St. Bretta is our 100% Brettanomyces Whitebier that was just released this week! Not only is St. Bretta an evolution of Wild Wild Brett Orange, but also it will be ever-changing depending on the fresh citrus available that season. For our spring release we decided to brew St. Bretta with fresh Minneola Tangelo. Each seasonal release of St. Bretta will have a diverse range of citrus fruit added to keep the beer fresh and exciting

Pours hazy straw gold, small but firm head of foam. Smells Witty (usual Belgian spices and yeast) aroma of Brett. Strong but delightful horseblanket taste with assertive but somewhat diminutive in comparison Belgian yeast and spices. Bit of bitterness, no sweet notes. There’s the cloves..seem to pop in and out depending on the sip . Nice mouthfeel, very nice beer overall.

A: Poured into a tulip to a light gold topped by a finger of dense white head that fades slowly to a thick collar around the edge of the glass with some lacing
S: Smells of citrus with some hints of light tartness with some hints of spice
T: Taste is surprisingly tart up front with some spices and citrus. Light wheat malt flavors at times as well. Swallow is lemony tartness with some clean cracker malt with some lingering citrus flavors and a hint of spice and funk
M: This beer has a moderate body that is smooth in the palate with carbonation that is slightly prickly. The finish on this beer is slightly drying due to the acidity
O: Overall this is a great beer with some nice flavors and complexity. I'm not a big fan of Wits but this one is in my wheelhouse. Definitely one to grab but it's a bit closer to a wild ale than a Wit in my mind.
