

A: The pour is a hazy amber color with a tall off-white head. A small gusher from the bottle.

S: Only a light tartness with lots of the floral contributions of the hibiscus. Lightly fruity Brett with only a touch of funk. There is a bit of grass and straw and some oak. Just a touch of berries.

T: Slightly sweet and fruity with some wet straw and grass and a bit of a cereal flavor (Cheerios?). Some mild Bretty funk and musty oak. The floral/hibiscus notes are definitely there, too. When cold, it's slightly metallic, but that goes away as it sits.

M: Medium bodied with a rather high carbonation.

O: Sort of a middle of the road sour beer. It's a decent start for what seems to be a fairly new brewery.

Poured from a 750 into Lost Abbey stem.

Cloudy orange with a huge head that settled down and it leaves a mild lacing around the glass.
Smells very invigorating for lack of a better word. You can smell the funk, but in a ver refreshing, crisp way.
The taste is mild and refreshing in floral sort of way and then there is a sour punch right as it goes down.
It feels really good in my mouth, light and a lot of carbonation make it really satisfing.
It took a lot of effort to trade for these, but it was very worth it. I've got one more bottle of this that I'm going to try to sit on for a while and see how it ages.

Pours a very cool dark pink color with a big, well-carbonated head that fades quickly. Aroma is rather floral, with a noticable brett barnyard note hiding in there somewhere. The beer itself is somewhat thin (expected in a brett beer, I suppose), but full of the same things you find on the nose- a slight floralness with a more distinct brettanomyces presence that shows up in both a barnyard and citrusy fruit way. Finishes very dry- easy to drink without being boring.

My wife and I tried this one at Mile High in Lakewood, Colorado, alongside the Pure Guava. I enjoyed this one more, but still nothing special. Poured a hazy dark amber color with a quickly diminishing off-white head. Aromas of funk, horse blanket, bark and dried leather. On the palate, this one was medium bodied, a little tart and kinda funky, with flavors of brett, a little hay and wood.

A: Quite the gusher when opened, enormous off white/pink colored head that sits on a top of a turbid red beer. Quite a bit of carbonation moves up from the bottom of the glass. Excellent lacing left behind as the head recedes.

S: A lot of funky brett smells, think funky barnyard but it doesn't quite ever hit that full on rotten shit (in a good way) funk. Underneath the funk is a bit of citrus, and a lot of floral notes as well. Smells tart, but not quite sour. Really smells funky and nice.

T: Quite funky in the taste too, a bit medicinal like a few krieks that I've had, but not full on robitussin style. The additional flavors complement the brett nicely to make a very interesting funky, floral, fruity beer. I've never had hawthorn berries, but I have to imagine they are imparting the slight cherry flavor to this beer. Doesn't ever really get sour, but there is a nice tart flavor. No bitterness to speak of. A very intersting, tasty brett beer.

M: Light and highly carbonated, finish is dry with a few lingering flavors of berries.

O: A very interesting beer, first of the Crooked Stave beers that I've had, and I'm impressed. This is a very flavorful example of what wild yeast can do. A lot of flavors going on, but the yeast shines and gives a great example of a true brett beer.

Pours a deep yet bright rose color. Looks very pretty and tasty. Large white head with pink highlights. Clear at first, but Chad suggested that at about half way to pour in some yeast. Did that, and it clouded up, naturally. Crap, looks like it's gonna be very sour, not my thang.

Aroma is quiet but good. More floral than yeasty although the sourness is there. Light malt

Oh, wow. Not all that sour at all. The funk comes on strong, but is quickly subdued. Floral and some tannin. yeast is interesting. It's a puckering type but not 'sucking cheeks into my teeth' type of pucker. Not necessarily sour although it could be. Mild finish. Tart. Some cherry and plum.

Lots of bubbles, but they don't stand out in the feel department. Very drinkable! At 5.2% it went down fast!

Thanks to Murren for sharing this at a recent tasting. Poured into a snifter, the brew appears a hazed peach color with a white frothy head that leaves patchy lace patterns on the glass.

The smell is quite earthy with brett that blends into a strong scent of peppery quality. Beneath the funk is a veggie aspect mixed with something along the lines of cheese/yogurt. Oak is a bit raw in nature and is subtle but comes out a bit more as it warms.

The taste of this brew is strong with brett. It comes across to me as wet leather leaning a bit towards cardboard with enjoyable barnyard aspects as the latter. Like the aroma, there is a flavor of veggies and garden herbs. A bit of cardboard becomes more noticeable as it warms up with a touch of...well vomit.

This is a medium bodied brew. It boasts a modest level of carbonation but is a slow gusher when opened. It has a strange yogurt-like creamy feel. This was an interesting ice-breaker for my first experience with this brewery. Strange mix of character but not entirely enjoyable. However, it is worth a try.

A: Hazy orange with a frothy white head.

S: Prominent hibiscus nose with lots of leather. Whisper of pineapple and some stone fruit. Earthy with some mineral.

T: Grainy and leathery with light orchard and stone fruit. Lightly tart with some earth. High level of Brett accompanies medicinal notes.

M: Medium body with high carbonation.

Overall: A pretty good beer if you like Brett.

After having some "beta" versions of CS beers a few months ago I was a bit frightened of this, but it turned out fine.
Had this on tap at the Rackhouse Pub.
Arrived a light amber color with reddish highlights. Foam was there as a sheen, which is pretty normal for a draft sour.
The nose was fairly mild. A citric note with just a hint of yeastiness. Nothing off, though.
The flavor was also a bit milder than I expected. A slight sweetness on the front of the palate gives way to a citric note in the middle. The wild yeasts give things a little bit of a funkiness, but it's mild and leaning more in the leather direction, which is okay with me. The finish seems to be missing something, though. It's as though the beer just fades from the middle of the palate. Again, no off flavors, but I kept waiting for something else.
Fairly mild, but still flavorful. Price would really be the only thing keeping you from having several of these in a row, and that really boils down to what the restaurants are charging for it more than the beer itself.
The sweet and sour contrasts make this a surprising food match with cheese-based items.
Not bad at all. I'll definitely try some more items from CS as a result.

Pours a murky honey brown with an off-white head that settles to a thin film on top of the beer. Thin rings of lace form on the glass on the drink down. Smell is of herbal and floral aromas along with a dose of funky Brett. Taste is of herbal and floral flavors but the Brett presence is only slightly funky in the flavor. This beer has a lower level of carbonation with a slightly crisp mouthfeel. Overall, this is a pretty good beer but the taste is somewhat lacking compared to the smell.

750 mL bottle shared at the January 2012 Santa Cruz tasting at Sante Adairius. Pours a dark orange color with a huge gushing off-white head. This one was hard to get a bead on. I got a maple syrup sweetness in the aroma along with a chlorinic brett character and a minor pine accent. Flavor was orangey, woody, not particularly flowery. Very dry in the finish. Alright, but pretty subdued.

appearance - pink in color, raspberry tint. bubbly like champagne but controlled head. lacing stays to the rim.

smell - brett, sourness, rose, citrus

taste - brett dominates, some horse blanket, minor citrus

mouthfeel - interesting. certainly very nice for a 5.2 as far as body goes. light enough though to drink a decent amount if you like the sourness. carbonation is solid. a bit dry but that can be nice.

Crooked Stave, an awesome new concept brewery started by the brett man himself!

I love the design of Rouge, the first installment of the "Wild Wild Brett" series. The label is awesome in its presentation. When I open the bottle, I can tell it is carbonated perfectly. The aroma is dominated by a unique brett character rounded out by a nice tropical/floral presence. A very slight plastic smell is still present, however the beer is very young and I believe this will fade entirely with a little more time in the bottle.

A nice reddish color with a slight brown hue (think barnyard) accents my glass while nice amount of white head covers the beer. The majority of it dissipates quickly, leaving a thin layer around the rim of my glass.

The beer itself is very effervescent and tastes rose and hibiscus initially followed by an awesome earthly, barnyard brett character. The slightly tart complexities complements the rest of beer very well. The mouthfeel is a little thin, but once again I think it will change with a little more time.

I'm excited to see how this guy progresses and changes with time!

I love how this beer pours, has a slight pink note, and like a pink lemonade looking head. Smells of Brett, tropical fruit, little barnyard, I pick out rosehips, hawthorne berries, and hibiscus. Swirling it gives me a little more brett, I expect this beer to have a little sourness, but it has some mid palate, that fades to a nice clean/dry finish. The brett is once again the primary focus, little to no hop aromatics, a little spice, but a whole lot of complexity in the yeast. This beer is going to age fantastic, the brett is just going to continue to develop into tropical fruit, pineapple, mango and the like. I am really excited for these beers, and can't wait until his barrel aged blonde comes out!

A - Pours a mirky darker yellow/orange color, off-white colored head, thin collar, spotty lace.

S - A nice level of brett, funk, and slightly tart. Some floral notes and a hint of spices in there as well. Very pleasant and enjoyable.

T - The funk is at a slightly higher level the the nose. The floral notes are subtle as well as the spices. Some light fruity notes are on the finish along with a slight tartness.

M - Light body, high carbonation, dry finish.

O - A solid beer, but not necessarily an American Wild, by my standards. I think it's more of a Farmhouse Ale with a touch of tartness, rather then an all-out Wild. Decent, nothing crazy.
